Chocolate Chow Mein Noodle Cookies

CHOCOLATE CHOW MEIN Noodle COOKIES are my family’s favorite! This easy no bake recipe only requires 4 ingredients! They’re simple to make and you only need chocolate chips, peanut butter chips, chow mein noodles and peanuts! I love adding a dash of salt on top too! They are so much to make with kids! Make them for parties, dessert, bake sales or a alternative to Christmas cookies!

These Chocolate Chow Mein Noodle Cookies are delicious and completely addicting!  Even better is that they’re made with only 4 simple ingredients, they don’t require baking and are kid friendly to make!    I made these for a friends party, but they were so good that Matthew and I gobbled them up at home causing me to make a second batch!

Even though these are called “cookies” they’re really not cookies at all, but I find them to be a delicious cookie substitute for holiday gifts, bake sales, and even leaving out for Santa (wink wink).  They’re not made with flour or butter, but instead only require 4 simple ingredients – chocolate chips, peanut butter chips, peanuts and chow mein noodles.  Yup, chow mein noodles!  You can use the skinny ones that come in the can or you can use the wide ones that are usually sold in a bag, I prefer the wide ones.

Farm to Bowl Dinner With Toes The Cat

If you know Toes you know she loves 2 things the most, food and snuggles.  So as you can imagine, a day filled with delicious food and cuddling would make Toes one happy girl!  If you follow this blog you know I’m a big fan of farm to table living and recipes, so when it comes to my cats I’m a big believer in farm to bowl too.  Ok, farm to bowl to table because sometimes Toes is fancy and eats at the table! Don’t tell her Dad though, it’s our secret!

With the baby here, we’re still juggling how to spend time with our 5 furry babies and 1 human baby.  As I mentioned earlier in a post, Enceladus is 100% a cat lady already.  She LOVES the cats and the cats LOVE her.   Since Toes and Goblin are the youngest, I imagine one of them is going to become her best friend in the years to come which is really exciting.  I think Toes is going to especially become her best friend when Enceladus starts “accidentally” dropping food from her high chair.  Speaking of food, here Toesey Woesey!

As soon as Toes hears the pantry door open that holds her food, she comes running!  One crack of the food can and Toes is circling my feet, meowing, begging for food! It always cracks me up because those 10 seconds it takes for me to bend down and put the food in the bowl seem like eternity to her!

Enceladus’s 3 Month Old Schedule + Achievements

A complete schedule of a 3 month old baby, including sleeping and eating!  This also lists achievements and other things we saw her do for the first time!  This post is in partnership with buybuy BABY.

Hey everybody, I hope your week is off to a good start!
A few weeks ago, I thought I would document the day of our 3 month old.   Before I had a baby, I thought I would be able to work during the day, or at least wipe my mouth filled with chocolate when the UPS man knocked at my door.  How naive I was!   

While preparing for a baby, or even now, I enjoyed reading other parent schedules.  I don’t think we should ever compare our schedule to another family’s as everyone is different, but I always found it helpful and fun to prepare myself for the next few months!

A complete schedule of a 3 month old baby, including sleeping and eating!  This also lists achievements and other things we saw her do for the first time!  (Enceladus, with her favorite toy (“Butter”) at 3 months old.)

MINI Sweet Potato Casseroles With Brown Sugar Pecan Topping

The BEST BAKED MINI Sweet Potato Casseroles with BROWN SUGAR Pecan Topping! This easy Southern recipe uses BAKED sweet potatoes to really bring out the flavor! There is a delicious brown sugar pecan crumble on top! I love baking these as mini casseroles as it’s a beautiful presentation at Thanksgiving dinner and everyone gets to eat their own! You can even make these ahead of time and heat up!

Next year we are growing sweet potatoes in the garden because this year I finally fell in love with them in the kitchen! You might have seen my creamy Sweet Potato soup last week (if you missed it, it’s here), well now I’m back with a Sweet Potato Casserole in Mini individual size!

These MINI Sweet Potato Casseroles With Brown Sugar Pecan Topping are so cute and so delicious! Everyone gets to eat their own mini casserole so they’re going to be a hit at the next holiday dinner!

Let’s talk sweet potatoes first, ok?  The way to bring out the flavor of sweet potatoes isn’t by boiling them, but by baking them!  Trust me on this!  If you did a taste test with a boiled and baked sweet potato, and then mashed it, you would absolutely agree  that the baked sweet potato is SO much better!  So for this recipe, we’re going to bake the sweet potatoes first before mashing for the casserole.  Yes, I know, it’s one additional step, but it’s WORTH IT!  I would never make you do more work if the pay off wasn’t big!

To bake the sweet potatoes preheat the oven to 375 degrees. Grab your sweet potatoes and pierce them with a fork a few times (fun holiday stress activity!). Place the sweet potatoes on a cookie sheet and bake for 90 minutes. Remove the potatoes from the oven. Hold the sweet potatoes with a potholder (they’re hot!) and the potato will pop right out of it’s skin. Discard the skin. Use a potato masher or hand mixer to mash the sweet potatoes.   It’s that easy!  Once your sweet potatoes are baked then we’re ready to begin making these mini casseroles!  If you’re worried about the extra 90 minutes of baking time, you could bake these sweet potatoes a day in advance so they’re all ready for you!

Slow Cooker Salisbury Steak With Cream of Mushroom Soup

It’s made with dry onion soup mix and cream of mushroom soup to make a comforting gravy your entire family is going to love! I always serve on egg noodles or with mashed potatoes! This is one of my favorites simple weeknight meals!

I hope you had a great weekend!  This past Sunday we cheered the runners on outside our apartment during the NYC Marathon! The weather was chilly and the raindrops were falling so I knew we were going to have a comforting slow cooker Sunday night meal!  I made this Slow Cooker Salisbury Steak with Cream of Mushroom Soup and it was the perfect dish to say goodbye to the weekend with. This Slow Cooker meal is creamy, comforting, hearty and just warms the heart in the way that home cooked meals should.

Salisbury Steak has been one of my favorites since I was a child but I wasn’t in the mood to do a baked version, instead I wanted something to throw in the Slow Cooker and make dinner easy.   I love creamy slow cooker meals, like Meatball Potato Casserole, and Sweet Potato and Ham Soup, so I gave this a extra creamy gravy made with cream of mushroom soup! 

The actual Salisbury Steak patties are easy to make.  Throw ground beef, dry onion soup mix,  bread crumbs and milk in a bowl and mix around with your hands, and then form the patties.  A helpful hint: use lean, less fat ground beef.   If you don’t use a lean beef, it’s going to make your creamy gravy more on the greasy side.  This can totally be made with non lean beef, but I think it overall tastes better with a 90/10 blend.   After you shape your steak patties then roll around in a dusting of flour.
