We Won The Cauliflower Battle!

After years of failing at growing cauliflower we switched to a new variety and grew over 20 pounds of cauliflower! Learn how we grow cauliflower from seeds that can withstand Summer heat and result in a big cauliflower harvest!

I’m not sure if you remember but a few months ago when planting our seeds I talked about how Matthew didn’t want to grow cauliflower this year because he thought it was a lost cause.  For so many years we used up space in the garden to get lackluster cauliflower results (if any).  Cauliflower has always been one of the harder vegetables for us to grow, and it’s been difficult for us to get anything but a few florets of harvest.   Because I couldn’t give up on the cauliflower, I talked Matthew into trying one more year.  Instead of trying our usual variety, I researched the different options and decided we were going to grow Snow Crown seeds to see if it made any difference.   With hearts in my eyes and rainbows in the sky, it worked!  You guys, it worked so great!   In the last 2 weeks we’ve picked close to 20 pounds of cauliflower!

I’m so happy we pushed for one more year with the cauliflower and decided to try a new variety.  We went with Snow Crown because it was labeled as being able to be harvested in Summer or Fall so I figured it could take the heat.  Although Upstate is much cooler than NYC, it still does have days in the high 80’s (and sometimes 90’s) so it was important to find a type that could handle hot days.  When we used to grow on the roof in NYC the cauliflower would never last past the beginning of June, so it’s exciting to see it grow through July now!

Sugar Snap Pea and Cauliflower Casserole

CHEESY Sugar Snap Pea and Cauliflower Casserole! This loaded recipe is simple to make with fresh vegetables and cream of mushroom soup. I love serving this easy to make casserole as a chicken side dish or a vegetarian main dish. During the Summer I always use fresh cauliflower and sugar snap peas straight from the garden!

When the garden gives you 7 pounds of cauliflower and 8 pounds of sugar snap peas in one week, you make Sugar Snap Pea and Cauliflower Casserole!   And you add shredded cheddar cheese, because you should always add cheese on top!

This is usually how it goes during garden season.   July brought us a big harvest of cauliflower and sugar snap peas, where we picked 8 pounds of peas last week and I’ll probably be picking 10 more pounds this week.  Sugar snap peas are best fresh so I’m always excited to create recipes that use multiple cups of them (this recipe uses 5 cups of peas!).

Celebrating Xanadu’s 11th Birthday!

A few weeks ago Xanadu Pluto turned 11 years old.  Oh my, 11 years old already…?!   Is this what it feels like when suddenly your daughter asks to buy lip gloss on her 11th birthday?   Heart break.  I consider Xanadu my baby.  We adopted Xanadu when she was 3 months old in 2006.  At that time we were a 1 cat household (Essy was the only one) and we only lived in NYC for a year.  We had no experience with Siamese cats, but decided after a visit we were going to bring her into our home.  Matthew went and got her while I straightened up the house to await her arrival.   I had everything ready for her – new toys, a new bed, cat food and plenty of treats.  Why wouldn’t she fall in love with her new family?   When she arrived at our apartment, we took her to the bathroom for a transition period.  Essy was outside the door listening as this new cat meowed her way out of the travel carrier.  Have you ever heard a Siamese cat meow?  It sounds just like a baby, and it’s slightly terrifying when you hear it at first.    I can only imagine what Essy was thinking!

As Xanadu meowed after leaving the carrier, she quickly let her Siamese cat traits be known.  Within 5 minutes she was standing on 2 legs, clawing at the bath towels, wrapped in them, tearing them down.   Matthew and I looked at each other, both love in our eyes, realizing she was going to be a handful.

10 Minute Brussels Sprouts Quinoa Rice

10 MINUTE Brussels Sprouts Quinoa Rice dish!  This EASY clean eating recipe is made with Minute Rice and served with fresh Brussels Sprouts and cherry tomatoes! This wholesome meal is gluten free and vegetarian – make it for a work lunch or easy dinner!

Our First Family Walk

Time to go on our first family walk with Enceladus while wearing our lillebaby tokidoki Complete All Seasons carrier!  This post is in partnership with buybuy BABY.

This past weekend we decided to head out for our first family walk.  I’ve taken Enceladus on multiple walks by myself (I hope you’re watching my adventures on Instagram Stories by the way!) to the studio, grocery store and other random places when I feel like we need to get out!   She loves strolling around in her UPPAbaby Vista, and surprisingly handles bumps in the sidewalk like a pro without even opening her eyes!

I want to make it a mission to do one weekly thing as a family, so we headed out to show her how lucky she was to live in Brooklyn!  It just happened that it was also National Ice Cream Day, so we had to stop for ice cream too…..!  

Now only if she could remember her first walk with us, but she was passed out and snoring the entire time!

With the arrival of baby, I find myself lagging during the afternoon and forgetting to eat lunch.  With a newborn baby, there’s something always needing to be done from snuggles, feeding, diapers, cleaning, laundry and saying out loud “I love you so much but why won’t you stop crying? Baby Birth Story of Enceladus!

Hi everybody!  My oh my, do I have someone who wants to meet you all.  She’s my new BFF.    Won’t you all say hello to Enceladus?
Full Name: Enceladus Seven Reed Rader,  Born: 11:53PM on July 2,  Weight: 7 pounds, 4 oz,  Personality: Feisty and Silly

Baby Birth Story of Enceladus, born on July 2 2017 at New York-Presbyterian Lower Manhattan Hospital.

Everyone asks about her name, Enceladus, so I’ll save you the trouble of googling! 🙂  She’s named after a moon on Saturn.  You pronounce it En-Sell-Ah-Dus
Her middle name is Seven because she’s our 7th baby (we’ve had 6 cats prior).  We really wanted to include our Meowza family in her name somehow since they’re so special to us.
She has 2 last names, Reed Rader, because it’s always made sense to us that Baby should have both names.

Birth Story of Enceladus, born on July 2 2017 at New York-Presbyterian Lower Manhattan Hospital.

At 5 days old she was already helping her Mom bake her first batch of cookies, one handed.  She lost a sock along the way, but don’t worry, it didn’t land in the cookie batter. She’s a natural.
