Well 2016 is almost over and it’s been a good year for gardening and growing vegetables. This year we started a new adventure that included building a garden in Upstate New York and then growing our hearts out.
Every year we keep a weight chart to track how many pounds of vegetables we grow. Every harvest weekend we visit the garden, lug pounds of vegetables home in the car and into the apartment and then weigh each vegetable. It’s a fun way to keep track of what vegetable grew good, or not so great and is a easy way to compare year to year.
Last year’s totals were: 458 pounds
This year’s totals were (drum roll please): 1147 lb 6 oz

I should have made more of these cookies because after taking some to work and keeping some at home, they were all gone pretty quick! This is a classic sugar cookie recipe, but we’re updating it by adding cream cheese which is going to make the cookies even more soft and delicious.
Cream Cheese Cookies!
Have you ever added cream cheese to your cookies before? If not, your cookie loving brain is going to love it! The cream cheese makes the cookies soft, moist and so good! If you’re looking for a new Christmas sugar cookie to try, you need to give this recipe a shot!
Because I love taking cookies to the next step, I mixed some powdered sugar and milk together to make a light vanilla glaze frosting to dip each cookie in. Finally, add holiday colored sprinkles or chopped up candy canes on top of each cookie and they’re ready to go! If you’re sharing these with others, make sure to keep a few for yourself because they won’t last!
This recipe makes 48 Cream Cheese Christmas Sugar Cookies, which I think will last you a few days during the holidays, with a few more to spare for Santa! If you want to be someone’s best friend, make a extra batch for them as a holiday gift. Trust me, everyone will love you for this!

For the cookies
Preheat oven to 375 degrees.
In a large bowl cream together the sugar, butter, cream cheese, egg and vanilla. Add salt, flour and baking powder and continue to mix until combined.
On a nonstick cookie sheet or silicone baking mats, add tablespoons of dough for each cookie. With the back of a spoon gently press down each cookie to slightly flatten.
Bake for 9-11 minutes.
Let cool before frosting.
For the frosting
Mix powdered sugar and milk together in bowl with a spoon.
Once cookies are cool, dip each one into the glaze. Add additional sprinkles or chopped up candy canes on top.
Makes 48 cookies. NOTE: If you are using cookie cutters, you must chill this dough overnight before rolling it out and baking it.

We all know the lady, that one who loves cats. She’s the one who shows you cat photos on her phone. She’s the one who tells you the cutest cat stories. Well, Christmas is almost here. Are the cookies baked? Is the tree decorated? Are the gifts wrapped? I have at least 1 of those done… the tree is decorated!
Sticking with our tradition we started last year, we bought a live Norway Spruce tree that we will be planting on the land in January to live next to his Brother. The tree is about 3 feet tall, but one day it might grow up to 100 feet! Can you imagine? Eventually I want the land to be a forest of trees with year plaques on them that we can walk through and tell stories of each holiday.

Cabbage Roll Casserole
Halupkie (aka Cabbage Rolls) were a big deal in my house. My Mother is Polish, so the recipe was passed down from generation to generation and ended up being one of my favorite meals she would make. Just like my Stuffed Pepper Casserole, this is another one of Mom’s famous recipes that my family loves!
What recipe can I make with cabbage?
She would add ground beef, rice and tomato sauce into a big piece of cabbage, roll it up, throw it in the fridge overnight to sit and then we would have them for Sunday dinner. Just the smell of cabbage takes me back to my childhood!
This Cabbage Roll Casserole is a direct spin off my Mother’s Halupkies recipe, but we’re making this in casserole form in the slow cooker. This is a big bowl of comfort food, just like my Slow Cooker Cabbage and Sausage!
