Pistachios are something of a necessity for the holidays in our house.  As a kid Santa would always leave me a bag of red pistachios in my stocking that I would eat right up with my pistachio red stained fingers.   As a adult I still get pistachios at Christmas time, but now I like adding some cinnamon sugar spice to them.  There is something about the smell of cinnamon that really gets me in the holiday spirit and has me humming Christmas songs.  These Cinnamon Sugar pistachios are perfect for family or solo snacking, but they’re also perfect for having a dish filled when friends and family stop by over for the holidays.   They’re great for a holiday present if you want to mix up the usual tins of cookies that you make.  Trust me, everyone will love these sweet pistachios!

The scent of cinnamon takes me back to baking cookies with my Mom as a kid.  Every December we’d set a weekend aside to roll out cookie dough on the kitchen table.   A fun fact is that the rolling pin that we used to bake cookies with as a little girl now resides in my own kitchen.  Whenever I take the rolling pin out of the cabinet I immediately think of cookies!  We won’t be rolling out any dough for this recipe, but we will be using cinnamon to spice the pistachios.

This week has been rough so I baked you some cookies.  Not just any cookies, these are one of my favorite recipes during the holiday (the other being my pumpkin roll!). Gingerbread Cookies with Powdered Sugar sprinkled on top!   They have a gingerbread taste that everyone will love, especially around the holidays.  Since I’m terrible at decorating gingerbread men with icing instead I went the easy route of sprinkling powdered sugar which makes a pretty cookie. 

Powered Sugar GINGERBREAD Cookies! These cookies are so soft and chewy! This is a easy recipe that doesn't require you to chill the dough so they're quick and simple to make! They have a pretty powdered sugar decorated top for kids to help with! These are one of the best Christmas cookies to make!

You can make these cookies crunchy or chewy depending on bake time.  I personally prefer a soft chewy cookie, especially when slightly dipped in a cup of milky tea.  Yum!

I was recently craving a piece of coffee cake but wasn’t in the mood to make a entire cake. I really love mini muffins because since they are small it means I can eat 1 (or 2) without guilt.   For these Mini Coffee Cake Muffins, they taste just like traditional Coffee Cake with the moist cake and the cinnamon sugar crumble on top.

Coffee Cake Muffins recipe

For this recipe you’ll need need 2 bowls.  One to make the cake in, the other to make that extra yummy sugar crumble.

Next fill up your mini muffin pan.   I love using this pan in the kitchen and consider it one of my favorite baking tools.

Now add your crumble on top. It might seem like alot of crumble to put on top but you have to trust me on this.

And about 15 minutes later beautiful Mini Coffee Cake Muffins come out of the oven.

They will be overflowing out of their pan with sugar crumble goodness.  I let these cool for about 15 minutes and then used a butter knife to gently remove them.

Mini Coffee Cake Muffins

Servings 16

Ingredients

For the muffins

  • 1 cup flour
  • 1/4 cup + 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter - melted
  • 1 egg
  • 1/4 cup + 2 tablespoons milk
  • 1 teaspoon vanilla

For the crumble topping

  • 2 tablespoons flour
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter - melted

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a mini muffin pan with nonstick spray.
  3. For the muffins: In a large bowl combine flour, sugar, baking powder and salt. Add in melted butter and mix with fork so the mixture is crumbly. Add egg, milk and vanilla. Continue mixing with a fork so everything is combined. Pour this mixture into the mini muffin pan - it should fill up approximately 16 muffins.
  4. For the crumble topping: In a small bowl combine flour, sugar and cinnamon. Add melted butter and mix with fork so the mixture is crumbly. Sprinkle this mixture on top of the muffins. Keep sprinkling until it's all gone.
  5. Bake for 14-15 minutes.
  6. Let cool for 10 minutes before removing muffins from pan.

Recipe Notes

Makes 16 mini muffins.

I’ve been using cucumber in multiple baking recipes this Summer, like this Sugar Glazed Cucumber Bread, and we’ve been loving it! 

For this recipe I was inspired by Oatmeal Sugar Cookies that I used to love as a kid.  This recipe uses no oatmeal, but it has the same chewy consistency, along with the sugar frosting.    The cucumber is hardly tasted in this recipe, but slightly visible with beautiful green specks decorating the cookie here or there.

Course Dessert
Servings 24

Ingredients

For Cookies

  • 1/2 cup butter - softened
  • 1 cup sugar
  • 1 egg
  • 1 cup grated cucumber peeled, seeds removed, drained - see notes
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped pecans

For Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. In a large bowl mix butter and sugar together with hand mixer. Beat in egg.
  2. Add in grated cucumber and stir with a spoon.
  3. Add flour, baking soda, salt, cinnamon, cloves and nutmeg and continue mixing.
  4. Add chopped pecans into the bowl. Mix so equally distributed.
  5. Cover with plastic wrap and chill in the fridge overnight.
  6. Preheat oven to 375 degrees. Grease 2 cookie sheets.
  7. Roll dough into tablespoon sized balls and place on cookie sheets.
  8. Bake 12-13 minutes. Allow to cool.

For Glaze

  1. Mix powdered sugar and milk together in bowl with a spoon.
  2. Once cookies are cool, dip each one into the glaze.
  3. Enjoy!

Recipe Notes

To get 1 cup grated cucumbers: peel your cucumbers, remove the seeds and grate with cheese grater. After cucumbers are grated, drain them for 30 minutes to remove excess water.

I am taking a break from sugar right now and I have to tell you, it’s hard.   Everything has sugar in it!  Or if you go to the grocery store and read the labels, it seems like nearly everything does, even food that you wouldn’t have guessed.  English muffins? Sugar.  Those delicious “natural” raspberry preserves? So much sugar!  Multigrain bread? Sugar.  Spaghetti Sauce? Sugar (make your own!).   Granola and Crackers? Sugar Glazed Cucumber Bread

This Sugar Glazed CUCUMBER Bread is amazing and super moist!   It tastes just like zucchini bread, but it’s made with 1 cup grated cucumber.  The healthy recipe is easy to make and is a great way to eat your vegetables!  A powdered sugar glaze is poured on top once baked! Everyone in my family LOVES it!

This weekend there were many surprises in the garden. The monster pumpkin plant just won’t stop growing.  There was a 5 pound bag of potatoes waiting for us under the soil.   Carrots were pulled.   Jalapeno peppers were picked.   Cucumbers were spotted.   These are all vegetables I was hoping for, but maybe in a few weeks…. but in typical garden fashion, they make their own rules and showed up to the party early.  I couldn’t have been more happy to see them!

I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed.    My Half Sour Pickle recipe and Cucumber Tomato Salad is a favorite way to use cucumbers, but I was trying to figure out how to bake with them.

This Sugar Glazed Cucumber Bread was created because of that!  This bread is similar to Zucchini Bread, but instead is made with grated cucumbers.  After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special.    This is our new breakfast recipe that I’ll be making weekly until the cucumbers finish in the garden.

I don’t know what it is about July but I usually start thinking about holiday season around this time of the year.   Between me going to the library to check out a Christmas stories book, a friend telling me she’s already begun her shopping and my craving for cookies, I believe I have the “Christmas In July” fever!

Dreaming of a tin cannister of Christmas cookies led me to make these Sprinked Butter Cookies which are delicious (and very pretty!).   The ingredients list is short and simple, using butter as the main ingredient that keeps them soft.

My house is a Seltzer water house.  Besides tea, it’s all we drink.  We stock up so we’re never out because a dinner without seltzer water sure is sad!  With that said, I wanted to do a baking experiment with seltzer water because I knew it had the properties to make things extra fluffy.  And long and behold, I baked some of the best fudgy chocolate brownies I ever made with the help of seltzer!

A few things about this recipe before we dive in.  These brownies are extra fluffy. They’re extra fudgy.  They are a chocoholics dream.  Besides cocoa powder, I added in chocolate chips to make them double chocolate.  There’s no butter or milk in this recipe.  For liquid we’re using seltzer water and vegetable oil.  The brownies are fudgy and crumbly when they come out of the oven.   They’re a dream. Best Camping Recipe!

Since it’s Summer time and you’ll be spending lots of time outside at picnics, camping, gardening etc I thought it would be a perfect time to introduce you to solar cooking.  As I mentioned above it’s life changing and I’m obsessed with it.  The first time you cook with just the sun it’s a stunner of a moment.   You’ll feel so proud and happy for doing the world good. You’ll also tell all your friends and family that the food you are serving them is solar cooked because it’s that cool.  Everyone will be amazed.

Solar Stove Recipe

My solar stove of choice is the GoSun because it works great, is super light (ol “weak arms Pamela” can easily carry it) and looks pretty slick.  With us spending weekends up on the land with no electricity we rely on campfires and this solar stove to keep us fed.  I started using the GoSun a few weeks ago where I easily threw all the ingredients for a cheesy pepper egg omelette into the stove, came back 20 minutes later and breakfast was served.  I love this because time is valuable in the garden so I can just walk away from the solar stove and let it cook while I’m playing in the dirt.

Chocolate Coffee Donuts

Easy to make Chocolate Coffee Donuts with Vanilla Chocolate Chip Frosting!  This donut recipe is a family favorite! Everyone thinks they’re delicious!

I have to tell you something.   I made these Chocolate Coffee Donuts to take to work to share with everyone, but instead I kept them at home because I wanted to eat them all. And I did, I ate them all, and I didn’t regret it one bit. 

Chocolate Coffee Donuts

These donuts are the best of all worlds, moist chocolate donuts, vanilla frosting that sticks perfectly to the donuts, mini chocolate chips on top, and the sublte taste of coffee.  What gives the donuts a special taste is that I used 1 tablespoon of Folgers instant coffee granules in the batter.   Use 1-2 tablespoons depending on how “coffee” you want it to taste.  I love how simple Instant coffee is to use in recipes!

Coconut Raisin Chocolate Chip Cookies

I made these cookies this past weekend knowing that I would need something sweet but filing to keep me energized this upcoming week.   I loaded these cookies with raisins and pecans so just one cookie would give me that morning or afternoon jump that I need.

Coconut Cookies!

Instead of milk or water I used Coconut Protein shake in the recipe because coconut + raisin is a awesome combo.  If you don’t have a Coconut shake, that’s ok, you can use Coconut Almond Milk instead!  To top it off I made my favorite sugar glaze that I quickly dip each cookie into, which quickly hardens so you don’t have to worry about messy frosting cookies (especially useful on the go!).

This recipe is perfect for a toaster oven, as there’s no reason to heat up your big oven for just one cookie.  Wait until the cookie turns golden brown, then take it out of the oven and let it cool for a few minutes.

Single Serving Peanut Butter Chocolate Chip Cookie

The PERFECT DIET COOKIE! This delicious Single Serving Peanut Butter Chocolate Chip Cookie recipe will save the day (and your waistline!).

Ingredients

  • 2 tablespoons flour
  • 1 tablespoon sugar white or brown sugar
  • 1/4 teaspoon baking powder
  • 1 teaspoon peanut butter
  • 1 teaspoon butter
  • 2 teaspoons milk
  • 1/4 teaspoon vanilla
  • tablespoon chocolate chips

Instructions

  1. Preheat oven or toaster oven to 350 degrees.
  2. Mix flour, sugar, and baking powder in small bowl.
  3. Add peanut butter, butter, milk and vanilla and continue to stir until combined.
  4. Add chocolate chips and gently fold over in the dough.
  5. Spray small pan with baking spray. Form dough into one cookie and place on pan.
  6. Bake for 10-12 minutes.
  7. Let cool for 10 minutes.
  8. Enjoy!

Rainbow Crunch Granola Bars

RAINBOW Crunch Granola Bars made with chocolate chips! This homemade no bake recipe makes crunchy granola bars made with oatmeal and rainbow cereal! Kids love making them alongside Mom for breakfast and lunch treats!

We live in a granola bar loving household.  If you open up the cabinet you’ll see boxes of them, all bought in bulk, because it’s a bad day if you run out of granola bars.  One thing I don’t like though is the prices of granola bars.    For a pack of 8, it’s usually $5, and those granola bars are tiny.  

Loving to make my own food if at all possible, and love to save money, I decided to start making my own granola bars.  It’s easy, and I bet you have all the ingredients already in your pantry!  Plus you can easily customize them to include ingredients that you like.  You get to pick the cereal, if you want chocolate chips or not (of course), throw in the option of dried berries or nuts or whatever else you want.

These Rainbow Crunch Chocolate Chip Granola Bars are delicious.  So delicious that after I made a batch earlier this week I’m already being asked to make another.   We eat these bars for quick breakfast on the go, but also afternoon snacks.  They’re a good snack that fills you up between lunch and dinner.  

For my bars I used Berry Colossal Crunch cereal to add crunch, but also to add color.  The bright colored pieces of cereal give these granola bars a rainbow effect which is perfect for kids, but is also great for adults who have a inner kid in them and always picks the rainbow cereal at the kitchen table.
