Mexican Fried Ice Cream

Feeling Nostalgic?

Tastes just like  Chi-Chi’s restaurant. Made with vanilla ice cream, crunchy corn flakes cinnamon coating and served in a baked tortilla bowl.  

How To Make

Microwave the tortilla shells so they are flexible and easy to bend.

How To Make

Flip a cupcake pan upside down and use it to shape the tortilla into a bowl.  Put it into the oven and bake. 

Alternative

Don't have a cupcake pan? Use a small oven pot or bowl instead.

Baking is finished when the tortillas have a slightly brown edge.  Let them cool!

Crush up corn flakes and prepare a mixture with sugar and cinnamon.  

How To Make

Pick your favorite ice cream and scoop out 1-2" balls.

How To Make

Drop into corn flake mixture and roll around into a ball shape.

Working quickly, place the ice cream balls on a wax paper covered baking sheet.

Slide the baking sheet with the ice cream balls into the freezer for at least 1 hour.

Preheat your deep fryer to 350° F.  Alternatively, fill a deep pot with oil if you don't have a deep fryer.

Once preheated, quickly drop an  ice cream ball into the oil for 1-2 seconds and remove.

How To Make

Add the fried ice cream balls to the tortilla and begin assembling your sundae.

Add all of your favorite toppings on top.
