GREEN  TOMATO CAKE

This cake uses 4 cups of green tomatoes, making it a great recipe to use them in the beginning and end of the season. The green tomatoes make the cake so  moist! 

what does it taste like?

Thanks to the cinnamon and nutmeg this cake actually tastes just like coffee cake! 

and the frosting...

We love it with cream cheese frosting but you can also use buttercream or store bought frosting. Or skip the frosting and dust it with powdered sugar.

HOW TO MAKE

1. Chop up 4 cups of green tomatoes, keeping both the tomatoes and juices. Don’t drain them!

2.  Make the cake batter by first mixing together vegetable oil, sugar and eggs. In another mix together flour, cinnamon, nutmeg, baking soda, salt and chopped walnuts. Mix these 2 bowls together.

3. Add in green tomatoes (and juices) and mix.

4. Pour this mixture into the baking pan.

5. Bake until a tooth pick comes out clean, this cake takes around 45-50 minutes.

6. While the cake is cooling, make the cream cheese frosting using cream cheese, powdered sugar, vanilla and milk.

7. Once the cake is cool, add frosting and frost the cake.

Green tomato cake can be kept in the refrigerator for up to 4-5 days.
