Well 2016 is almost over and it’s been a good year for gardening and growing vegetables. This year we started a new adventure that included building a garden in Upstate New York and then growing our hearts out.
Every year we keep a weight chart to track how many pounds of vegetables we grow. Every harvest weekend we visit the garden, lug pounds of vegetables home in the car and into the apartment and then weigh each vegetable. It’s a fun way to keep track of what vegetable grew good, or not so great and is a easy way to compare year to year.
Last year’s totals were: 458 pounds
This year’s totals were (drum roll please): 1147 lb 6 oz

I should have made more of these cookies because after taking some to work and keeping some at home, they were all gone pretty quick! This is a classic sugar cookie recipe, but we’re updating it by adding cream cheese which is going to make the cookies even more soft and delicious.

Because I love taking cookies to the next step, I mixed some powdered sugar and milk together to make a light vanilla glaze frosting to dip each cookie in. Finally, add holiday colored sprinkles or chopped up candy canes on top of each cookie and they’re ready to go! For the cookies
Preheat oven to 375 degrees.
In a large bowl cream together the sugar, butter, cream cheese, egg and vanilla. Add salt, flour and baking powder and continue to mix until combined.
On a nonstick cookie sheet or silicone baking mats, add tablespoons of dough for each cookie. With the back of a spoon gently press down each cookie to slightly flatten.
Bake for 9-11 minutes.
Let cool before frosting.
For the frosting
Mix powdered sugar and milk together in bowl with a spoon.
Once cookies are cool, dip each one into the glaze. Add additional sprinkles or chopped up candy canes on top.
Makes 48 cookies. NOTE: If you are using cookie cutters, you must chill this dough overnight before rolling it out and baking it.

Sticking with our tradition we started last year, we bought a live Norway Spruce tree that we will be planting on the land in January to live next to his Brother. The tree is about 3 feet tall, but one day it might grow up to 100 feet! Can you imagine? Slow Cooker Cabbage Roll Casserole
Cabbage Rolls were a big deal in my house. My Mother is Polish, so the recipe was passed down from generation to generation and ended up being one of my favorite meals she would make. Just like my Stuffed Pepper Casserole, this is another one of Mom’s famous recipes that my family loves! And even better is that this Slow Cooker Cabbage Roll Casserole only takes 4 hours in the Crockpot!

My Mom would add ground beef, rice and tomato sauce into a big piece of cabbage, roll it up, throw it in the fridge overnight to sit and then we would have them for Sunday dinner. Just the smell of cabbage takes me back to my childhood!
This Cabbage Roll Casserole is a direct spin off my Mother’s Halupkies recipe, but we’re making this in casserole form in the slow cooker instead.
Ingredients for Slow Cooker Cabbage Roll Casserole
1 pound raw ground beef
1 medium size head of cabbage chopped
1 medium sized green pepper chopped
1 small onion chopped
1 15 Oz can of diced or stewed tomatoes undrained
2 15 Oz cans of tomato sauce
1 teaspoon minced garlic
1 tablespoon Worcestershire sauce
1 tablespoon beef bouillon
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup uncooked white rice (not instant)
How to Make Slow Cooker Cabbage Rolls
All you need to do is add all the ingredients (except the white rice) in the slow cooker and cook on high for 1 hour. Add rice, stir and cook on high for 3 more hours.
Some people call this recipe “lazy cabbage rolls” but I just call it delicious! A nice warm bowl of cabbage roll casserole is the perfect dinner for a cold Winter night.
