EASY Stuffed Pepper Casserole

BAKED Easy Stuffed Pepper Casserole made with green peppers! This dinner dish uses my Mother’s famous stuffed pepper recipe but I turned it into a casserole to make it quicker and easier. It’s filled with ground beef, green peppers, diced tomatoes, rice and smothered in mozzarella cheese.

Growing up one of my Mother’s favorite meals to make was stuffed peppers.  Whenever I go back to visit my Father I always ask him to think of a meal or two he wants me to make for him and usually always he requests Mom’s Stuffed Peppers.   

What isn’t there to love about stuffed peppers?  Fresh peppers, meat, tomato sauce, rice and mozzarella cheese.   Yes, please!   The seasonings add so much flavor and you can make it as spicy or mild as you want.

When I was a kid we would always hit up the weekend markets.  These markets were a mixture of flea markets outside with regular food vendors inside.  I come from near Amish country in Pennsylvania so on the way there it wouldn’t be strange to pass a horse and buggy going by.

Once at the auction first you would browse the treasures outside ($2 rainbow ceramic pie pan!) while working up a appetite.  Next stop would be the Amish stands outside where you could buy fruits and vegetables at discounted prices (hello 4 for $1 corn on the cobs).

Finally you’d go inside and grab lunch or head to the butcher to buy meat for dinner that week.    There was a popular place inside one of these markets that sold a chicken breast stuffed with potato stuffing.

FAQ for this recipe:

Can I substitute or add additional vegetables?
Feel fee to make it your own and add additional vegetables if you’re trying to empty out the fridge – onions, peas, green beans, and bite size cauliflower are all equally good in it.  Just don’t skip on the potatoes – never skip on the potatoes!

Can I use chicken bouillon cubes instead of broth?
Absolutely, I do it all the time.   

Can I make this vegetarian?
You sure can.  Use vegetable broth instead of chicken broth and don’t add in chicken breast.  You might want to add in some additional protein like white or great northern beans.

No.  Homemade dumplings are one of the easiest things to make.  It’s really just about mixing some simple ingredients together and then dropping it into hot broth to form the dumpling.   The dumplings might not be the prettiest you’ve ever seen, but they will taste just as delicious.

My Mom would add ground beef, rice and tomato sauce into a big piece of cabbage, roll it up, throw it in the fridge overnight to sit and then we would have them for Sunday dinner.  Just the smell of cabbage takes me back to my childhood!

Ingredients for Slow Cooker Cabbage Roll Casserole

  • 1 pound raw ground beef
  • 1 medium size head of cabbage chopped
  • 1 medium sized green pepper chopped
  • 1 small onion chopped
  • 1 15 Oz can of diced or stewed tomatoes undrained
  • 2 15 Oz cans of tomato sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon beef bouillon
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup uncooked white rice (not instant)

How to Make Slow Cooker Cabbage Rolls

All you need to do is add all the ingredients (except the white rice) in the slow cooker and cook on high for 1 hour. Add rice, stir and cook on high for 3 more hours. 

Some people call this recipe “lazy cabbage rolls” but I just call it delicious!  A nice warm bowl of cabbage roll casserole is the perfect dinner for a cold Winter night.

The peanut butter inside happened accidentally.  I’ll be honest.  I was gong to make these as regular Oreos with white vanilla cream in the middle but let’s just say there is a expiration date on shortening that should be followed.   I made a creamy vanilla mixture with powdered sugar and shortening but it was a failure.  I don’t use shortening much so it basically sits in my cabinet to be used a few times a year.  Well after I tasted the vanilla cream I knew something was off.  My gut instinct told me right away it was the shortening.  So I turned the cannister upside down and looked at the expiration date.  I’m so embarrassed I’m not going to tell you what year it said.

So what does one do when they ruin a vanilla cream?  They turn to peanut butter.   I’m happy that the vanilla cream disaster happened because I can’t imagine these Oreo sandwiches without the peanut butter filling.    The sandwich itself is moist and soft to the touch.  The peanut butter stacked between the cookies is creamy and full of sweet flavor.   They are a real treat.

This is a smaller size recipe treat.  I get intimidated seeing 30 Oreo cookies sitting in my kitchen so this batch makes 8 of them. I think 8 is a fair amount as it will only last a few days and you can share with the people you love the most.   You could also eat all 8 yourself and I totally won’t judge you for that.

Homemade Peanut Butter Oreo Cookies

Ingredients

For cookies

  • 1/4 cup unsweetened natural cocoa powder
  • 1/2 cup and 2 tablespoons flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup and 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract

For filling

  • 2 tablespoons butter room tempearture
  • 1/2 cup creamy peanut butter I used Peanut Butter & Co Smooth Operator
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. In a bowl mix together cocoa powder, flour, baking powder, baking soda and salt. In a separate bowl using a hand mixer cream together butter, sugars, egg and vanilla.
  2. Add dry mixture to wet mixture and continue to mix until combined.
  3. Cover cookie dough with plastic wrap and refrigerate for 1 hour.
  4. Preheat oven to 350 degrees. Roll the dough into large teaspoon size balls.
  5. Place balls on parchment lined cookie sheets. Once balls are down use a fork or spatula to flatten them down.
  6. Bake cookies for 7-8 minutes.

Cream Filling

  1. Using a hand mixer combine the butter and peanut butter until creamy.
  2. Add powdered sugar and milk and continue to mix until combined.

To Make Cookies

  1. Take one cookie and put filling on it. Then take another cookie and put it on top. Flatten down with your hand slightly to make the cookie sandwich.

A few weeks ago I was left with a cup of sauerkraut.  Being a person that doesn’t like any food to go waste I was going crazy with what to do with it.  We used some of it up on chili cheese dogs but what was going to be next?  

Then I thought of all the great family Polish recipes I ate as a kid.  There was always sauerkraut alongside meat and mashed potatoes so that’s how this Slow Cooker Sausage and Sauerkraut recipe was created.  

Sausage and Sauerkraut Ingredients

This is a simple recipe that doesn’t require many ingredients.

  • 1 cup sauerkraut
  • 3 tablespoons brown sugar
  • 1 pound pork sausage cut up into 1-2 inch pieces
  • 1/2 onion sliced
  • 1/4 cup water

How to Make Slow Cooker Sausage and Sauerkraut

  1. In  a bowl combine the sauerkraut and brown sugar. Place this into slow cooker.
  2. Next arrange the sausage pieces and onion over the sauerkraut.
  3. Pour water on top.
  4. Cook on high for 2 hours, checking occasionally to make sure there is still water.
  5. Reduce to low and cook for 2 more hours.
  6. Serve over mashed potatoes or egg noodles

It’s funny how recipes that just came out of no where end up being your favorite.  This slow cooked Sausage and Sauerkraut dish was a huge hit at the dinner table leaving it a now favorite favorite meal.  The meat becomes so tender and juicy in the slow cooker and it picks up the spices of the brown sugar giving it a slight sweet taste.

What to serve with Sauerkraut and Sausage?

I served this on mashed potatoes which I would totally recommend but you could also serve over rice or noodles. This is my favorite mashed potatoes recipe if you’re looking for a new one.

I used my Whoopie Pie pan again which is pretty much one of the best on sale purchases I made this year.  I never thought I needed a Whoopie Pie pan until I got one.  Now I can’t imagine life without it.  If you don’t have one, I would highly recommend it, it creates perfect shaped pies and nothing ever sticks.  I love it.

Ingredients

For the cakes

  • 1/2 cup butter - melted
  • 1 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup Dutch process cocoa
  • 2 1/3 cups flour
  • 1 cup milk

For the peanut butter buttercream

  • 1/2 cup butter - melted
  • 1 cup creamy Peanut Butter
  • 2 tablespoons milk
  • 2 cups powdered confectioners sugar

Instructions

For the cakes

  1. Preheat oven to 350 degrees. Spray baking sheet or whoopie pie pan.
  2. In a large mixing bowl mix together butter, sugar, baking powder, baking soda, salt and vanilla. Once mixed, add in the egg and continue beating until all smooth.
  3. Add Dutch process cocoa and continue mixing.
  4. Add flour and milk and continue beating until smooth. Make sure it's completely mixed and soft.
  5. Drop the cake dough by 1/4 cupfuls onto baking sheet or fill up whoopie pie pan. If using a baking pan, leave 1 inch between cakes as they will grow.
  6. Bake 11 to 13 minutes until firm.
  7. Remove from oven and let cool.
  8. Spread peanut butter filling on one pie, while using another pie to press it down.
  9. Enjoy immediately or wrap in plastic wrap to store.

For the peanut butter buttercream

  1. Beat melted butter and peanut butter in a bowl until mixed.
  2. Gradually mix in sugar and once thick, add milk in.
  3. Continue beating for about 2 minutes until buttercream is spreadable and fluffy.

Beef Stroganoff, Beef Stroganoff, Beef Stroganoff, Beef Stroganoff.   I’ve had this word written in my “to do” page for months now because Matthew has been craving Beef Stroganoff.  How bad has he been craving it?  See above for hints.  So finally I made the first step, I bought sour cream.  This is a pretty big step for me considering sour cream scares me beyond belief.  The texture of sour cream reminds me of my archnemesis, mayonnaise.  I know they taste nothing alike but I worry the mayonnaise companies might be following me, watching me when I shop (how embarrassing) and then sneak mayonnaise into my sour cream tub instead.  Can you imagine the nightmares I would have?   Actually there is a mayo dream I have had a few times but that’s for another time entirely…

Beef Stroganoff.   So I made it, with sour cream.  And onions.  Are you shocked?   I pretty much am.  When Matthew saw me frying onions up with the beef I think he nearly fainted with surprise.  Look at me, throwing onions in a pan, buying sour cream,  life changing actions right here folks!  And get this, I absolutely loved it.  It was creamy, moist and delicious.  Give me mushrooms in a creamy sauce and you have one happy girl!  Beef Stroganoff – thanks for a great dinner!

Creamy Beef Stroganoff

Ingredients

  • 2 pounds beef chuck roast or beef sirloin steak
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 ounces butter
  • 2 cloves minced garlic
  • 1 onion cut up into slices
  • 1 1/2 cup beef broth
  • 3 tablespoons cornstarch
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon ground mustard
  • 12 oz mushrooms canned or fresh
  • 1/3 cup sour cream
  • parsley to garnish

Instructions

  1. Remove any fat from your beef and cut into pieces that are about 1/2 inch thick and 2-3 inches long.
  2. Season meat with salt and pepper, rub so all meat is evenly coated.
  3. In a large skillet over medium high heat, melt the butter and garlic. Add the beef and cook until browned. Add onion slices and continue to stir for 3 minutes.
  4. Place beef broth in small bowl and add cornstarch slowly, continuing to stir.
  5. Add beef broth/cornstarch mixture to beef and onion skillet, bring to a boil. Lower the heat and add in ground mustard and worcestershire sauce. Stir until combined.
  6. Cover and simmer for 1 hour.
  7. When your 1 hour is up, remove lid and stir in mushrooms and sour cream.
  8. Once heated, serve over egg noodles or rice.
  9. Add parsley to garnish on top.

First, I would like to give a shout out to the ever changing Sun that enters our loft around 5:30PM and blinds me until about 7PM.  The light is dramatic, feels great on the skin, but it’s all over the place for pictures.

Here’s your mushrooms. I use whatever I have, fresh or canned, whole or cut up.  Go mushroom crazy in my opinion. Also, I see you creeping behind the mushrooms Sour Cream.  Don’t even think about it, my eye is on you like a hawk.

Do you know how good this was already smelling?  Essy showed up and tried to jump from the table to the counter, which is a enormous jump that her 19 year old body would have never made.  She had her eye on the prize (the beef) and her nose knew it was nearby.

Add your onions, your place is going to smell like a Stroganoff paradise starting now. Once you add your broth, mustard and worcestershire sauce then you’ll let simmer for 1 hour.
