Delicious Barley Black Bean Tacos, made on the stovetop.
Barley is simmered in broth, and then added to a skillet with black beans, diced tomatoes, corn and spices.
How To Make
Cookie barley in broth in a large pot on the stove.
In a large skillet add cooked barley, black beans, diced tomatoes, corn, garlic, spices and lime juice.
Cook until everything is heated up.
Add barley mixture to tortillas and then add toppings. Serve and enjoy!
