Delicious White Chocolate Chip Cookies made with Candy Corn Oreos.  They are perfect for a Halloween seasonal cookie!  These cookies are high on the addictive scale, I dare you to eat just one! 

So let me tell you a secret, maybe it’s not a secret.   Around Halloween  Oreo releases limited edition Candy Corn Oreo Cookies.  They might only be sold at Target, I’m not sure, but that’s the only place I know that sells them.  Last year I went to Target 3 times a week for the entire month of October and they were sold out every single time.  The employees told me people were buying multiple packs. I could not get one.  I was devastated.  So imagine my incredible happiness when I saw them in Target last week.  I started crying in the cookie aisle.  I slid to the ground, cookies in my arm, hugging them tightly, crying out loudly “I LOVE YOU!”.  Target asked me to leave, but first I bought the cookies.  Even the cashier saw the cookies and gave me a look like “girl”.  And I gave her a look back that said “girl”.   That’s a good look by the way.

Here they are, in all their glory.  This is how many was left by the time I got to this recipe.   I’m just going to warn you right now.  I am a crazy Oreo addict when it comes to limited edition like Candy Corn, Gingerbread (omg dont even get me started) and Birthday Cake.  I will eat them all in 1 day.  I am horrible.  I tell Matthew sometimes when he leaves the house to take them with him (seriously).  Or I tell him to hide them.  Then when he leaves I tear the apartment apart to find them.  They make me crazy.  So if you have these cookies in your house, you might go crazy. I mean in a good “these are so delicious I’m going to cry” crazy way.

Cream together butter and sugars.

Stir in your white chocolate chips.  You can use regular chocolate chips if you’d like but I don’t think the appearance of the cookie will be as cute as the brown will be too overwhelming.

Candy Corn Oreo White Chocolate Chip Cookies

Ingredients

  • 1 stick softened butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 15 Candy Corn Oreo Cookies - broken up
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix together softened butter, sugar, brown sugar.
  3. Add egg and vanilla and continue to mix until all creamed together.
  4. Mix flour, baking soda and salt in a bowl.
  5. Add wet ingredients to flour mixture slowly, mix until well combined.
  6. Stir in broken up Oreo cookies and white chocolate chips until combined.
  7. Place tablespoons of cookie batter on parchment covered baking sheet. Bake for 10-14 minutes, until bottoms are slightly browned.
  8. Let cool.
  9. Eat and enjoy!

So you can imagine my amusement when I pulled this green pepper cheese bake out of the oven and muttered “Have Mercy”.  And then I laughed.  And then I looked around to make sure none of the cats were judging me.  The coast was clear.  I put this green pepper dish on the counter, took a step back and repeated “Have Mercy”.  This right here is a looker, a real beauty, a real head turner.  You get the idea.  It’s glorious.

Green Pepper Cheese Bake Casserole

This Green Pepper Cheese Bake is a delicious comfort food recipe! It’s also filled with vegetables: 2 pounds of green peppers, 1 cup of tomatoes, 2 cups of corn and 1 cup of spinach. Your family will love it!

Ingredients

  • 2 pounds green peppers - cut up into bite size pieces
  • 2 cups corn kernels -fresh cooked or from a can (not frozen)
  • 1 cup cherry tomatoes - halved
  • 1 cup spinach - chopped up
  • 2 cups shredded cheddar/monterey jack cheese
  • 1 tablespoon butter
  • 3 eggs
  • 1 cup heavy cream
  • salt + pepper to taste

Instructions

  1. Heat butter in pan over medium heat. Once melted add your tomatoes, spinach and corn and saute to coat everything. Season with salt + pepper.
  2. In a oven safe casserole dish, start to assemble the bake.
  3. Put half of your green peppers at the bottom of the dish.
  4. Put 1/3 of your shredded cheese on top.
  5. Spread your tomatoes/corn/spinach mixture on top.
  6. Put 1/3 of your shredded cheese on top.
  7. Put the remaining half of your green peppers on top.
  8. Put the last 1/3 of your shredded cheese on top.
  9. In a bowl beat eggs, heavy cream and salt + pepper to taste.
  10. Pour this mixture over the top of your bake evenly.
  11. Bake at 425 for 10 minutes.
  12. Turn your oven down to 350 and bake for 25 more minutes.
  13. Enjoy!

 The best peanut butter fudge recipe. This easy to make old fashioned fudge has a crispy top to it. This recipe has been passed down in my family!

You might have seen on Instagram,  but I was demanding that people remove this fudge from me.   Demanding as in “Please take this fudge away from me! I can’t stop eating it!”.

I told Matthew “Get it out of here”, so he tried and I held the fudge pan so tight with tears in my eyes moaning “Don’t take the fudge from me”.  So he didn’t, and I ate more.  And then I said “Please take this fudge away from me!”.  This cycle happens every single night.

Last night after a delicious Stuffed Pepper Casserole dinner, it was dessert time.  So we got out the fudge pan.  Matthew passed me a piece of fudge when innocent little me proclaimed “That’s way too big, please cut it in half”. Oh look at  me, I’m so dainty.  

2 minutes later, I was exclaiming “Where’s that other half! Add the crumbs too! I see crumbs on the bottom of the pan! Put them on top! Shovel it in my mouth!”.  From proper to monstrous in 2 minutes, that’s what this fudge will do for you.

Frozen No Bake Cake Batter Squares

No Bake Oreo Birthday Cake Batter Squares recipe that only needs 4 ingredients. These are my favorite treat with rainbow sprinkles!

Ingredients

  • 1 package of Birthday Cake or Golden Oreos
  • 1 cup white chocolate chips
  • 14 oz can of sweetened condensed milk
  • 1/3 cup Rainbow sprinkles

Instructions

  1. Get a 8x8 baking pan, spray it with nonstick spray. Set aside.
  2. In a food processor, grind up your Oreo cookies to a crumb mixture. You will probably have to do this in 3-4 batches. Set the crumbs aside in a large bowl.
  3. Melt your white chocolate chips in the microwave for about 30-45 seconds until melted.
  4. Pour in your condensed milk to the chocolate chips and stir until smooth.
  5. Pour 1/4 cup of rainbow sprinkles into the mixture and stir again.
  6. Take your chocolate chips/milk/sprinkles mixture and pour it into your Oreo crumbs mixture.
  7. Stir around until everything is mixed.
  8. Spoon your mixture into a sprayed baking pan and with a spatula press down so it's flat and even across the top.
  9. Add your remaining sprinkles and use the spatula to press these down.
  10. Put foil on top and put in your refrigerator for 1 hour to set.
  11. Remove from fridge, cut into small squares.
  12. Put pieces in a freezer bag, and put in freezer.
  13. Enjoy!

Recipe Notes

If you are making shapes by using cutters instead of squares, I would let you sit this at room temperature for about 10 minutes after taking them out of the fridge. Then cut.

I even  (guiltily) enjoy a bowl of just cake batter, to be enjoyed with a spoon, or your tongue as you look around to  make sure noone is watching you act like a human dishwasher (totally ok, do it all the time, I’ve even been caught a few times, just ignore it and keep going).

Now you can call them blondies if you want, but I’m going to go with brownies because it feels more comfortable.   A vanilla brownie, let’s call it that.  Or  a albino brownie, we can do that.  I’ve googled this brownie vs blondie debate and the wounds go deep with those on both sides, but I think we can come together and just enjoy this.  

Let’s just call this amazing, because that’s what it is.  I am pretty sure these bake batter brownies can stop wars.  In fact, I am going to send a letter to the White House letting them know of this.  Thank me later POTUS!

The other great thing is these can be stored for about a week, but seriously – these won’t even last 3 days.   If I stop by, 2 days at the most! Beep Beep, one cake batter monster coming through…

Baking Dish Size Matters

If you want ooey gooey Confetti Cake Batter Brownies, your baking dish size matters.   I used a 11×9 dish and I feel this made them just the right amount of soft and gooey that I wanted.  Some readers have used larger pans and they end up more cake like, not fudgy like we want. 

After you spread the batter, put it in the oven.

Now wonder around your house while cake batter fills the air.  During this time I like to lay near the kitchen, close my eyes and enter a magical world of rainbow happiness.

  • 1/3 cup milk
  • 1/4 cup rainbow sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 11x9 baking pan with nonstick spray.

  3. Combine cake mix, vegetable oil, egg, and milk into a bowl. Mix with hand mixer. 

  4. Add sprinkles and white chocolate chips, continue to mix until all combined. 

  5. Spoon batter from bowl into baking pan, sprinkle a few more rainbow sprinkles on top.

  6. Bake 25-30 minutes until your edges are slightly brown.  Mine take 26 minutes to be exact. 

  7. Since the brownies are very fudgy, please allow them to cool completely or they will fall apart! 🙂  After cooling, cut into brownie square and enjoy!

Gingerbread Popcorn

We recently got a air popper which is changing our lives.    With a air popper you don’t have to use any butter or oil.  It’s fresh, low calories and each kernel is so puffy and light.   Not to mention it’s so quick to pop.  The product claims you can pop 18 cups in 2.5 minutes – wow!  For now we have stuck to single servings or a bowl for both of us, but because of how quick it works for us, I trust it can do that amount too.  On the calorie side, one big bowl of popcorn for one clocks in at 110 calories plain.  It always fills me!  On our counter now sits a 12 pound jar of popcorn ready for you to scoop and pop!

A few nights ago during the night I whispered to my husband “give me your phone”.  There I sent myself a email that only had a subject line.  The email looked like this:

I knew when I woke up the next morning I would understand it, I needed to make gingerbread popcorn.  But where to start?

I had a few rules:
-Needs to taste like gingerbread
-No butter
-No oil of any kind

The result: A  simple gentle ginger tasting popcorn which was eaten in a few minutes.  I have a bunch of popcorn thoughts in my head so stay tuned for more popcorn recipes!

Gingerbread Popcorn

Servings 1

Ingredients

  • 3 tablespoons unpopped popcorn
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 single packet of Splenda

Instructions

  1. Use a air popper to pop your corn. Put in a bowl.
  2. Mix ginger, nutmeg, salt, cinnamon and splenda in a bowl.
  3. Mist your popcorn with water 1-2 times.
  4. Sprinkle seasoning mixture over popcorn and toss popcorn around.
  5. Enjoy!

Recipe Notes

This recipe is for one serving. Duplicate for as many as you need.
If you'd like to use real sugar or Stevia you can use that instead of Splenda. A packet of Splenda measures a little less than 1/2 teaspoon, so measure accordingly.

If you aren’t using oil or butter, the seasoning is not going to stick to your popcorn.  The solution to keep this oil and butter free is to mist your popcorn with a water mister (or a cheap one from the dollar store) 1 times, toss it so the bottom is now the top, mist again.  Misting it 1-2 times will not cause your popcorn to get soft.  The water will allow the seasoning to stick to it, plus it will keep your popcorn low calorie.

Green Bean and Broccoli Casserole

You’re about to become everyone’s favorite at any gathering!

I love green bean casserole.  It reminds me of holidays, friends, smiles.  I also love it because it’s green and beautiful.  A few days ago around midnight, Matthew came into the bedroom where I was reading and asked if we could have green bean casserole “tomorrow”.  I told him we would gather the ingredients the next day.  Then I came to thinking how I made broccoli casserole last year and I loved it so much, so why don’t we mix these beans and brocs and make a delicious green bean and broccoli casserole?  I can’t be happier about how it came out!  In the recipe below I am using frozen vegetables which adds simplicity in the time saving department.

Green Bean and Broccoli Casserole

Ingredients

  • 11 oz frozen green beans
  • 11 oz frozen broccoli florets
  • 3/4 cup milk
  • 1 can cream of mushroom soup
  • 1/8 teaspoon black pepper
  • 1 1/2 cups French's fried onions

Instructions

  1. Preheat your oven to 350.
  2. Mix soup, milk and pepper in a baking dish.
  3. Stir in frozen beans, frozen broccoli and 1 cup fried onions. Stir good.
  4. Bake at 350°F for 40 minutes. (Make sure it's hot inside)
  5. Stir it, then top your remaining 1/2 cup onions on top.
  6. Bake 5 more minutes until your onions are golden brown.
  7. Enjoy!

Here are your fried onions.  Truth: I don’t like onions.  I’m really picky about them.  But for some reason I’m 100% fine with these fried onions – how that makes sense, I have no idea.

Many people serve bean/broccoli casserole as a side, but we had it for a man dish with some toasted garlic bread/bread rolls.  There is creaminess residing in the casserole so you want to have some bread to dip in..

Irish Potato Candy

Irish potato candy is a favorite where I’m from in the coal mines of Pennsylvania.  There used to be a candy store in the mall that sold these that I would crave every time we walked by.  The candy has the sweet smell of cinnamon.  They are best serve chilled, and when you take a bite you will taste the sweetness mixed in with coconut.  Irish potato candy is a magical experience to eat.  As a kid I used to actually think they were made of potatoes, but boy was I wrong.  There is nothing healthy about these, warning.  But they are very good, so have one or two for dessert.  If you make these there is a strong chance you will declare your love for me, so give them a try.

These are easy to make – there is no cooking, just chilling involved.  There is also some mixing involved so you will have some bowls to clean (preferred to clean by mouth first).
Why are they called potato candy?  Because they look like little cute potatoes!  These would be extra cute to make for St Patrick’s Day!

Irish Potato Candy

Ingredients

  • 1/4 cup butter softened
  • 8 ounce cream cheese
  • 4 cups confectioners powdered sugar
  • 2 1/2 cups flaked sweetened coconut
  • 1 teaspoon vanilla extract
  • few tablespoons of ground cinnamon to roll them in

Instructions

  1. Beat your softened butter and cream cheese together with a mixer until it’s smooth.
  2. Add your powdered sugar and vanilla. Keep beating until this is smooth.
  3. Mix in the coconut, with a spoon or your hands.
  4. Roll into potato shapes with your hands. I like to keep them about 2 inches big.
  5. Roll in cinnamon to make them brown.
  6. Place on wax paper lined cookie sheet and chill for a few hours in the refrigerator.
  7. Store in a container in refrigerator.
  8. ENJOY!

Mix it with your hands.  You are going to get dirty.  Totally ok.

Roll in cinnamon.  Add more as you need it. You will only need 2-3 tablespoons.
