LEFTOVER RICE TACOS

25 MINUTES | EASY DINNER RECIPE 

This recipe uses a whole container of leftover rice.

Brown ground beef in a skillet.

Add in a packet of taco seasoning.

And a can of corn.  You can use frozen too.

Add in leftover rice.

Now add your shredded cheese.  I love using sharp white cheddar cheese.

Mix until cheese is melted. YUM YUM YUM YUM YUM!

Add some beef mixture to the bottom of a baking dish. Not much, just like 3 tablespoons.

Now let's roll up some tortillas! I'm using 6 inch tortillas.

If any beef/rice mixture is left, add it on top of the tortillas.

Now add a jar of your favorite salsa. 

oh my gosh yes!!!! Bake until cheese is melted and tortillas are crispy, about 10 minutes. These are so good!
