With the garden season almost complete for the year, I constantly want to come up with new recipes to try, especially those that will make yummy vegetable side dishes. With pounds of green beans and potatoes just dug up, I wanted to create an easy dish that could use them both and be versatile.
This works as a simple meal, served over rice or egg noodles, but it also makes one of our favorite holiday side dishes, perfect served alongside chicken or turkey. It’s a hit with my entire family, so I hope you give it a taste!

How to Make
The star of this meal is the vegetables, so you’ll need to chop up green beans, potatoes, onions and garlic.
Cook up a couple slices of bacon and then chop it into smaller bite size pieces.
Throw everything into your slow cooker, and cook on low for 4 hours. That’s it! Now it’s time to serve it.

Can I make this Vegetarian?
You sure can, and it’s easy to do. Skip the bacon entirely, or use a vegetarian bacon crumble instead. Replace the chicken broth with vegetable broth. Just like that you have Slow Cooker Vegetarian Green Beans to serve!

- 1 pound green beans ends trimmed – leave whole or cut into thirds
- 1 pound tomatoes chopped
- 2 potatoes chopped
- 1 medium onion chopped
- 4 pieces bacon cooked and chopped into 1/2 inch pieces
