I have a thing for donuts.  Ever since I was a little girl I loved heading to the local bakery to get a freshly made vanilla frosted donut with sprinkles.  On mornings when I was lucky, Mom would take us to Dunkin Donuts where I’d get a blueberry frosted donut.  Now, grown up (sorta) and living in NYC, I’m exposed to some of the best donuts in the world.  I have a confession. When I’m out by myself in a new neighborhood I will open Yelp and type in “donuts” to see if there’s any new spots nearby that I haven’t visited.    Just a few blocks away from me is the dangerously delicious DOUGH.  DOUGH is the best NYC donut spot.  No arguments allowed,  they are the best!  They are these pillowy soft donuts with the best icing.  They taste light but you know you just ate a whole meals worth of calories.  It’s worth it.    When I’m home and craving a sweet, or need to bring a dessert to a party, I usually grab my handy donut pan and get to work. Sometimes I’m feeling vanilla, other times chocolate, and maybe I’m feeling crazy so I add some tea or berries to make a new flavor.   If you don’t have a donut pan, buy one, it will be a life changing moment when you make donuts for the first time.

I love Fall! I love everything about it.
I love cozy sweaters, coats, boots, the crisp wind on my cheeks in the morning and especially the food.  Wrap me up in a blanket at night during dinner over a warm bowl of soup and I’m the happiest the girl in the world.  October is the time for my 2 favorite holidays, Halloween and my birthday. :D).   Halloween is the best time of the year with pumpkin picking, ghosts covering front lawns (or what New Yorkers consider lawns), spooky spiderwebs over doors and little kids trick or treating up their street of brownstones.  I wish our apartment building had trick or treaters!

Why else is Fall the best?  Apple picking!  We usually rent a car and head to Hurd’s Family Farm in New York during this time of the year. There we pick bags of apple, dance down the orchard and then celebrate afterwards with their delicious apple cider donuts and apple cider.  Yeah, there’s alot of apple love happening here!

With a bunch of apples, you can make so many goodies.  One of my favorite is homemade cinnamon sugar apple sauce, it’s the perfect snack at night, especially warmed up!  Did I mention sea salt apple chips too? I can’t get enough of them!  But for this apple recipe I wanted something sweet, something I can sink my teeth into with a nice cup of tea – that’s how Apple Spice Crumble Bars came to be!

These bars are delicious, they will quickly become a family and friend favorite.  Take them to a party and they will be gone within minutes.  The applesauce makes the bars moist without the oil.  The recipe uses a entire cup of applesauce making your kitchen smell like a apple wonderland.

Next grab your pumpkin pie spice along with baking soda and salt and stir until smooth.  I always make a little jar of pumpkin pie spice to last me all Fall.  It’s easy to make, I bet you have all the ingredients in your pantry.

Once everything is mixed then put in your sprayed 8×8 pan.

Add it on top of your mix and into the oven it goes for 35-40 minutes.

And when it comes out of the oven golly molly it’s Apple Spice Crumble Bars time.  You want to make sure the bars sit for about 10 minutes so it has time to settle.  We want to be able to run a knife down the sides easily to pull it away from the pan.

Apple Spice Crumble Bars

For the bars
  1. 1/4 cup butter - softened
  2. 2/3 cup sugar
  3. 1 egg
  4. 1/2 cup all purpose flour
  5. 1/2 cup whole wheat flour
  6. 1 cup applesauce
  7. 1 teaspoons pumpkin pie spice
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
For the crumble
  1. 2 tablespoon flour
  2. 1 tablespoon butter
  3. 1/2 teaspoon cinnamon
  4. 5 tablespoons brown sugar
For the bars
  1. Preheat oven to 350 degrees. Spray nonstick spray to 8x8 pan.
  2. In a bowl mix butter, sugar, egg and flours.
  3. Add in applesauce and continue stirring.
  4. Add pumpkine pie spice, baking soda and salt and stir until smooth.
  5. Spread mixture into your sprayed pan.
  6. After crumble is made, sprkinkle on top and bake 25-30 mnutes.
  7. Let cool for 10 minutes and then cut up into sized bars desired.
For the crumble
  1. Combine flour, cinnamon and brown sugar.
  2. Cut in your butter until it's crumbly.
  3. Add to the top of your pan of bars evenly.

This recipe brings together 2 of my favorite things: Halloween and pancakes!

Pancakes are one of my favorite breakfast meals on the weekend.  On the week I usually grab a protein bar and I’m out of the house but on the weekend it’s time for a slower pace.  This is one of my favorite pancake recipes because they come out extra fluffy and moist.  The mix is easy to make and you’ll have it on your pan ready to make pancakes in just a few minutes!

Spooky Halloween Frosted Pancakes

Ingredients
  1. 3 1/2 cups all-purpose flour
  2. 3 tablespoons baking powder
  3. 1/2 teaspoon salt
  4. 2 tablespoons white sugar
  5. 3 cups milk
  6. 1 tablespoon vanilla
  7. 2 eggs
  8. 1 stick of butter melted
  9. Black or Orange Icing
  10. Count Chocula, Boo Berry and Franken Berry Cereals
Instructions
  1. In a large bowl mix flour, baking powder, salt and sugar.
  2. Add milk, vanilla, eggs and butter and continue to stir.
  3. Heat a nonstick sprayed frying pan over medium high heat. Once heated scoop 1/4 cup batter for each pancake onto the center of your pan. Brown on both sides.
  4. Let pancakes cool for 1 minute and then ice the top of the pancake with your Halloween colored icing and cereal pieces.
  5. Enjoy!

Boy, it’s gotten chilly here quick.  Ever year I say the same thing about the weather changing so fast.  One week you’re dabbing the sweat away on your face and then suddenly you need gloves to keep your fingers from going numb in the garden.   The air conditioner is out of the window and we’ve moved on to bringing the big comforters out of Winter storage.  The cats are slowly walking towards their heated cabins (yes, they are heated houses and yes, they are spoiled), Xanadu is knocking on the blankets every night to get under and they’re wanting to snuggle on their mama all night long.

Luckily I love Fall and I love being chilly.  I love sweaters, coats, boots and the crisp feel of the chill on my face in the morning.  As the seasons change so does my choice of food.  Near the end of September I start to get a love of Earl Grey and English Breakfast teas back instead of my usual green tea in the Summer.   My breakfast of a protein bar slowly transitions into a pumpkin English muffin with a little bit of soy butter on top.    One breakfast I’ve been loving (and admit to having this for lunch too) is Double Chocolate Protein Oatmeal.   I haven’t said anything on the blog but I’m 4 months meat free.  I quit cold turkey (literally) eating meat a few months ago and haven’t had any regrets.  I look forward to veggie black bean burgers and love my vegetable soups to keep me warm.  With meat no longer in my diet I started to feel tired in the first few weeks.  I wasn’t taking any supplements and I wasn’t really looking at what I lacked, protein.  Suddenly I started putting protein powder in my foods, eating protein bars and drinking shakes and it was such a turnaround on how I felt.  

With this Double Chocolate Protein Oatmeal I get what I need: protein to keep energy up and chocolate.  Because who doesn’t need chocolate?  And who doesn’t need chocolate in the morning?  I look forward to waking up now!

This watermelon jam recipe is the perfect way to use up watermelon juice. All you need to do is simmer it and you’ll have jam soon enough to spread on a bagel.

This year we grew a bunch of watermelons in the garden.  If you’re looking for a good container fruit to grow, watermelon is the direction you should go in.  On each plant we usually get 3-4 watermelons which quickly adds up when you have a few plants!   By the way did you know that watermelon is a fruit and a vegetable? It is a fruit because it grows from a seed. It’s a vegetable because it is harvested and cleared from the field like other vegetables and because it is a member of the same family as pumpkins. I had no idea!

With watermelon cut to enjoy in fruit leather (recipe coming soon) we are left with quite a bunch of watermelon juice.  I always freeze some juice to enjoy in smoothies throughout the Winter, but I wanted to do something with the watermelon juice now, so I made some watermelon jam.

This watermelon jam recipe is the perfect way to use up watermelon juice. All you need to do is simmer it and you'll have jam soon enough to spread on a bagel.

I love making homemade jam with blueberries so I decided this time to make a watermelon jam recipe. And because I think all jam tastes and smells better with a bit of cinnamon we’ll throw some of that in to make it extra special.  This recipe calls for 16 cups of watermelon juice (watermelon is 92% juice) but if you don’t have that much just scale down the recipe.

 Start with a big pot of your watermelon juice.

Bring it to a boil on the stove. Reduce heat to medium high.

And then continue to lightly boil for the next 2-3 hours.  You will see the watermelon start to break down and thicken to a dark jam color.  This is mine after 3 hours.

I’ll let the jam sit for a few minutes to thicken up completely and then I’ll quickly get it in mason jars,  You can see how thick the jam got here.

Watermelon Jam

Ingredients
  1. 16 cups watermelon juice (seeds out)
  2. 1 cup sugar
  3. 1 tablespoon lemon juice
  4. 2 tablespoons cinnamon
Instructions
  1. Mix all ingredients in large pot. Bring to a boil.
  2. Reduce heat to medium high. Keep a eye on this so it doesn't boil over. Skim foam as it rises. Check and stir every 15 minutes.
  3. Continue to boil for 2-3 hours (mine took 3 hours). Depending if you reduce the recipe yours might done faster, so keep checking to make sure it doesn't burn.
  4. Let sit for 5 minutes. Immediately place in mason jar. The jam hardens quickly so if you let it sit for longer it will be tough getting it out of the pot.
  5. Place in refrigerator and enjoy!

How to Freeze Half & Half Milk and Save Money!

Do you have Half & Half milk close to the expiration date but don’t want it go bad because of how expensive it was? Don’t worry, you can freeze it!

You know the situation. You buy Half & Half milk because you are craving homemade ice cream.  You only need a cup but the store only has a quart of it.  Even worse, it’s $5.79.  So you ponder “Should I just buy a carton of ice cream already made?” or “Should I suck up the price and make my own?”.  You decide to go against the grain and make your own.  You take it home and make your ice cream.  You’re feeling good about yourself and keep telling yourself you’re going to use the rest of the Half & Half for something else and you won’t let that money go to waste.  Then you open the refrigerator again and you see that Half & Half staring back at you for the 90th time.  You know the expiration date is coming up in 4 days.  You panic. You let the Half & Half down. It’s going to go waste. You wasted money!  Ahhhh, the agony of defeat!

But now you won’t ever let that happen because I’m here to tell you how easy it is to freeze Half & Half milk.   All you do is measure it out into freezer bags (I usually do 1 cup per bag because recipes call for that) and then freeze them.  When you need that Half & Half for a recipe, defrost it and you have your milk.  You’ll never have to throw away money again!

 This delicious homemade Chocolate Chip Carrot Bread is easy to make and uses 6 carrots. It’s great for leftover carrots and a sneaky way to get vegetables into a dessert!

There’s something magical about a warm piece of homemade carrot bread, isn’t there?  Maybe it’s the love that goes into making it.  Maybe it’s the smell of cinnamon, nutmeg and clove that fills your kitchen.  Maybe it’s the feeling of Fall being around the corner.  Or maybe it’s just the great feeling of knowing there’s a bunch of vegetables in this bread and that makes it healthy, right?

This bread is delicious and really hits that Autumn dreaming spot.  I can imagine this would be a Fall or Winter favorite on those chilly days where you’ll curl up with a blanket, book and a hot cup of tea.  This can be a delicious breakfast or a dessert and it would be a perfect hit at holiday dinners, potlucks and friendly get togethers.

Directions:
Place graham cracker on microwave safe plate.
Add chocolate and marshmallow on top.
Microwave for 5-8 seconds.
Add creative additions now.  
Put graham cracker on top and smoosh together to make the S’more.

Now start to build your own.  My favorite is double the chocolate with a bit of spice. I add in a handful of chocolate chips and then chopped jalapenos.  If you’ve ever had a chocolate bar with peppers baked in, then you’re going to love this!

These Oreo Chocolate Pudding Peanut Butter Popsicles will bring all the boys to the yard.

Ok, not just boys. Girls, children, cats, dogs, gnomes.  Practically everyone.    Once you make a batch of these, they will be gone right away and then your family will be requesting a new batch.  So you’ll make another  and they’ll be gone right now.  And then you have to have a popsicle intervention because these are that good and addicting.

Baked BROWN SUGAR APPLES are DELICIOUS! This easy recipe bakes the apples in the oven stuffed with a cinnamon sugar butter mixture! The taste and smell of these Baked Apples is amazing! It’s the perfect healthy apple recipe year round, but I especially love it during apple picking season!

Have you heard of it before?  Oh, no?  That’s probably because I just made it up.

Goodness, I love apples.  My favorite is Fuji, I say no Fuji apple left behind.  But sometimes I’ll be in the apple aisle (usually where I hang out), touching all the apples, oohing and awwing at some new varieties, googling what each one taste likes (I’m in the aisle a long time) and I end up with a variety of apples in my cart.  

Oh goodness gracious, these are delicious.   It’s like eating warm apples in a pie without the crust.  The apples are covered in a brown sugar butter glaze and they are just the key to my apple loving heart.  Serve with some whipped cream or ice cream on top and you have your new favorite dessert!  If you have leftovers, I will warm them up in the morning, chop them into bite size pieces and throw on top of my oatmeal.  MMMMM.

Chocolate Lovers Banana Mug Cake that only takes 2 minutes in the microwave to make.  You won’t believe how fudgy this cake is!

Mug cakes are great because they are fast and small serving (either single or double).  This recipe makes 2 so I will share or I make it for breakfast one morning and have it for the next morning as well.   If you’re saving the second cake, make sure to heat it up in the microwave for about 10-15 seconds before eating. It’s going to get all ooey gooey chocolaty in the middle and you’re going to fall in love.  Believe me.    On lazy mornings I will eat it directly out of the mug, bu sometimes I like to get all fancy and push it out of the mug onto a plate.  This is also great because if you’re having guests over you can very quickly make up a few cakes and throw them on a plate.  Pour some chocolate on top (I used white chocolate) and everyone will ooooh and ahhhh them while thinking you were baking all morning.

Cocoa Banana Mug Cake

Ingredients
  1. 1 overripe banana
  2. ¼ cup peanut butter
  3. 1 large egg
  4. 2 teaspoons sugar
  5. 3 tablespoons unsweetened cocoa powder
  6. 1/4 cup chocolate chips
Instructions
  1. Mash the banana in a large mug with a fork. Add the peanut butter and egg and mix thoroughly. Stir in the sugar and cocoa and beat until smooth. Fold in the chocolate chips. Divide the better between two mugs. Microwave (on HIGH) separately for 1.5 to 2.5 minutes each until risen and firm.
  2. Eat out of bowl or gently pull out of mug to present on plate.
Notes
  1. You can add chopped nuts or dried fruit along with the chocolate chips if you'd like.
  2. For a wow factor, pop your cakes out of the mug and serve on a plate. Melt some chocolate and drizzle on top of the cakes.

Green tea is totally my favorite cup of the moment. I go in between green jasmine and jasmine pearl because it’s so hard to pick a favorite.  My tea preference changes on the weather, so with Spring visibly right around the corner (hopefully) my morning cup has changed from dark to a light green tea.  In the Spring I crave freshness, seeing the markets slowly have more fruits gets me excited.  I’ve been buying raspberries and watermelon to get ready for our own garden season (coming soon).

I used the matcha green tea powder to make a super smooth frosting that is perfect for spreading on a donut or a cupcake.  For these, I threw the frosting in a piping bag and put on top of vanilla with a touch of peanut butter donuts.  These were a big ol hit and gone within minutes.

The frosting not only looks pretty but it tastes amazing too.  Wish just 2 teaspoons of green tea matcha powder, it transforms the frosting to give it that green tea taste.  Even if you aren’t serving these to tea lovers, I can be pretty sure they’ll be none left at your party!   I also love how pastel this frosting turned out, doesn’t it scream Spring?

The donuts are moist and “cakey”.  They are half cake, half donuts, 100% delicious.  I love filling my donut pan up pretty full to just have the tops flat instead of the visible hole.    So if you’re ready to start Spring on the sweet side, throw on your prettiest dress and make these Vanilla PB Donuts with Matcha Green Tea Frosting!

Vanilla Matcha Green Tea Frosting Donuts

Donuts
  1. 2 cups all-purpose flour
  2. 1/2 cup white sugar
  3. 1 teaspoon salt
  4. 1 tablespoon baking powder
  5. 1/4 teaspoon nutmeg
  6. 2 tablespoons melted butter
  7. 1/2 cup milk
  8. 2 eggs, beaten
  9. 1 teaspoon vanilla
  10. 2 tablespoons creamy peanut butter
Matcha Green Tea Frosting
  1. 6 tablespoons butter, softened
  2. 1 1/4 cup powdered confectioners sugar
  3. 1 tablespoon milk
  4. 2 teaspoons matcha green tea powder
Instructions
  1. Preheat oven to 400 degrees.
  2. Lightly grease your donut plan.
  3. In a large bowl mix your flour, sugar, salt, baking powder and nutmeg together. Beat in butter, milk, eggs, vanilla and peanut butter
  4. Fill each donut cup 3/4 full. Bake for 8-9 minutes or until toothpick comes out clean. Allow to cool for 10 minutes before removing them from pan.
For frosting
  1. Beat together butter and sugar. Add milk and green tea powder.
  2. Frosting only needs to be mixed for a few seconds.
  3. Frost donuts with knife or piping bag.
Notes
  1. Makes 8-10 donuts.

PHIN & PHEBES Ice Cream Love (aka your new love affair)

Let me introduce you to PHIN & PHEBES Ice Cream,  better known as your future bff.

I first learned about this new ice cream at NYU’s Women’s Entrepreneur Festival.  We were ready to sit down to hear a investor panel talk and suddenly one of the girls at my table asked me if I tried the ice cream.  What, there’s ice cream?  Turns out I got in the line for “cookies only”, not “cookies and ice cream”.  So I jumped back up, ran to the ice cream line and got 2 nice scoops of creamy ice cream.  Then my ice cream loving heart was changed forever.

The next day I contacted PHIN & PHEBES to tell them they were making the best ice cream I ever tasted in my life.    Sometimes people can exaggerate when they say “This is the best (insert food) I ever tasted!” but I’m being 100% honest here that this is “da bomb” (do they still say that?).   The ice cream comes in multiple flavors, all of which I’m reviewing below.    

But first, a little about these awesome ice cream making ladies.   Phin & Phebes (pronounced “Fin” and “Feebes”) make ice cream in Brooklyn, New York. They make unique and interesting flavors with a little something for everyone. All of their flavors start out in their home kitchen and then they produce them on a larger scale to share with you!  Their philosophy about ice cream is simple: it should be fun for adults and kids, unpretentious, delicious (of course) and surprising in the best way possible. 

They made their  first batch of ice cream in February of 2010 when looking for a yummy wintertime hobby. They brainstormed a flavor that was inspired by the Ritz cracker sandwiches filled with marshmallow and peanut butter that they loved as kids. They cranked it up a notch though and covered these in caramel and chocolate and broke them up into a sweet cream base. The results? “Fluffnut” ice cream, their first flavor and also now the name of their dog.

If you’re like me then you might bake something to take with you on a trip.  I love making a batch of banana bread to eat for breakfast in the hotel, or sometimes it’s muffins.  This time though I decided to make Fruity Pebbles Chocolate Pudding Cookies for our upcoming trip to London! They are the perfect treat to reach for instead of grabbing a $5 chocolate in the mini bar (candy bar?).

Fruity Pebbles Chocolate Pudding Cookies. These cookies will melt in your mouth with ooey gooey chocolate bites and delicious Fruity Pebble cereal.

These cookies are awesome for many reasons:
Fruity Pebbles – who doesn’t love them?  They were a part of almost everyone’s childhood.  Plus they’re colorful and cute.
Pudding – again, who doesn’t love pudding?  This is going to make the cookies moist and creamy and oh so delicious!
Chocolate  – enough said.  When melted, even more creamy.
All formed into a gooey ooey cookie that you’ll fall in love with.

You’re going to need 1 cup Fruity Pebbles. This is added at the very end before you bake them.  Each bite of the cookie is going to have a little of Fruity Pebble.

Banana White Chocolate Chip Muffins

Delicious recipe for Banana Muffins made with white chocolate chips.  These are perfect for a hearty breakfast on the go!  Baking time is 20 minutes and makes 8 regular size muffins

These banana muffins are based around one of my most popular recipes on the blog, Mini Moist Crumble Banana Muffins.  I receive emails all the time from people proclaiming their love to these muffins and expressing how much their kids like them too!  The tweak I made to these is first I made them full size, so they’re hearty enough for breakfast.  I also added some high quality white chocolate chips to really give each bite a sweet balance with the bananas.

The banana taste is there, but it’s not super strong. I shared these with my banana bread loving friend and my not so much banana loving Matthew and both of them loved them so much they ate multiples.  They’re a winner across the board.

Moist Banana White Chocolate Chip Muffins
Print
Ingredients
  1. 1 cup flour
  2. 1/2 teaspoon baking soda
  3. 1/2 teaspoon baking powder
  4. 1/4 teaspoon salt
  5. 2 ripe bananas
  6. 1/4 cup + 2 tablespoons sugar
  7. 3 tablespoons melted butter
  8. 1 egg
  9. 1/2 cup white chocolate chips
  10. Optional: Melted white chocolate to drizzle on top when done
Instructions
  1. Preheat your oven to 350 degrees.
  2. Spray your muffin pan with nonstick spray.
  3. In a bowl mix flour, baking soda, baking powder and salt.
  4. In another bowl mix bananas, sugar, butter and egg until smooth.
  5. Add flour mixture into banana mixture and continue to mix so everything is combined.
  6. Add chocolate chips and stir with spoon to evenly distribute.
  7. Spoon this into the muffin pan, filling each muffin spot 3/4 full.
  8. Bake for 18-22 minutes or until the sides of your muffins are slightly brown.
Notes
  1. Makes 6-8 regular size muffins.

Chocolate Covered Cherry Cookies

CHOCOLATE covered CHERRY cookies! Easy recipe for Peanut Butter Blossom Cookies with a chocolate covered cherry in the middle of each one!  The cookies are so soft and chewy, that kids and adults will consider them the best!  These are great cookies for Valentines Day, Christmas and parties!

This is my Valentine to you! It comes in the shape of a cookie with a milk chocolate covered cherry on top.  When you bite into one (good luck only eating one) you will see hearts in your eyes!

I’ve fallen in love with Santa Barbara Chocolates in the past weeks and have been baking up a storm with their chocolate chips too, but today this is all about these beautiful cherries that are hand dipped in their custom milk chocolate and filled with cherry juice (from Morello cherries) .   When you bite into one and feel that cherry explode into your mouth (getting sexy here) you’ll understand why.  I can honestly say these are the best chocolate covered cherries I ever tasted and trust me, I’ve done alot of tasting research in my days.

These cookies are based on my favorite Peanut Butter Blossoms Recipe but with something a little extra (with a ton of flavor) – cherries!
The cookie base will melt in your mouth while the chocolate covered cherry has a little crunch when you bite into it.

Good for You Triple Chocolate Brownies

It wasn’t even a week ago I was showing you my red bean brownies (with sinful frosting), so are you surprised to see another brownie recipe up here?  Yeah, me neither.  

This week I’ve been feeling the January blues.  Maybe it’s the constant chill on my cheeks when outside, maybe it’s the cold knee caps when waiting for the bus, maybe it’s the Winter comfort food binge, maybe it’s a long list of jobs that need to be completed (but instead I put on my pajamas and watch Amazon Prime videos while feeling guilty for not completing the jobs).   So what do I do but make another batch of brownies?   But this time I add sprinkles, but because sprinkles automatically equals a party, right?

These Triple Chocolate Brownies are going to make for a better Winter time treat because there’s not that much guilt involved in them.  I’m using AllWhites Egg Whites which is 100% liquid egg whites with no yolk, fat-free, cholesterol-free and low-calorie egg product packed with essential nutrients and vitamins.   These can be found in your refrigerated dairy section and is a great source of protein to keep on hand (just this morning Matthew made a egg sandwich with them).  Instead of adding a bunch of oil I’m substituting most of it with applesauce.  This is going to cause those brownies to be fudgy and moist in the middle!
