HEALTHY & CREAMY Roasted Cauliflower Carrot Soup! This recipe is loaded with fresh vegetables and is so easy to make! Even though it tastes cheesy there’s no cheese in the recipe – it’s amazing! Recipe can easily be made dairy free by using almond milk.

Roasted vegetables don’t get enough love in my opinion.   Magic happens when you crank your oven up to 450 degrees, and roll your vegetables around in olive oil.   Cauliflower and carrots are good by themselves, but ROASTED cauliflower and carrots?  They are amazing!

I had some beautiful carrots that I planned on making baby puree with (which I did – with a kick of cinnamon – she loves it!), but I was left with half a pound of carrots. 

I took another glance in the refrigerator and saw a head of cauliflower that was screaming to be used.  I was feeling in the soup mood so I decided to make my family’s favorite cauliflower soup, but with a carrot twist!

This soup is so creamy – but without all the extra fat that usual creamy soups call for! In fact, there is no cheese in this soup! There is only 1 cup of milk, and if you want to make it dairy free you can easily substitute almond milk instead.

Frozen Banana Ice Cream

What you need is 2 frozen bananas, 1 tablespoon peanut butter and 1 teaspoon cocoa powder.  Then you throw it all in the food processor, give it a few pulses and you have soft serve.  I was shocked the first time I made it.  I’m talking real soft serve consistency here. I’m talking Ice Cream Truck texture. But without the cream and milk and sugar.

Instructions

  1. Peel bananas and cut them into pieces. I cut each banana in 4 pieces.
  2. Add bananas, peanut butter and cocoa powder to food processor.
  3. Pulse for about 15-20 seconds or until frozen soft serve consistency.
  4. Serve right away or put in container to store in freezer.

Vegetarian Collard Greens

Easy Vegetarian Collard Greens recipe.  These greens are simmered in a brown sugar vegetable broth making them full of flavor!

With lots of greens to pick in the garden we are having a side dish of collard greens weekly at the dinner table.  I love these collards so much I’ve been making a big batch to take to work to eat for lunch a few times a week (partnered with some cheese/crackers because I love a mismatched lunch).

I am not a expert pie maker.  I cannot make perfect crust.    I am not Marie Callender!  What my pot pie lacks in beautiful crust makes up for in taste, and that’s how I feel about this Cauliflower Pot Pie!

I know this Cauliflower Pot Pie is not the most beautiful pot pie you’ve ever seen.  The crust is uneven, it has caved in spots, heck it even has a crack down the middle of the pie.  But goodness gracious, this pot pie is DELICIOUS!  AND EVERY DELICIOUS POT PIE DESERVES A DAY TO SHINE!

Haluski is a dish that my mother would make as a kid very often. It’s no surprise that her mother came from Poland so this was a hand me down recipe.  The dish is essentially a easy noodles and cabbage dish that is made in about 15 minutes.  If you calculate the ingredients, you’ll see that it’s about a $5 meal and can serve 6-8 people.  This makes a very bargain friendly dish that is delicious too. Don’t you love that? Haluski is a popular Eastern European dish, especially in Poland, that is quick and easy to make. Here’s how much we grew in the garden last year!

Each year we track our garden yield by weighing the vegetable after we pick them.  Here’s 2014, 2015, 2016… and finally, 2017!

Let’s talk totals! In 2017 we grew a total of (drum roll please) 363 pounds and 6 ounces of vegetables!  It was quite a drop from our 1147 pound harvest in 2016, but here’s why:

-We didn’t grow any pumpkins. In 2016 we grew almost 400 pounds of pumpkins!
-We didn’t grow any watermelon.
-Oh yeah, we had a baby in July!  Talk about a change in the growing season!

4 HOUR JUICY Slow Cooker Meal for a 6 Pound Whole Chicken!  This easy recipe makes the entire meal in the crock pot, including potatoes and other vegetables!  You’ll love how simple it is to cook a HEALTHY Rotisserie Chicken meal!  This is one of my favorite Crockpot dinners!

I’ve been really big on Slow Cooker recipes lately.  Just last week I shared with you my Slow Cooker Bread, and this week I’m sharing the main course to go with it – a whole chicken!   This chicken is juicy, full of flavor and is so easy to make!  
4 HOUR JUICY Slow Cooker Meal for a 6 Pound Whole Chicken!  This easy recipe makes the entire meal in the crock pot, including potatoes and other vegetables!  You'll love how simple it is to cook a HEALTHY Rotisserie Chicken meal!  This is one of my favorite crockpot dinners!

This recipe makes a 5-7 pound whole chicken in the slow cooker in about 4 hours on high.  Alternatively you could set it to 7 hours on low. 

 The key to making a juicy chicken in the slow cooker is that you want to give it some liquid to become moist, but you don’t want it to sit in the liquid.  The solution is that you cut up a bunch of vegetables so the chicken has a “bed” to be placed on, keeping it above the liquid for the majority of cooking time.

For the liquid I used chicken broth, to keep the flavor in the right pallet. You could however play around with it! Do you want a citrus zest? Add some orange juice. Apple juice will add some sweetness. Just remember your veggies are cooking in it as well.

What that also does is provide you a full meal, so you have your whole chicken and vegetables! I cut up potatoes, celery, carrots and onions to place in the bottom of the slow cooker.

It’s good to use thick, dense veggies so that they don’t get too soft and mushy sitting in the crockpot for hours. Thinking about a low-carb option? Use cauliflower instead of potatoes.

  • 2 pounds red potatoes – washed and cubed
  • 2 stalks celery
  • 1/2 cup green onion or yellow onion
  • ¾ cup Ranch Salad Dressing
  • 1/2 teaspoon chili powder
  • salt + pepper to taste

Instructions

  1. Bring pot of water to boil and add potatoes. Simmer the potatoes for 20 minutes.
  2. Drain potatoes.
  3. Put all ingredients in bowl and gently toss.
  4. Serve immediately or if preferred chilled, put in the refrigerator for 2 hours.

Let’s get the facts out of the way, this bread is made in your slow cooker crockpot on HIGH in 2 hours.   It’s a extremely simple recipe with basic ingredients that produces delicious, soft bread.   It takes about 40 minutes to prep, with 30 of those minutes dedicated to just letting your dough double in size. 

Here’s a 30 minute before and after. I like to leave my dough somewhere warm while rising.
