These cookies are so easy to make and only require 5 ingredients: pumpkin, quiak oats, maple syrup, peanut butter and pumpkin pie spice. They’re all healthy, simple ingredients.
You’ll add your 5 ingredients to a large bowl and use a hand mixer to blend for about 30 seconds. Then you’ll form the dough into tablespoon sized balls, that you will press down to form a cookie. Bake at 350 degrees for about 15 minutes.

The first time I made a Pumpkin Roll years ago I was ecstatic. There was so much preparation and fear in the roll. For those who have made a roll I think you can all remember your first time, whether it was a success or a flop. I researched it profusely online watching rolling videos, looking at step by step blog posts, very intimidated by the rolling process.

How was I supposed to roll the cake without cracking it? How was I supposed to add the cream? What is cheesecloth? And how was I supposed to get the cake out of the cookie sheet without having it stick at all losing big points in presentation and pretty factor (we all want a pretty roll).
So I made the roll, I had it timed, I had my supplies ready and the first time – it was a success. My heart was racing during that very short time frame from getting the cake removed from the cookie sheet (hot!) almost immediately out of the oven, onto damp cheesecloth and roll it (hot!).
After it was rolled, I let out a big sigh of relief. I might have even fell on the kitchen floor in victory. Actually that’s probably what I did, I am very dramatic when it comes to baking success. I’m just so darn happy.
-Don’t let the cake stick to the pan when baking it. This is a big important factor. You have a very short time when you remove it from the oven and flip it upside down to flop onto the cheesecloth. If it sticks, the cake will fall apart, a little or completely. What saves this? PAM. Pam is my hero. What a great name too, right? 🙂

For this recipe, we’re going to use pecans for the base and white chocolate for the top! Lots of people confuse toffee and caramel, but toffee is more crunchy while caramel is more sticky!

What is the best thing to serve with soup? Oh, you got it right Sista. It’s biscuits. I like my biscuits flaky. I like them warm. I like a little butter on top. I love when they crumble apart. I also love to give them a little dive into the soup bowl. When I was little my mom worked at KFC (that’s Kentucky Fried Chicken if you didn’t know). I’m not going to lie, I love that place. Their biscuits, their mashed potatoes – hello big bucket of goodness.
I’m pretty sure this is illegal to the KFC conduct codebook but my mom would sometimes sneak me a extra biscuit. That’s when I knew I was a good girl that day. Off I went with a smile and my 2 warm biscuits. What I loved about theirs was how flaky yet soft their biscuits were. They didn’t taste “bready” or heavy. They were light but delicious.

Whenever someone tries one of these biscuits, they’re like “This tastes like…” and I’m like, *hold a hand up*, “I know, enjoy”. I love making these biscuits for soup or Sunday dinner (amazing with mashed potatoes and gravy). There’s never a biscuit left on the dinner table.

2 1/2teaspoonbaking powder
*It's very important that you use chilled butter for this, that will make sure the biscuits are flaky. You can refrigerate or freeze the butter, don't use room temperature or melted butter.*
Preheat oven to 400 degrees.
In a bowl mix flour, baking powder, baking soda, salt and sugar.
Slowly start to cut butter in the flour mixture. You can either grate the butter or I use a knife to cut into small pieces. Keep cutting butter in until it's all gone. You want the mixture to look like crumbs.
Mix in buttermilk.
Knead dough in bowl for 30 seconds.
Transfer to a greased baking sheet and roll out with your hands into a 7x7 piece. With a knife, cut 12 sections but don't don't cut all the way or separate them. This will make them easy to rip apart when done.
Bake 15 minutes.
When out of the oven, cut into sections and serve hot.
