5 HOUR POTATO  SOUP

THIS SOUP IS SO CREAMY!

Potatoes are slow cooked in broth until tender, then mashed up for the base.   We add in half and half, sour cream and shredded cheese to make it super creamy!

INGREDIENTS

– Idaho potatoes  – onion – chicken broth – butter – salt & pepper – half and half – sour cream – shredded cheddar cheese – bacon

how long does this soup take?

You are going to cook this potato soup in the slow cooker for 5 hours (on HIGH), add a few creamy ingredients and then cook for 10 more minutes so the cheese melts.

HOW TO MAKE

1. Add potatoes to the slow cooker. There’s no need to peel them.

2.  Add in onion, chicken broth, butter and salt and pepper.

3. Stir to combine everything and then cook for 5 hours or until potatoes are softened.

4. Mash up the soup with either a potato masher (chunky) or immersion blender (smooth).

6. Add in the cooked bacon.

7. Cook until cheese is completely melted, stirring often. Serve and enjoy!

storing leftovers

Store leftover potato soup in an airtight container in the refrigerator. Potato soup stores well for up to 5 days.
