A Purrfect Valentine For Your Cats

I love our cats so much that I like to make holidays extra special for them, especially Valentine’s  Day.   No, I won’t be sending them flowers or chocolate, but instead I’m going to give them what they really want – a tasty meal!   Toes loves food.  Her favorite hobby is licking gravy out of bowls, while batting her Maine Coon eyelashes at me. One loud purr (she’s really loud) from Toes on my lap, and it melts my heart and makes me spoil her with whatever she wants.  In the morning when my alarm clock goes off, she bursts through the bedroom door,  jumps onto the bed and hops on to my chest purring with morning excitement.  Is she excited to see her Mom? Or is she excited for breakfast?  Well, probably both, so I decided to combine them and give her a great Valentine’s Day breakfast made by her Mom this year.

I have been so excited to show you what we’ve been doing on the land!  Garden season ended a few months ago so that’s why there there hasn’t  been as many beautiful vegetables to show, but not to worry – we’re still growing! In February! In 10 degree temperature! In the snow!  Thanks to a greenhouse we’re all set up to grow our hearts out 365 days a year now!

When we had our rooftop garden going we had a small greenhouse that left us able to grow broccoli, bok choy and kale during the Winter months. Once we moved the garden Upstate I was already thinking about Winter growing during the first year.   Because we’re Upstate in the Catskill Mountains we had some things to seriously consider about the greenhouse.  1) It gets really cold.  2)  It gets really snowy.  3)  It gets really windy.    So I investigated greenhouses and figured the Palram HG56 Glory Greenhouse would be best for our situation.  We got it in the 12L x 8W ft size which is more than enough for what we need.     Due to the strong wind on our property, we installed the anchor kit to ensure the greenhouse wasn’t going anywhere. Inside the greenhouse we put down a ground cover and a few bags of drainage rocks on top.

If you’ve never dipped pretzels in ice cream before you’re missing out.    With just 4 ingredients (ice cream, milk, vanilla and pretzels) I had a Classic Vanilla Pretzel Milkshake quickly in my hands to enjoy!

This recipe is pretty much as easy as it gets. Throw everything in the blender and blend. Chocolate Birthday Black Bean Brownies

CHOCOLATE SPRINKLED BROWNIES made with BLACK BEANS and APPLESAUCE (healthy and low calorie!) that are easy to make!  These homemade chocolate brownies are super fudgy and moist! My family considers this the BEST brownies recipe!  The rainbow sprinkles on top make the brownies really pretty!

Right now I’m bean obsessed.  We’ve been cooking our dry black beans we grew in the garden during the Summer on cold nights and it’s been such a treat to enjoy those grown with love beans during the Winter.  I’ll be sharing a “How to Grow Black Beans” DIY soon because they’re so easy to grow and for me they’re one of the proudest garden accomplishments! I mean seriously how cool is it to grow your own beans?  So cool!  What else is cool? Using black beans to make chocolate brownies!  Did I mention that they’re extra delicious too?

You might associate black beans with tacos, salsas and salads pretty easily, but hopefully I’m able to persuade you to try baking with them because they make delicious desserts too.  In the past I’ve baked with black beans, kidney beans, red beans and have had yummy results so I wanted to use our black beans in a new super chocolaty brownie recipe.  This recipe calls for 1 15 oz can of black beans which you’ll add with the rest of your ingredients into a blender and pulse until smooth.  Because I wanted to use my homegrown dry beans, I did a overnight soak of my beans and then cooked them to get my 15 oz can worth. It’s a little extra work with dry beans, but it’s worth it if you want to give it a try.  If not, it’s totally ok, just make it easier for yourself by using canned beans!

2016 Vegetable Garden Totals in Pounds

Well 2016 is almost over and it’s been a good year for gardening and growing vegetables. This year we started a new adventure that included building a garden in Upstate New York and then growing our hearts out.

Every year we keep a weight chart to track how many pounds of vegetables we grow.    Every harvest weekend we visit the garden, lug pounds of vegetables home in the car and into the apartment and then weigh each vegetable.    It’s a fun way to keep track of what vegetable grew good, or not so great and is a easy way to compare year to year.  

Last year’s totals were: 458 pounds
This year’s totals were (drum roll please): 1147 lb 6 oz

OMG.  That’s over half a ton of vegetables!

Christmas Cream Cheese Sugar Cookies

These Christmas Sugar Cookies are so soft because they are made with cream cheese!  Dip each cookie into vanilla glaze and then top with festive sprinkles!  Recipe makes 48 cookies.

I should have made more of these cookies because after taking some to work and keeping some at home, they were all gone pretty quick!  This is a classic sugar cookie recipe, but we’re updating it by adding cream cheese which is going to make the cookies even more soft and delicious.   Because I love taking cookies to the next step, I mixed some powdered sugar and milk together to make a light vanilla glaze frosting to dip each cookie in. Finally, add holiday colored sprinkles or chopped up candy canes on top of each cookie and they’re ready to go!   If you’re sharing these with others, make sure to keep a few for yourself because they won’t last!

Sticking with our tradition we started last year, we bought a live Norway Spruce tree that we will be planting on the land in January to live next to his Brother. The tree is about 3 feet tall, but one day it might grow up to 100 feet! Can you imagine?  Eventually I want the land to be a forest of trees with year plaques on them that we can walk through and tell stories of each holiday.

Easy Slow Cooker Cabbage Roll Casserole

Halupkie (aka Cabbage Rolls) were a big deal in my house.  My Mother is Polish, so the recipe was passed down from generation to generation and ended up being one of my favorite meals she would make. She would add ground beef, rice and tomato sauce into a big piece of cabbage, roll it up, throw it in the fridge overnight to sit and then we would have them for Sunday dinner.  Just the smell of cabbage takes me back to my childhood!

The end of November brought cold weather and rainy days.  Because of the added layers to stay warm and the drizzle of rain it also brought a laziness to the dinner table.  I’ve been stuck in a dinner rut the last few weeks making easy and quick meals.  It usually gets to dinner time and we’re both too tired to really think of anything new so it’s something simple.    I am craving comfort food right now.  Hearty, creamy and cheesy is what I want.   To make a comforting Winter meal that is still simple and quick, I brought out my slow cooker and this Broccoli and Potato Cheese Soup was born.

Easy to make Shrimp, Tomato & Corn Salad that is ready in 15 minutes.  This is perfect to serve for dinner over pasta, as a appetizer or a light lunch.

This is my current go to lunch as well as go to appetizer for dinner parties if I don’t have time to bake some homemade bread.   I love this dish because it’s easy to make, filled with healthy vegetables and is delicious.  If I’m expecting a solo dinner, I can quarter this recipe and serve over some fettuccine noodles and it tastes like a gourmet meal.  I love the taste of lime and cilantro to garnish a dish, but if lime isn’t your thing you could substitute lemon juice instead.   You could also turn this into a full salad and throw it on top of some crunchy arugula – another one of my favorite lunches!  See, isn’t this salad awesome because it’s so flexible?  Hope you enjoy!
