I used to be afraid of cheesecake, do you believe that? Some of you know my life long fear of mayonnaise, whenever I spot  it on a table or a gathering I begin to look around suspiciously.    Is it going to be in a meal that someone serves? What am I going to do? I can’t eat it.     I begin to fear for all food served at restaurants too.  Once as a kid I ordered a grilled cheese and they put mayo on the bread.  I was outraged.  Thankfully I looked before eating it, if not I probably have fainted right there at my local mall diner.    Who makes grilled cheese with mayo by the way?  It just shouldn’t be allowed, ever.   And fast food restaurants, don’t even get me started.  My poor parents would order me a burger and we’d have to inspect it in the car before leaving. If they put mayo on it after our request not to, then my mother or father or me would march back into that burger joint and get that burger remade.  What happened if we didn’t check the burger in the car so we didn’t spot the mayo until we got home? Well I wouldn’t eat dinner.  Mayo was not getting close to me.

How does this relate to cheesecake?  In my mind anything white and creamy must have tasted like mayonnaise.    Ricotta cheese, cream cheese, sour cream, cottage cheese and many more tubs of whiteness scared me, and many still do.  I’ve come around to ricotta completely.  Sour cream?  Only if I have to and it’s well hidden.  Cottage cheese? Nope. Cream cheese…. Once I met Matthew he told me about great cheesecake was.  I was obviously very cautious of this for my mayo fear.  Finally he made me realize it’s nothing like mayo and had me take the smallest bite possible from a slice of cheesecake he was eating.  The things you do for love! Did I like what I tasted? You bet I did! I nearly finished that piece of pie.  So now I’ve grown up to eating cream cheese in cheesecake and mashed potatoes.  Will I eat cream cheese on a bagel though? Absolutely not, that’s pushing it.

Do you know about Cookie Butter, aka one of the greatest things ever invented, aka omg good get it away from me before I eat anymore, aka omg get it away from me before I eat anymore – no wait a minute, please bring it back to me?  Cookie Butter can be bought at Trader Joe’s and it basically tastes like you are eating a Gingerbread Cookie house.  Trader Joe’s suggest that you put Cookie Butter on pancakes and snacks, but whatever, I will continue to eat it with a spoon like it was meant to be eaten.  Unfortunately though after many spoonfuls worth a few days ago I realized that one 1 serving is 1 tablespoon. WHAT?   How guilty did I feel? Very.  How many more spoonfuls did I eat to get me out of this guilty depression? Many.

I don’t do drugs but I would compare Cookie Butter to a very strong drug.  Once you have it, you will always crave it.  You will change your schedule around to be near Trader Joe’s when at all possible. You will tell yourself you are only buying 1 jar then as soon as you see it will you buy multiples to have as many hits as you crave.    I am not saying I want you to become addicted to Cookie Butter because it will lead you down a long and delicious road full of your childrens missed plays and wondering if people know you are secretly hiding a Cookie Butter addiction or not.   At the same time I really want you to try Cookie Butter if you can.  I think everyone should taste this goodness once in their life because it really is magical.     I suggest buying a jar, eating 1 spoonful and then throwing it away immediately.    And then because I know this will happen, you will be scraping around your trash can at 3AM to find the rest of the jar – but I am not condoning that, it’s just what’s going to happen.   Actually I think it’s almost impossible to only eat 1 serving at a time, I’m serious.  Try it, you will fail.  I am sorry for not being more positive, but Cookie Butter… it just takes over your life.

So one night recently I decided to eat Cookie Butter a different way then with a spoon.   Enter this Swirled Cookie Butter Cheesecake into my life.  This Cheesecake rules for many reasons:
It’s really really delicious.
This is meant to be a quick recipe.  I am even using a pre-made crust. Feel free to make a homemade one if you have the extra minutes.
This recipe only uses 1 8oz package of Cream Cheese. So many recipes call for 3+ packages of cream cheese, not this one.
Cookie Butter is mixed inside the cheesecake then drizzled on top.  That gives the Cheesecake a delicious cookie taste.
Repeating it’s really really delicious.

Ingredients
  1. 1 9 inch graham cracker crust
  2. 8 oz package of cream cheese
  3. 1/2 cup sugar
  4. 1 tablespoon lemon juice
  5. 1 teaspoon vanilla
  6. pinch of salt
  7. 2 eggs
  8. 6 tablespoons cookie butter
Instructions
  1. Preheat your oven to 325.
  2. Beat cream cheese and sugar together until fluffy.
  3. Add lemon juice, vanilla, salt, eggs and 4 tablespoons of cookie butter. Continue beating until all combined.
  4. Pour into graham cracker crust.
  5. Bake for 30-35 minutes until set.
  6. Put remaining 2 tablespoons of cookie butter in microwave for 10 seconds until slightly melted. Drizzle over cheesecake.
  7. Chill in refrigerator. Leave cake chill for at least 1 hour before serving.
Notes
  1. If you cannot get Cookie Butter, try peanut butter instead.

Do you know when you got a killer yummy recipe?  Before it’s even baked you are licking the cake batter bowl thinking about just not making these pies at all and having a bowl of chocolate batter for dinner instead.   Of course I didn’t do that though, instead I just had 6 giant spoonfuls of batter which is always a great idea at the moment but never a great idea once it all settles.

I used my Whoopie Pie pan again which is pretty much one of the best on sale purchases I made this year.  I never thought I needed a Whoopie Pie pan until I got one.  Now I can’t imagine life without it.  If you don’t have one, I would highly recommend it, it creates perfect shaped pies and nothing ever sticks.  I love it.

Ingredients

For the cakes

  • 1/2 cup butter - melted
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup Dutch process cocoa
  • 2 1/3 cups flour
  • 1 cup milk

For the peanut butter buttercream

  • 1/2 cup butter - melted
  • 1 cup creamy Peanut Butter
  • 2 tablespoons milk
  • 2 cups powdered confectioners sugar

Instructions

For the cakes

  1. Preheat oven to 350 degrees. Spray baking sheet or whoopie pie pan.
  2. In a large mixing bowl mix together butter, sugar, baking powder, baking soda, salt and vanilla. Once mixed, add in the egg and continue beating until all smooth.
  3. Add Dutch process cocoa and continue mixing.
  4. Add flour and milk and continue beating until smooth. Make sure it's completely mixed and soft.
  5. Drop the cake dough by 1/4 cupfuls onto baking sheet or fill up whoopie pie pan. If using a baking pan, leave 1 inch between cakes as they will grow.
  6. Bake 11 to 13 minutes until firm.
  7. Remove from oven and let cool.
  8. Spread peanut butter filling on one pie, while using another pie to press it down.
  9. Enjoy immediately or wrap in plastic wrap to store.

For the peanut butter buttercream

  1. Beat melted butter and peanut butter in a bowl until mixed.
  2. Gradually mix in sugar and once thick, add milk in.
  3. Continue beating for about 2 minutes until buttercream is spreadable and fluffy.

Makes 10-12 whoopie pies.

Creamy Peppermint Hot Chocolate

I know it’s only early November but I’m already in the holiday spirit.   The Halloween directions are still up but they will soon be replaced with snowmen and penguins.  The aisles of the stores are slowly starting to fill up with colorful holiday lights and ornaments.  Soon we’ll be smelling fresh pine (after we begrudgingly carry the tree home), the cats stockings will be hung and I will start to hum Christmas songs while baking cookies.   I love this time of the year, don’t you?

What’s another reason why I love this time of the year?  Seasonal products are out and recipes  are ready to be made.   One of my favorites is here folks.  Let’s just take a minute and look at this beauty.

Coffee-mate’s Peppermint Mocha Creamer is here and I yell in happiness!  When I saw it in the grocery store I screamed in excitement and told Matthew quickly, and then I continued talking to him crazily to only turn around and realize I was talking to a much older gentleman who was confused. I apologized quickly, found Matthew and glared at him, and then continued to discuss this Peppermint Mocha and all the ways I planned on using it.

 

What’s one of my favorite Winter time drinks? Hot chocolate of course! I can drink hot chocolate all day long to be honest, but that would leave me napping all day, so I like to save it for when we come in after a cold day or for dessert.    As soon as I brought home the Peppermint Mocha I gathered the supplies and hot chocolate was made!  We clinked glasses, sipped our hot chocolates and stared at each other nodding.  You know the nod, it’s one of those “Oh yeah, this is good.  Oh yeah, let’s just cherish this moment.”.

I worked hard to get those candy canes by the way. I was the official first person to buy them at my  local grocery.  I saw the box sitting in the aisle unopened and I tore it open like a mad woman to get the first pack of candy canes out!  Then I raised them in the air and told Matthew to cheer with me but he wouldn’t.

Ingredients
  1. 1/4 cup Sweetened Condensed Milk
  2. 1/2 cup Coffee-mate Peppermint Mocha
  3. 1/4 cup Chocolate Chips
  4. 2 tablespoons Unsweetened Cocoa Powder
  5. 1/4 teaspoon Vanilla Extract
  6. 1/8 teaspoon Salt
  7. 1 1/2 cup Hot Water
  8. Candy Canes (optional)
  9. Mini Marshmallows (optional)
Instructions
  1. In a saucepan over medium heat combined condensed milk, Coffee-mate Peppermint Mocha, chocolate chips, cocoa powder, vanilla and salt. Mix until well combined and heated.
  2. Add hot water, continue stirring until mixed thoroughly. Do not let it boil.
  3. Add mini marshmallows on top and a candy cane on the glass edge.
  4. Enjoy.

Ingredients

For the pies

  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 3/4 cup pumpkin puree
  • 1 egg
  • 1 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla
  • 2 1/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1 teaspoon ground cloves

For the cream filling

  • 1 cup powdered sugar
  • 1 cup marshmallow creme
  • 1/2 teaspoon vanilla extract
  • 1/2 cup butter - softened
  • 1 egg white

Instructions

  1. Preheat your oven to 350 degrees.
  2. Lightly spray your baking sheet or Whoopie Pie pan with nonstick spray.
  3. Combine oil and brown sugar. Mix in pumpkin and egg until well combined.
  4. Add flour, salt, baking powder, baking soda, vanilla, cinnamon, ginger and cloves. Mix until all combined.
  5. Drop spoonfuls of pie batter onto a baking sheet or Whoopie Pie pan. If using a baking sheet, try to make it as circular as possible as this will be your pie shape.
  6. Bake for 10-12 minutes.
  7. Let cool.
  8. Spread cream filling on one pie, while using another pie to press it down.
  9. Enjoy immediately or wrap in plastic wrap to store.

For cream filling

  1. In a large bowl, beat together all of the ingredients until fluffy.

White Chocolate Pumpkin Pretzel Fudge is a no bake fudge recipe.  The chocolate and pretzels give it a delicious sweet and salty taste! 

Fudge, MMMM.  Fudge was a childhood favorite and I’m glad to say it has stayed that way.  Even if I’m 100 years old and I hear the word fudge I will still grunt with happiness.

I made this fudge recently and it lasted a full day. A full day!  I’m surprised it even lasted more than 3 hours with me in the room.  This fudge is made with white chocolate, pumpkin puree and some pumpkin pie spice.   This fudge is more on the soft side so it is definitely creamy.  To give it some crunch we throw pretzels on top.  Salty and sweet are a favorite combination of mine when it comes to sweets!

  1. 12 oz White Chocolate Chips
  2. 2 Tablespoons Butter
  3. 1/3 cup Pumpkin Puree
  4. 2 Teaspoons Pumpkin Pie Spice
  5. 1 teaspoon Vanilla Extract
  6. Pretzels Broken On Top
Instructions
  1. In a microwave melt your chocolate chips and butter for 30 seconds. After 30 seconds, stir and continue microwaving every 15 seconds until it's fully melted.
  2. Stir in pumpkin, pumpkin pie spice and vanilla until all combined.
  3. Line a 8x8 baking dish with parchment paper. Spray the parchment paper with non stick spray.
  4. Pour mixture into baking dish.
  5. Add broken up pretzels on top and softly press down.
  6. Refrigerate for a few hours until it's set. Cut up into pieces.
  7. Store in refrigerator or freezer.

Funfetti Ghost Cookies

Who doesn’t love Funfetti?   Funfetti means fun! It makes you want  to throw on a party looking apron, grab some sprinkles and go wild.  And who doesn’t love the Pillsbury Doughboy? His bashfulness makes me love him even more. He’s a adorable little guy, with such a cute belly and he makes delicious treats – what’s not to love?

I can only imagine what it would be like to bake with the Pillsbury Doughboy.    You would pour 2 glasses of ginger ale and as the cookies are baking in the oven, he would tell you all his secrets.    He would give you his baking knowledge full of soft cookies and sweet treats.  You would forever owe your life to him.  Then you would reach into your pocket and shyly pull out 2 best friend necklaces.  They would be shaped like a cookie, but broken into 2 bitten pieces.  Then you would put the necklace on him and he would put it on you.  You would have a moment.   Pillsbury Doughboy- let’s be friends.  Call me. 

Here are facts I found out while googling for too long about the Pillsbury Doughboy:
His real name is Poppin’ Fresh.
He became a household love in the 1960s.
He giggles in both “hee hee” and “hoo hoo” form.
He used to be created by stop motion clay animation. Now he’s CGI.
He has a family of Poppie Fresh (his wife),  Granpopper, Granmommer, Popper (son) Bun-Bun (baby daughter), Flapjack (dog), Biscuit (cat) and Uncle Rollie.

I know. Who knew The Pillsbury Doughboy had such a large family! I’m pretty much in shock that my best friend didn’t even tell me about his children.

When I was in Target a few days ago (I’m there all the time, I’d like to think of it as a place that helps me relax) I came across Funfetti Halloween Cake Mix.  I had to have it.  I mean it’s Halloween and Boy is holding a pumpkin on the box!  It’s a must have! So off I went skipping down the aisle…

After I got home I started to think about what I was going to make, but I wasn’t sure yet. Then a few days later I was in one of my other favorite stores, Whisk. Whisk is a cooking store in Brooklyn where I like to spend all  my money. I came across a adorable ghost cookie cutter. I must have it.

Then it was decided, Funfetti Ghost Cookies!
These cookies are colorful, fun and festive.  They have the Funfetti taste we all love, but it also tastes like a sugar cookie.   Best of all, they’re super soft, like little clouds of sweetness.  When you bite into the cookie, it’s super moist.  It’s just a delicious cookie, one that will have you reaching for a second very quickly.

Ingredients
  1. 1 Box Halloween Pillsbury Funfetti Cake Mix
  2. 1/2 cup butter - softened
  3. 2 eggs
  4. Splash of Vanilla
Instructions
  1. Beat together cake mix, butter, eggs and vanilla until it becomes dough like.
  2. Cover and put in refrigerator. Let chill for 3 hours.
  3. Roll out dough on floured surface and use your cookie cutter for shapes.
  4. Put on cookie sheet and bake at 350 degrees for 8-10 minutes, until bottoms are golden brown.
  5. Decorate if desired, let cool.
  6. Enjoy!
Notes
  1. Makes 2-3 dozen cookies depending on size of cookie cutter.

Xanadu is the Boss of our kitty family, she’s on constant duty of keeping all the other cats in line. She likes to sit up above watching the others to make sure they are behaving. If they aren’t, don’t you worry, she will jump down and proceed to push them back to work.   Here’s where I found her.

Fizzy Trix Vodka

Enjoy this delicious Fizzy Vodka with Trix Cereal.  For adults only! 

Last week I was invited to a Hello Cereal Lovers event hosted by General Mills serving creations by Justin Warner.    As soon as I arrived and started to taste all these amazing cereal dishes my mind started to wonder quickly.   I usually think of Cereal as something I splash milk on and call it a day, or occasionally bake cookies and make granola bars with. But savory?  I never thought of cereal as savory but that has all changed.  By thinking out of the (cereal) box I can totally see  how cereal can be incorporated into dinner dishes and you will see a few recipes in the upcoming weeks as I try them out.   While at the event I had one amazing rotini pasta dish and one extra delicious split pea soup – both had cereal in it. I hope you’re intrigued by this, because you’re soon to be hungry!

Recipe for delicious Fizzy Vodka with Trix Cereal. For adults only!

As soon as I got to the event I was greeted with smiles, then quickly offered a Fizzy Trix drink. Let me tell you a few things:
I accepted this drink because all I heard was “Trix”.
I don’t drink Vodka.
I started to drink it and quickly felt my cheeks become flushed.
I found a recipe book at a nearby table and quickly realized I was drinking Vodka.
I really enjoyed this Fizzy Vodka Trix drink.  Alot.
I quickly started to dance on tables.
They asked me to leave.

Ok the last 2 things aren’t true.  In fact I was offered another Fizzy Trix drink but declined because I have a fear with alcohol that I will become that stranger on the subway home.    Random:  Once on the way home Matthew and I were sitting on the subway, and a intoxicated man placed his hand on Matthew’s thigh and quickly stroked very high up.  Matthew removed his hand. I giggled crazily. The man awoke embarrassed, confused, and then passed out again.  It was a highlight of my year.

So for you Fizzy Drink and Cereal lovers out there, I think you’re going to love this recipe.  Enjoy!

Fizzy Trix Vodka

Ingredients
  1. 1 cup (8 oz) vodka
  2. 1 cup Trix® cereal
  3. 1/2 cup whipping cream
  4. 1/2 cup sugar
  5. 1/2 cup water
  6. 1/4 cup fresh lemon juice (2 lemons)
  7. 1/4 cup fresh lime juice (2 limes)
  8. 2 pasteurized egg whites
  9. 2 cups ice cubes (not crushed)
Garnish
  1. Dash of aromatic bitters
  2. Trix® cereal
Instructions
  1. Place vodka in small bowl. Stir in 1/2 cup of the cereal, let stand 15 minutes.
  2. Place cream in another small bowl, stir in remaining 1/2 cup cereal. Refrigerate 15 minutes, stirring once.
  3. In 1-quart saucepan, combine sugar and water. Heat to boiling, stir until sugar is dissolves. Remove from heat, set aside to cool.
  4. Stir vodka and cream mixtures. Strain mixtures into 2-cup glass measuring cup to remove cereal, discard cereal. Pour vodka-cream mixture into beverage shaker or quart-size jar with lid. Add lemon and lime juices, egg whites and sugar mixture. Shake drink like crazy. Add ice cubes to shaker, shake again like crazy.
  5. Strain drink into 4 chilled martini glasses. Hit the foamy top with a dash of bitters.
  6. Garnish With Cereal.
Notes
  1. This is 4 servings.

While walking around the Halloween section at Target I came across these festive chocolate morsels.  They are Nestle Toll House Semi-Sweet Chocolate and Orange Morsels.   I threw them immediately in my buggy, not really knowing what I was going to make with them, but how could I turn them down?

Strawberry Bunny Milk

100% natural homemade recipe for Nesquik Strawberry Milk using fresh strawberries. You’ll love how easy and healthy this drink tastes!  It tastes just like you remember as a kid!  

Many years ago Matthew and I were completely obsessed with NESQUIK strawberry milk.  You know, the yellow containers of strawberry powder that you add to milk which transforms into sugary delicious milk?  The containers feature the Nesquik Bunny who I found out is named Quiky.   Being a person who buys food items based on how cute their characters are, I fell in love with Quiky.

 For some time they made plastic sugary milk syrup bottles in the shape of a bunny, ears and all.  Being a person who is obsessed with anything cute I would not throw these bottles away.  I would store them under my sink after rinsing them out thinking one day I could come up with a craft idea using them.   Then the day came where we moved from Pittsburgh to NYC and I had to part with my collection of plastic bunny bottles.  Somewhere in our photo archive there’s a photo of us, looking sad, hugging the bottles, right before we had to throw them out.    If the plastic bottles are reading this post, I miss you guys.  

Because the containers featured a bunny, strawberry milk was known as bunny milk right from the beginning.  I looked up online to see if anyone else called it bunny milk but I mostly got results of photos that featured people feeding their bunnies milk.  Still cute, but not what I was looking for.

Cinnamon Sugar Pumpkin Cake Donuts

Ingredients

For the donuts

  • 1/4 cup vegetable oil
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla
  • 3/4 cup + 2 tablespoons all-purpose flour

For the sugar coating

  • 3 tablespoons sugar
  • 2 teaspoons cinnamon

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray donut pan with nonstick spray.
  3. Mix together oil, eggs, sugar, pumpkin puree, pumpkin pie spice, salt, baking powder and vanilla until combined.
  4. Stir in flour and continue to mix until smooth.
  5. Fill the donut pans up about 3/4 of the way.
  6. Bake donuts for 15 minutes.
  7. Remove from oven, let cool for 5 minutes, then remove donuts from pan.
  8. Combine sugar and cinnamon in large plastic bag.
  9. One at a time, put your donuts in bag and shake lightly to cover.
  10. Remove from bag and let cool completely.
  11. Store in container.

Recipe Notes

Recipe makes (12) 3 inch donuts, or (6) large donuts.

These are yummy chocolate chip cookies, but I like to consider them healthy because whenever I add a vegetable in they immediately should be declared healthy.  Look ma, I’m eating my vegetables (wrapped up in brown sugar, butter and chocolate chips, but still..)!

This year I plan on lots of baking for holiday presents to friends and family.  I have been looking for ways to ship baked goods the best way possible to prevent cookie breakage (and heart breakage).  I found that if you use plastic pint containers (even better, just reuse your takeout pint containers after washing out) and layer each level with parchment paper, your cookies stay safe in the mail! I will be using this method for various sandwich pies and cookies during the holiday season.

  • ½ cup butter – softened
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 cup grated zucchini
  • 2 cups flour
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ¾ cup chocolate chips

Instructions

  1. Preheat your oven to 375 degrees.
  2. In a bowl stir together your butter and sugars until creamy.
  3. Add your egg and zucchini and stir to combine.
  4. Add flour, vanilla, baking soda, salt, cinnamon and cloves and continue to stir till everything is mixed good.
  5. Add your chocolate chips and stir.
  6. Drop cookie dough on parchment lined or greased cookie sheet.
  7. Bake for 11-13 minutes until bottoms are slightly browned.
  8. Let cool and enjoy!

Cornbread is such a comfort food.  It’s always a dinner favorite on the side to soak up the juices, gravy or just devour by itself.  When I found myself craving some cornbread to go along with BBQ ribs I whipped up this recipe.  This cornbread is a winner, and for those that love a spicy kick you will love it.  This recipe uses 3 tablespoons of diced jalapeno peppers which makes it spicy enough to give it that extra pop, but not too hot that you can’t eat 6 pieces of cornbread in a row.  That’s real talk y’all. 

Buttermilk Cornbread

This recipe asks for 1 cup of buttermilk which makes it as soft as a cloud.  I didn’t have buttermilk but I learned how to make some quickly with ingredients you have in your kitchen.  For 1 cup of buttermilk you need 1 cup of milk + 1 tablespoon lemon juice.  That’s it!   Place your tablespoon of lemon juice in a 1 cup measuring cup.  Add your milk to fill up to the 1 cup mark.  Then let stand for 5 minutes, you will see it will start to thicken up.  Boom, buttermilk! It’s that easy!

Next time you’re looking for a quick cornbread, look away from your usual box mix and make some homemade cornbread.  It’s well worth it.

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup flour
  • 1 cup cornmeal
  • 3 tablespoons diced jalapeno peppers

Instructions

  1. Preheat oven to 375 degrees.
  2. In a bowl whisk together butter and sugar. Add in eggs, buttermilk and baking soda. Stir to combine.
  3. Add flour, cornmeal, jalapeno peppers and salt. Continue to stir to combine.
  4. Spray a 8x8 pan with non stick spray. Pour cornbread mixture into pan.
  5. Bake for 35 minutes.
  6. Let cool for 20 minutes then cut into slices.

Recipe Notes

For 1 cup of buttermilk you need 1 cup of milk + 1 tablespoon lemon juice. That's it! Place your tablespoon of lemon juice in a 1 cup measuring cup. Add your milk to fill up to the 1 cup mark. Then let stand for 5 minutes, you will see it will start to thicken up. Boom, buttermilk! It's that easy!

 

Lemon Glazed Zucchini Bread

Lemon Glazed Zucchini Bread

Ingredients

For bread

  • 3 eggs. well beaten
  • 1 cup vegetable oil
  • 2 cups sugar
  • 2 cups raw grated zucchini peeled & seeded
  • 1 teaspoon vanilla
  • 3 teaspoons lemon extract
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon baking power

For glaze

  • 1 cup powdered sugar
  • 1-2 teaspoons lemon juice

Instructions

For the bread

  1. Preheat oven to 350 degrees. Grease two 8 1/2" loaf pans and line with parchment paper that extends a few inches above the rim on the long side of the pan. Grease the parchment paper..
  2. With a mixer, beat the eggs, oil and sugar together. Add in the zucchini, vanilla and lemon extract and combine until incorporated.
  3. In a separate bowl stir together the dry ingredients.
  4. Add the dry ingredients to the wet ingredients until just moistened.
  5. Bake for 60 minutes or until a toothpick inserted in center comes out clean.

For the glaze

  1. Put sugar in bowl, add lemon juice and stir well. Adjust taste to your liking.

I gathered all the supplies, got my apron on, looked at some pictures and then realized they were all made with bundt cake pans, which I don’t have.  I shook my fist to the ceiling, slumped to the floor and sighed.  And then like Aaliyah sung, I dusted myself off and tried again, because I thought – what about Monkey Bread Muffins?

Spray your muffin sheet.  Spray it good, bottom and sides.  Then pour in your butter and brown sugar mixture.

Rip each biscuit into 6 pieces, you don’t have to be exact with sizes, just make them about even.

Get your cinnamon sugar mixture in a bag.  Then put the ripped up biscuits inside and shake to coat evenly.

Then start to fill each muffin cup up with about 8-10 pieces. Into the oven it goes..

Now here’s the scary part.  We need to flip these upside down.  I know, you’re already scared, trust me I was too.  I thought about this in my head about 6x since I read multiple reviews that said they would fall apart.  That’s why it’s really important you spray your muffin sheet good with nonstick spray.

So you turn your muffin cup sheet upside down.  Take a minute to breathe.  Take a minute to hope.   Then slowly lift the muffin sheet up…

Ingredients

  • 2 cans of 7.5 oz Pillsbury refrigerated biscuits or other brand
  • 1/2 cup butter - melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 2 1/2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350 degrees.
  2. Spray a dozen muffin cup sheet with nonstick spray. 

  3. Mix melted butter and brown sugar together in small bowl, spoon 1 tablespoon into each muffin cup.
  4. Mix white sugar and cinnamon in a plastic bag.
  5. Take each biscuit and rip it up into 6 pieces. Put the biscuit pieces in bag and shake to coat evenly.
  6. Place 8-10 pieces of biscuits into each muffin cup to evenly fill them up. If you have any sugar left in the bag, sprinkle on top of the muffins.
  7. Bake for 12-14 minutes.
  8. Remove from oven and let cool for 1 minute.
  9. Turn upside down, the muffins should fall right out.
  10. Serve warm, enjoy!

15 Minute Strawberry Peach Jam

Homemade 15 MINUTE Strawberry Peach Jam recipe that makes a small batch 8 oz jar without pectin!  This healthy, easy recipe is a low sugar jam made with honey that makes a perfect jam for toast, dessert and more.  I love canning this recipe too!

Servings 8 ounces

Ingredients

  • 2 cups strawberries - hulled
  • 1 small peach - cut up into slices peach pit removed
  • 1 tablespoon lemon juice
  • 1/4 cup honey

Instructions

  1. Put strawberries and peach slices into a food processor and pulse about 10 times until it's a consistency that is slightly chunky.
  2. Transfer into saucepan, add lemon juice and honey. Bring to a light boil on medium-high heat.
  3. Cook for 10-12 minutes, stirring often so it does not burn. Once it's reached a jam texture, remove from heat and let cool.
  4. Put into jar and store in refrigerator.

Candy Corn Oreo White Chocolate Chip Cookies

Delicious White Chocolate Chip Cookies made with Candy Corn Oreos.  They are perfect for a Halloween seasonal cookie!  These cookies are high on the addictive scale, I dare you to eat just one! 

So let me tell you a secret, maybe it’s not a secret.   Around Halloween  Oreo releases limited edition Candy Corn Oreo Cookies.  They might only be sold at Target, I’m not sure, but that’s the only place I know that sells them.  Last year I went to Target 3 times a week for the entire month of October and they were sold out every single time.  The employees told me people were buying multiple packs. I could not get one.  I was devastated.  So imagine my incredible happiness when I saw them in Target last week.  I started crying in the cookie aisle.  I slid to the ground, cookies in my arm, hugging them tightly, crying out loudly “I LOVE YOU!”.  Target asked me to leave, but first I bought the cookies.  Even the cashier saw the cookies and gave me a look like “girl”.  And I gave her a look back that said “girl”.   That’s a good look by the way.

Here they are, in all their glory.  This is how many was left by the time I got to this recipe.   I’m just going to warn you right now.  I am a crazy Oreo addict when it comes to limited edition like Candy Corn, Gingerbread (omg dont even get me started) and Birthday Cake.  I will eat them all in 1 day.  I am horrible.  I tell Matthew sometimes when he leaves the house to take them with him (seriously).  Or I tell him to hide them.  Then when he leaves I tear the apartment apart to find them.  They make me crazy.  So if you have these cookies in your house, you might go crazy. Stir in your white chocolate chips.  You can use regular chocolate chips if you’d like but I don’t think the appearance of the cookie will be as cute as the brown will be too overwhelming.

Ingredients
  1. 1 stick softened butter
  2. 1/2 cup sugar
  3. 1/2 cup brown sugar
  4. 1 egg
  5. 1 1/2 cup flour
  6. 1/2 teaspoon baking soda
  7. 1/2 teaspoon salt

  9. 15 Candy Corn Oreo Cookies - broken up
  10. 1/2 cup white chocolate chips
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix together softened butter, sugar, brown sugar.
  3. Add egg and vanilla and continue to mix until all creamed together.
  4. Mix flour, baking soda and salt in a bowl.
  5. Add wet ingredients to flour mixture slowly, mix until well combined.
  6. Stir in broken up Oreo cookies and white chocolate chips until combined.
  7. Place tablespoons of cookie batter on parchment covered baking sheet. Bake for 10-14 minutes, until bottoms are slightly browned.
  8. Let cool.
  9. Eat and enjoy!

Did you guys know how easy powdered sugar is to make? I had no idea! I always like to sprinkle a little powdered sugar on top of my sweets.  For 1 cup of powdered confectioners sugar: 1 cup regular sugar + 1 tablespoon cornstarch.  Just blend it up until it’s powdery.  Boom! Powdered Sugar!

Crispy Peanut Butter Fudge

You might have seen on Twitter, but I was demanding that people remove this fudge from me.   Demanding as in “Please take this fudge away from me!”.  I told Matthew “Get it out of here”, so he tried and I held the fudge pan so tight with tears in my eyes moaning “Don’t take the fudge from me”.  So he didn’t, and I ate more.  And then I said “Please take this fudge away from me!”.  This cycle happens every single night.

Last night after a yummy green pepper lasagna it was dessert time.  So we got out the fudge pan.  Matthew passed me a piece of fudge when innocent little me proclaimed “That’s way too big, please cut it in half”. Oh look at  me, I’m so dainty.   2 minutes later, I was exclaiming “Where’s that other half! Add the crumbs too! I see crumbs on the bottom of the pan! Put them on top! Shovel it in my mouth!”.  From proper to monstrous in 2 minutes, that’s what this fudge will do for you.

4 Ingredient Fudgy Pumpkin Pie Brownies

Delicious and Extra Fudgy 4 Ingredient Pumpkin Pie Brownies.  All you need is brownie mix, pumpkin puree, pumpkin pie spice and chocolate chips!

So far this week it looks like Fall on Brooklyn Farm Girl,  first pumpkins, then apples, I know I know… but I’m very excited for Fall, I love it!

The first thing I had to make with our fresh pumpkin harvest from the garden was pumpkin pie brownies.   I had such a great success with my avocado peanut butter chocolate brownies that pumpkin brownies were next on the list!

This recipe is so easy because it only involves 4 ingredients: brownie mix, pumpkin puree, pumpkin pie spice and chocolate chips.    If you notice there’s no butter, eggs or vegetable oil in these brownies.  The pumpkin puree takes care of all of that! The pumpkin adds moisture to your brownies so there’s no need to add those other fattening ingredients.    Pumpkin puree is healthy too!  1 cup of pure pumpkin is 49 calories!   Pumpkin is rich in dietary fiber, anti-oxidants, minerals, vitamins (vitamin-A, vitamin-C and vitamin-E).    Did I mention it’s delicious too? Because it really is!

These brownies are super fudgy. Warning:  If you love pumpkin pie and chocolate, once you eat one of these brownies you will enter a magical  world.    I also find that people who aren’t huge pumpkin fans also love these brownies due to how moist and chocolatey they are.  They really are a hit all around for the brownie crowd.

4 Ingredient Fudgy Pumpkin Pie Brownies

Ingredients
  1. Family Size Brownie Mix (I used Duncan Hines Chewy Fudge Brownie Mix)
  2. 2 cups of fresh pumpkin puree (if not fresh, 15 oz can will work)
  3. 1 teaspoon pumpkin pie spice
  4. 1/3 cup chocolate chips
Instructions
  1. Preheat your oven to 350 degrees.
  2. Spray a 8x8 pan with nonstick spray.
  3. Mix your Brownie Mix, Chocolate Chips and 1 1/2 cup of your pumpkin puree together in a bowl.
  4. In a separate bowl mix the 1/2 cup of your remaining pumpkin puree and pumpkin pie spice together.
  5. Spread 3/4 of your brownie mix mixture into your pan.
  6. Spread your pumpkin puree mixture on top.
  7. Spread your remaining brownie mix on the very top.
  8. Then with a knife gently swirl around the top layer of the brownie so it gets mixed up with the pumpkin puree.
  9. Bake 30-35 minutes or until a toothpick comes out clean.
  10. Enjoy!

  1. Tip: If you want your brownies more firm, store in the refrigerator.
