Weak Arms and Cat Litter

This is a sponsored post written by me on behalf of Fresh Step Lightweight Extreme Litter. All opinions are 100% mine.

Hi y’all.

I have weak arms.  We’re talking totally weak arms.  We’re talking you might think I’m joking when I tell you it’s hard for me to drain a pot of noodles because the pot weighs so much.  I’m trying to get stronger though by lifting 2 pound weights.  Hey, we all have to start somewhere.

Weak arms + lots of cats sometimes equals a problem.  No, not picking the cats up, that’s easy, I just get magical powers when it comes to lifting up all my babies, even if they don’t like it. 🙂

How to Make Cantaloupe Chips

HEALTHY Cantaloupe Chips!  This easy recipe shows you how to make cantaloupe chips with a dehydrator! These naturally sweet chips are such a healthy snack! They’re one of the best Summer recipes!

We just bought a food dehydrator and it’s changing my life.  I can’t believe it took me this long to finally get my dehydrating game on!

With a new shiny dehydrator sitting in my kitchen, I have been asking myself the question of “Can *enter vegetable or fruit* be dehydrated?”.  You name it, I’ve probably thought of it.    Expect lots of dehydrating recipes and experiments in the next few weeks!  I can’t be stopped!

We had a few cantaloupes sitting out that we grew this Summer.  They’ve just been sitting there, begging for attention.  I couldn’t decide what to do with them, besides roasting them for my Roasted Cantaloupe Salad.   But then a thought came to myself, “Self, why don’t you dehydrate these babies?”.

Soybean Edamame Pesto Recipe

Soybean Edamame Pesto, a easy and delicious pesto recipe using soybeans! Use this as a appetizer dip or serve over pasta.

With all the soybeans we just picked I had one idea in mind – Soybean Edamame Pesto!

This pesto is delicious and tastes ultra fresh.  If you have a bunch of soybeans and don’t know what to do with them then it’s even better as this pesto freezes amazing for months so that means you can have some of your Summer harvest in Winter – one of my favorite ways to enjoy dinner!
Soybean Edamame Pesto, a easy and delicious pesto recipe using soybeans!

The main ingredients in this pesto are soybeans, almonds and garlic.  Many pesto recipes call for pine nuts but have you seen the price of them? Yikes! No thanks!  I stick with almonds that are just a few dollars and last me multiple batches of pesto.  The recipe only calls for 1/4 cup almonds so a $4 container of them can make quite a bunch of pesto!

Scrambled Eggs With Bacon

Easy scrambled eggs with bacon recipe!  This is a quick, comforting breakfast meal!

This is not scramble eggs with bacon on the side.

Oh no.

This is scramble eggs with bacon.  Together.

I hope I just scrambled your idea of breakfast.   So now let’s enjoy these together.

Scrambled Eggs With Bacon_6

Breakfast is one of my favorite meals of the day.  On fast days I grab a bowl of cereal. In the Winter time it’s usually toast, figs and tea.  But on extra special days and weekends, it’s a full on breakfast.  Sometimes it’s pancakes.  Sometimes it’s waffles.  Sometimes it’s a egg burrito.  But my favorite breakfast? Scrambled eggs.  As a kid my Mother would make me scrambled eggs while she enjoyed hers “dippy” style.  I would usually lather my scrambled eggs in ketchup.  Ok I’m lying, I still do this.

Soybean Harvest 2014

Soybean season was here… and now it’s gone.   But don’t worry there’s plenty of memories to stick around… like the pounds of soybeans in my freezer right now!

Soybeans are one of my favorite vegetables to grow but it’s also one of the most intense plants once it’s ready to harvest.   Growing, they are pretty easy to deal with.  Give them a little water and a hug every few days ago and the soybeans will grow so bushy and tall you won’t be able to see over them.  But once it’s time to pick these soybeans, then put a day (or more) aside!  Even though they are hard work to pick, they are totally worth it.  Soybeans are a favorite for pasta dishes, stews, stir-fries and currently we are obsessed with soybean pesto!  I’ll be posting that recipe later this week so keep a soybean loving eye out for it!

The soybeans were planted directly in their containers on June 14 and were harvested September 3.  We grow 12-16 plants per 27 gallon container.  You can plant quite a few  soybean plants in containers making them great for small spaces.  Each plant yields quite a number of soybeans too.   Once they’re big enough they tend to support each other and just grow into one another.  We put a few tall garden stakes into the container to try to help support them so they aren’t lying on the rooftop but for the most part they have a mind of their own and just want to grow big.

Who’s ready to pop a few soybeans right in their mouth?

Ok, me too! Grab a few soybeans and let’s get snacking!

Edamame Recipe

I love edamame. I went through this phase where every time I ordered sushi I also ordered a big bowl of edamame to go with it.   Then I got to thinking, why don’t we grow our own soybeans?  So we bought some seeds, planted them in our containers and BOOM! SOYBEANS!  Ok maybe it wasn’t that instant, but it was pretty much that easy. Since the beginning we’ve had lots of luck growing soybeans in containers.  This year they have grown to new heights and soon they will be all picked to be frozen and enjoyed for many happy edamame snacking sessions.

Edamame is easy to make at home and tastes just like the Japanese restaurant! All you need is soybeans and salt!

What’s edamame best with?  Just a little bit of salt.  That’s it.  Beans and salt.  Just a few ingredients makes one of the most delicious and healthy snacks you can eat.

Grazing for Snacks

When do you snack the worst?

For me it’s late afternoon or right before bed.  I’ve been known to bring a (big) handful of sour worms to bed with me.  But surprisingly, a handful of neon sour worms coated in sugar isn’t always the best choice (shocking, I know!).

I’ve been introduced to Graze and I’m hooked so I had to share them with you! Graze.com is a subscription snack box service founded 5 years ago by 7 friends in the UK who got sick of the same old snacks and wanted a better way to snack. Launched in the USA in January and already has over 200K American subscribers, called “grazers.”  I’ m a grazer!

How to Dry Oregano

Easy step by step instructions on how to dry oregano in 1 hour!  This DIY method dries it in the oven on a baking sheet.

It’s the last full week of August.  It doesn’t mean that Summer is over yet, or the gardening season is close to being over (does it really ever end?) but with a few months of growth your herb container might be getting out of hand.  Your basil is green and lush, your mint spreads the best smells around the garden and your oregano has a mind of it’s own.

Oregano grows.. and grows.. and grows.. and takes over.  Nothing can stop our oregano, including a harsh Winter.  Somehow it didn’t care about the amount of snow or freezing temperatures we had because once Spring hit it started growing again.

 Healthy Pasta Salad

A basket full of harvest is one of the proudest things I could carry.   Seeing the fresh colors of red, green, yellow and more topple over the basket makes me a happy girl.  Although we’re picking tomatoes, lettuce, radishes and melons as the Summer continues, we’re also getting ready for the Fall garden.

Some plants have already been transplanted while others wait their turn downstairs for containers to be cleared away on the roof.   There seems to never be a empty day in the garden, there’s always something that needs to be transitioned and moved in or out.
