For The Love of Pineapple

Do you love pineapple? I do.  Pineapple is beautiful and delicious, the 2 best qualities in food.     I got this gorgeous pineapple from my local grocery store for only $2.50.  It’s enormous! My arms tired carrying it home.

But then after I bring it home, I always fall into the question “What should I do with it?”

So you cut off the top and admire the beauty.  (Note:  We were going to plant the pineapple top but I cut  too high, oops.)

Then you cut it into slices.  Your fingers are sticky, the pineapple aroma is building.  But what are you going to do with it?

One solution that I usually always fall for is just eating pineapple by the slice.   Nothing else.  Just plain ol great pineapple slices.

The other solution is cubed pineapple with a little bit of shredded coconut on top.

For breakfast I like to add some blueberry granola, shredded coconut and dried apples to it.  This breakfast is super filling!

My other favorite pineapple use is blended up. I throw some chunks in the blender with 1/2 half an apple (cut up) and about 1/4 cup of orange juice.  Blend until smooth.  You can even throw some mint on top.  I love this drink for a mid afternoon pick me up!

      It’s super yum! The best part is I usually just add any fruits that I can find that might not have a long life left. That banana ready to go bad? Throw it in!

    Wow, you scored a great deal on that pineapple! I love pineapple everything too – especially pineapple smoothies and grilled pineapples. Never tried sprinkling coconut but it sounds delicious!

      Grilled pineapple was big around my house as a kid around Christmas and Easter. Lately, I’ve been craving it!

    Wow $2.50 for a large pineapple?! That’s cheap!!! A friend of mine taught me to eat fresh pineapple with a little bit of sea salt. It’s suppose to make the pineapple even sweeter. I sometimes make pineapple salsa with fresh pineapples or I like to make pina colada –my favorite beachy cocktail.

    I love your smoothie idea. I’ll have to try that the next time I buy fresh pineapple. 🙂

      The sea salt idea is great, I never thought to add some salt on top.. going to try that tomorrow for a afternoon snack! I bet pineapple salsa would be great on a taco or on some beans… mmm!

    I love pineapple, your breakfast recipe looks great. My favourite way to eat pineapple is to cut it into slices, sprinkle with some cinnamon and a little brown sugar (it still works without the sugar) then cook it under the grill for around 5-10 minutes. I never thought I would like cooked pineapple but I ate it like this in a brazillian restaurant once and now I love it.

      That sounds delicious! I always love grilled pineapple with ham, so eating it by itself with some cinnamon + sugar sounds wonderful. Going to give this a try, thanks!

    Beautiful and delicious – you got that right! I love pineapple anything. Especially pure pineapple juice. And pineapple upside down cake (my favorite cake!)

      I love pineapple juice too. I recently got a juicer and have putting it to good use. Pineapple + spinach is pretty delicious!
