HOW TO COOK CARROTS IN THE OVEN IN 20 MINUTES

CARROT RECIPE

Carrots are one of our favorite root vegetables.  We love them roasted in the oven with a little olive oil.   My daughter calls these candy carrots because they are so sweet and tender.

WHAT TEMPERATURE TO COOK CARROTS AT?

Roasted carrots cook best at 425 degrees F. This makes them soft and crispy at the same time, without burning them.

LET'S MAKE IT

1. Peel and slice your carrots into about 1/2 inch pieces. I like to keep them in disc shapes.

2. Place the carrots directly on a baking sheet. You can use parchment paper for easy cleanup but I find that vegetables roast best directly on the pan.

3. Add olive oil on top, stir and then sprinkle salt and pepper for taste.

4. Bake for 20 minutes, making sure you stir them halfway to prevent them from sticking. Serve, eat, enjoy!

HOW TO SERVE

Serve as a side dish with sausage, chicken or baked salmon. For simplicity, we love these served over rice.  It's a easy and budget friendly meal!
