CUCUMBER TOMATO SALAD WITH LIME JUICE

CUCUMBER SALAD RECIPE

Cucumber tomato salad made roma tomatoes, red onions, lime juice (no oil!) and cilantro.   It’s the perfect fresh salad to make with all your garden vegetables!

INGREDIENTS:

1. Tomatoes, fresh roma and heirloom tomatoes taste great 2. Cucumbers, peel and slice them. 3. Red onions, you can swap yellow or green onions if you’d like. 4. Garlic, minced. 5. Cilantro, don’t love it? Use mint or basil instead. 6. Lime juice, you can also use lemon juice.

LET'S MAKE IT

1. Chop up the vegetables  and add them in a large serving bowl. 

2. Season with salt and pepper and mix until lime juice coats all the vegetables.

3. Cover with plastic wrap (or lid) and place in the refrigerator to chill for at least 30 minutes.

4. Serve and enjoy!

CAN I MAKE THIS IN ADVANCE?

Yes! This salad can be stored in the refrigerator for 3-4 days. If you remove it from the refrigerator and it seems dry, add a little additional lime juice (or olive oil) and toss.
