This sloppy joe recipe makes saucy sloppy joes with lentils instead of the usual ground beef. Whether you’re vegetarian or just someone looking to eat less meat, it’s a recipe that will change your weekly dinner menu!

LENTILS ARE CHEAPER THAN GROUND BEEF

A quick comparison at my NYC grocery store prices 1 pound of lentils at $1.99 while 1 pound of ground beef is $6.99 making these lentil sloppy joes so much more cost effective!

INGREDIENTS

red lentils broth green bell pepper onion minced garlic tomato sauce brown sugar worcestershire sauce spices

HOW TO MAKE

1. Cook lentils in broth in a small saucepan until softened, about 6-8 minutes.

2.  Add green bell pepper, onions and minced garlic into a large skillet and cook until veggies are softened.

3. Add tomato sauce, brown sugar, Worcestershire sauce, spices and lentils into the skillet.

4. Cook for about 10 minutes more, or until sauce thickens and is no longer runny.

Cheese: Melted cheese, such as cheddar, American or Provolone. The cheese also helps it all “stick together” preventing it from being too sloppy. Pickles: Sliced of pickles, either dill or half sours.
