Sounds delicious! I have a chicken peanut stew that I make that my husband loooves, but I think I need to try this vegetarian version! Something about a peanut stew is so hearty and so satisfying!

I went to Peanut Butter & Co. and – because I couldn’t find another way to contact them – I posted a link to my recipe for Thai-Inspired Chicken and Noodles in the section below the recipe where they had asked for ‘suggestions’. That posted, but when I tried to post my ‘suggestion’ – as asked for – the site wouldn’t allow me to comment again. Now I feel like a total shlub… I don’t want it to look like I took advantage or was pushy…. ; o (

One of the first real recipes I ever made was a slow cooker west african peanut stew with peanut butter and sweet potatoes. That was like DESSERT. I think I made it every week for about 6 months. My roommates thought I was bonkers.
