Sugar Glazed Cucumber Bread

If you are looking for a delicious recipe to use your garden cucumbers in – this is it!  The Sugar Glazed Cucumber Bread is made with 1 cup grated cucumber, similar to zucchini bread.  A powdered sugar glaze is poured on top once baked! 

This weekend there were many surprises in the garden. The monster pumpkin plant just won’t stop growing.  There was a 5 pound bag of potatoes waiting for us under the soil.   Carrots were pulled.   Jalapeno peppers were picked.   Cucumbers were spotted.   These are all vegetables I was hoping for, but maybe in a few weeks…. but in typical garden fashion, they make their own rules and showed up to the party early.  I couldn’t have been more happy to see them!

I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed.    My Half Sour Pickle recipe is a favorite way to use cucumbers, but I was trying to figure out how to bake with them.  This Sugar Glazed Cucumber Bread was created because of that!  This bread is similar to Zucchini Bread, but instead is made with grated cucumbers.  After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special.    This is our new breakfast recipe that I’ll be making weekly until the cucumbers finish in the garden.

I don’t know what it is about July but I usually start thinking about holiday season around this time of the year.   Between me going to the library to check out a Christmas stories book, a friend telling me she’s already begun her shopping and my craving for cookies, I believe I have the “Christmas In July” fever!

My house is a Seltzer water house.  Besides tea, it’s all we drink.  We stock up so we’re never out because a dinner without seltzer water sure is sad!  With that said, I wanted to do a baking experiment with seltzer water because I knew it had the properties to make things extra fluffy.  And long and behold, I baked some of the best fudgy chocolate brownies I ever made with the help of seltzer!

A few things about this recipe before we dive in.  These brownies are extra fluffy. They’re extra fudgy.  They are a chocoholics dream.  Besides cocoa powder, I added in chocolate chips to make them double chocolate.  There’s no butter or milk in this recipe.  For liquid we’re using seltzer water and vegetable oil.  The brownies are fudgy and crumbly when they come out of the oven.   They’re a dream. Yes, seriously, these muffins are made with no electricity! No gas or electric oven! These are made in a solar stove, meaning they are being cooked with the help of that bright beautiful sun in the sky.  Solar cooking is pretty amazing and life changing.

Since it’s Summer time and you’ll be spending lots of time outside at picnics, camping, gardening etc I thought it would be a perfect time to introduce you to solar cooking.  As I mentioned above it’s life changing and I’m obsessed with it.  The first time you cook with just the sun it’s a stunner of a moment.   You’ll feel so proud and happy for doing the world good. You’ll also tell all your friends and family that the food you are serving them is solar cooked because it’s that cool.  Everyone will be amazed.

My solar stove of choice is the GoSun because it works great, is super light (ol “weak arms Pamela” can easily carry it) and looks pretty slick.  With us spending weekends up on the land with no electricity we rely on campfires and this solar stove to keep us fed.  I started using the GoSun a few weeks ago where I easily threw all the ingredients for a cheesy pepper egg omelette into the stove, came back 20 minutes later and breakfast was served.  I love this because time is valuable in the garden so I can just walk away from the solar stove and let it cook while I’m playing in the dirt.

Instant Coffee Chocolate Donuts With Vanilla Chocolate Chip Frosting

How to make Instant Coffee Chocolate Donuts with Vanilla Frosting! These donuts are delicious! Bonus how to recipe video included!

I have to tell you something.   I made these donts to take to work to share with everyone, but instead I kept them at home because I wanted to eat them all. And I did, I ate them all, and I didn’t regret it one bit. 

These donuts are the best of all worlds, moist chocolate donuts, vanilla frosting that sticks perfectly to the donuts, mini chocolate chips on top, and the sublte taste of coffee.  What gives the donuts a special taste is that I used 1 tablespoon of Folgers instant coffee granules in the batter.   Use 1-2 tablespoons depending on how “coffee” you want it to taste.  I love how simple Instant coffee is to use in recipes!

Sometimes you don’t want to make a dozen of cookies.  This delicious Single Serving Peanut Butter Chocolate Chip Cookie will save the day (and your waistline!).

Do you remember my Blueberry Sponge Cake recipe?  The goal was to create a small single serving cake so I don’t eat an entire cake.  Well I’m back again with single serving happiness, but this time cookies!  Why? Because cookies are the best!  And if there’s a dozen cookies in my kitchen I’m going to eat them all.

Sometimes you don't want to make a dozen of cookies. This delicious Single Serving Peanut Butter Chocolate Chip Cookie will save the day (and your waistline!).

These cookies include two of my favorite ingredients: peanut butter and chocolate.  It will take you less than two minutes to gather all the ingredients and then you’ll throw it into your oven for 10 minutes. This recipe is perfect for a toaster oven, as there’s no reason to heat up your big oven for just one cookie.  Wait until the cookie turns golden brown, then take it out of the oven and let it cool for a few minutes.  

Now the fun part – time to relax and eat a cookie!  Grab your cookie, some tea or milk, the current book you’re reading (or a episode of Downton Abbey) and enjoy your Single Serving Cookie!

Single Serving Peanut Butter Chocolate Chip Cookie

Ingredients
  1. 2 tablespoons flour
  2. 1 tablespoon sugar (white or brown sugar)
  3. 1/4 teaspoon baking powder
  4. 1 teaspoon peanut butter
  5. 1 teaspoon butter
  6. 2 teaspoons milk
  7. 1/4 teaspoon vanilla
  8. tablespoon chocolate chips
Instructions
  1. Preheat oven or toaster oven to 350 degrees.
  2. Mix flour, sugar, and baking powder in small bowl.
  3. Add peanut butter, butter, milk and vanilla and continue to stir until combined.
  4. Add chocolate chips and gently fold over in the dough.
  5. Spray small pan with baking spray. Form dough into one cookie and place on pan.
  6. Bake for 10-12 minutes.
  7. Let cool for 10 minutes.
  8. Enjoy!

Say goodbye to the food groups, now it’s just going to be cake.    There’s a easy way to solve this craving though – single serving cake!  Not only does this taste delicious, but it takes less than 2 minutes to make! 2 minutes for a delicious sugary soft piece of Blueberry Sponge Cake In A Mug? Yes, please!

Next time you have a sweet tooth and you want a piece of cake, but know having a full cake in your house isn’t a good move, reach for your mug and  make this single serving Blueberry Sponge Cake!

Grab all your dry ingredients and put it in a mug.

Now mix it up until it reaches a cake batter consistency.

Gently add your blueberries and mix around.  You can use fresh or frozen berries.  I always keep them in my freezer, they are great to add to your breakfast oatmeal too!

Now comes the easy baking party. Throw it in the microwave for 60-80 seconds. After 60 seconds, check in on it every 10 seconds until you see it has that bouncy cake quality.

These Mini Blueberry Crumble Muffins are moist, they’re tasty, and they have the most delicious crumble on top!

These mini muffins are outrageously good.  You’ll  make a dozen and they’ll be gone within a day!  They’re moist, they’re tasty, they have the most delicious crumble on top and they’re mini which means it totally feels ok to eat 6 of them. At least! 

I used to make a blueberry crumble in a 8×8 pan all the time years ago.  It was my go to “raise the roof” dessert.  Somehow the recipe got lost in my very disorganized recipe binder and it’s been a while since I’ve made it.  A few days ago I was wanting something sweet and remembered I had a bag of frozen blueberries in the freezer.  Then I remembered the blueberry crumble.  Instead of sticking with the old, I decided to to turn the recipe into mini muffins instead.   When Matthew got home he ate one and said “These taste just like the Blueberry Crumble you used to make!”.  Yes, they do!  They’re back!

Double Chocolate Chip Cookies.  These cookies are double chocolate with a dash of salt added on top.  They are addictive and you will eat them all! 

If you’ve been online, or watched TV you’ve probably seen the East Coast get hit by a major storm this weekend.  Since late last week I have been cheering on the snow telling everyone we were going to get snowed in, while people said we wouldn’t get much more than half a foot.  Weather reports varied.  NYC might get 2 inches or 20 inches.  Well looks like everyone was wrong.  NYC got a  1 day snowfall of 26.8 inches!  That’s .1 inch off the all time record that happened in 2006.   In Brooklyn we actually got close to 29 inches, so maybe we can say the record did get broken this weekend, but not officially.  Either way, on Saturday morning and throughout the day I was either walking the streets completely soaked and getting burned on the cheeks by the harsh wind, or watching with cats and a cup of tea in the windows.

hat’s probably going to be your reaction when you take a sip of this hot cocoa.  It’s double chocolate so you will need to add 15 minutes to the treadmill, but trust me, it’s worth it.

With the holidays right around the corner (exciting!) the weather is changing here. I grew up in Pennsylvania where Christmas was usually blistery and covered in snow.  In NYC, I can’t recall many white Christmas days in the last 10 years, but I can feel the weather changing.  This week I’m already whipping my gloves out of my bag 2 minutes into my walk to work.  By the time I make my way home later in the day there’s one thing I want when I walk in the door.  Ok, 2 things, because first I want cat hugs.  That’s hot chocolate.  I want one nice mug of hot chocolate that will warm my hands and belly up.

Whisk it over medium high heat until the sugars are dissolved.  Add your milk and yummy chocolate chips.

Once the chocolate is completely melted then pour into 2 mugs.  Sprinkle a little pinch of sea salt on top of each.

Double Chocolate Sea Salt Hot Cocoa

Ingredients
  1. 2 cups milk
  2. 4 tablespoons unsweetened cocoa powder
  3. 2 tablespoons brown sugar
  4. 2 tablespoons white sugar
  5. 6 tablespoons chocolate chips
  6. 2 pinches of sea salt
  7. marshmallows and sprinkles (optional, but awesome)
Instructions
  1. In small saucepan whisk together 1 cup milk, cocoa powder and sugars until they are dissolved over medium high heat.
  2. Add the remaining 1 cup milk and chocolate chips. Keep stirring until the chocolate chips are melted. Run a spoon on the bottom of the saucepan and see if any chocolate comes up. If it does, keep stirring until melted.
  3. Pour into 2 cups and sprinkle a nice sized pinch of sea salt on top of each one.
  4. Add marshmallows and sprinkles!

Vanilla Whoopie Pies With Marshmallow Cream Filling. These whoopie pies taste like cake with creamy marshmallow filling inside. These taste just like the whoopie pies you buy at the Amish market!

Whoopie pies were a big thing growing up.  We would head to the auction market every Sunday.  Sometimes it would be one nearby, sometimes we’d head to the Amish Market in Lancaster.  It didn’t matter where we went because whoopie pies would always end up in our basket. Now with a whoopie pie craving happening but no whoopie pie seen at my local grocer I headed to the kitchen.

I’ve made chocolate whoopie pies and pumpkin whoopie pies in the past but I never made vanilla ones.  Vanilla cake is one of my favorite treats so these pies have a cake like texture as they are very soft.  And the filling. AND THE FILLING.  The filling is incredible.  Marshmallow was always the filling for homemade whoopie pies at the market so I went classic with this recipe and kept the marshmallow cream that made me fall in love with them 25 years ago.   The cream filling is now a kitchen favorite and I probably ate 5 (or 10) spoonfuls of it while making these pies.  Because of the marshmallow, the filling is light and fluffy, perfect to go with the soft pies.

The title of this recipe was a combination of Matthew’s “scrumptious” description and my “DA BOMB” peanut butter frosting because people love it a lot.   Also the phrase DA BOMB isn’t used as much anymore and I think we should bring it back.  Occasionally, not all the time, let’s not get crazy.

Chocolate cookies aren’t appreciated enough in my opinion.  Usually when you hear chocolate in a cookie you automatically think of chocolate chip cookies, but how about straight up chocolate cookies?  Chocolate cookies are a thing of beauty when you bake them and they get that cracked texture on top.  Now throw on some frosting (that’s right) on top and you have your new favorite cookie.   The holiday season is all about comfort food and cookies are on the top of this list.  Who else receives cookies as gifts from their mother, aunt or sister?  It’s the best! This year I decided I’m going to make cookies and chocolates as gifts to family and friends.   There’s something real special about handing a nicely wrapped tin of cookies that still smell like they came straight from the oven to people you love.

I just love how crinkly these look on top when they come out of the oven.  When they are finished baking, they’ll be soft, but don’t worry, give them 15 minutes to cool and they’ll harden up.

Now you can totally just use this recipe to just make chocolate cookies.  Throw some powdered sugar on top and you’re done.

This peanut butter frosting has become a staple in my recipe book.  I’ve also learned how easy it is to make my own powdered sugar from making this frosting so often. All you do is take 1 cup granulated sugar and 1 teaspoon cornstarch, put in the blender and blend until it has a powdered sugar consistency.  It’s so easy!

Scrumptious Chocolate Cookies With DA BOMB Peanut Butter Frosting

For the cookies
  1. 1/2 cup softened butter
  2. 2 tablespoons milk
  3. 1/2 cup white sugar
  4. 1/2 cup brown sugar
  5. 1 egg
  6. 1 teaspoon vanilla extract
  7. 1 1/2 cups flour
  8. 1/2 cup unsweetened cocoa powder
  9. 1/4 teaspoon salt
  10. 1/2 teaspoon baking soda
For the frosting
  1. 1 cup powdered sugar (I make my own, instructions in Notes below)
  2. 1/4 cup peanut butter
  3. 2 tablespoon milk
Optional
  1. Chocolate Wafers
Instructions
  1. Preheat oven to 350 degrees. Spray cookie sheets with nonstick spray or use silicone baking sheets.
  2. In a large bowl mix butter, milk and sugars together with hand mixer. Add egg and vanilla and continue mixing.
  3. Stir in flour, cocoa powder, salt and baking soda and mix until you have a nice cookie dough consistency.
  4. Roll up tablespoons of cookie dough and drop onto cookie sheet. Use a spoon to lightly press down each cookie.
  5. Bake for 10-12 minutes. Cookies will be soft when they come out of the oven, but don't worry, they will harden up.
  6. Let cool for 15 minutes before removing from cookie sheet.
For the frosting
  1. Add powdered sugar, peanut butter and milk in a bowl and use a hand mixer until it forms into a nice frosting.
Cookie time
  1. Spread generous amount of frosting on each cookie.
  2. Add chocolate wafer on top of each cookie.
Notes
  1. Makes 24 cookies.
  2. To make your own powdered sugar, mix 1 cup granulated sugar with 1 teaspoon cornstarch in a blender until it is powdered.

I have a thing for donuts.  Ever since I was a little girl I loved heading to the local bakery to get a freshly made vanilla frosted donut with sprinkles.  On mornings when I was lucky, Mom would take us to Dunkin Donuts where I’d get a blueberry frosted donut.  Now, grown up (sorta) and living in NYC, I’m exposed to some of the best donuts in the world.  I have a confession. When I’m out by myself in a new neighborhood I will open Yelp and type in “donuts” to see if there’s any new spots nearby that I haven’t visited.    Just a few blocks away from me is the dangerously delicious DOUGH.  DOUGH is the best NYC donut spot.  No arguments allowed,  they are the best!  They are these pillowy soft donuts with the best icing.  They taste light but you know you just ate a whole meals worth of calories.  It’s worth it.    When I’m home and craving a sweet, or need to bring a dessert to a party, I usually grab my handy donut pan and get to work. Sometimes I’m feeling vanilla, other times chocolate, and maybe I’m feeling crazy so I add some tea or berries to make a new flavor.   If you don’t have a donut pan, buy one, it will be a life changing moment when you make donuts for the first time.

I love Fall! I love everything about it.
I love cozy sweaters, coats, boots, the crisp wind on my cheeks in the morning and especially the food.  Wrap me up in a blanket at night during dinner over a warm bowl of soup and I’m the happiest the girl in the world.  October is the time for my 2 favorite holidays, Halloween and my birthday. :D).   Halloween is the best time of the year with pumpkin picking, ghosts covering front lawns (or what New Yorkers consider lawns), spooky spiderwebs over doors and little kids trick or treating up their street of brownstones.  I wish our apartment building had trick or treaters!

Why else is Fall the best?  Apple picking!  We usually rent a car and head to Hurd’s Family Farm in New York during this time of the year. There we pick bags of apple, dance down the orchard and then celebrate afterwards with their delicious apple cider donuts and apple cider.  Yeah, there’s alot of apple love happening here!

With a bunch of apples, you can make so many goodies.  One of my favorite is homemade cinnamon sugar apple sauce, it’s the perfect snack at night, especially warmed up!  Did I mention sea salt apple chips too? I can’t get enough of them!  But for this apple recipe I wanted something sweet, something I can sink my teeth into with a nice cup of tea – that’s how Apple Spice Crumble Bars came to be!

These bars are delicious, they will quickly become a family and friend favorite.  Take them to a party and they will be gone within minutes.  The applesauce makes the bars moist without the oil.  The recipe uses a entire cup of applesauce making your kitchen smell like a apple wonderland.

Next grab your pumpkin pie spice along with baking soda and salt and stir until smooth.  I always make a little jar of pumpkin pie spice to last me all Fall.  It’s easy to make, I bet you have all the ingredients in your pantry.

Once everything is mixed then put in your sprayed 8×8 pan.

Add it on top of your mix and into the oven it goes for 35-40 minutes.

And when it comes out of the oven golly molly it’s Apple Spice Crumble Bars time.  You want to make sure the bars sit for about 10 minutes so it has time to settle.  We want to be able to run a knife down the sides easily to pull it away from the pan.

Apple Spice Crumble Bars

For the bars
  1. 1/4 cup butter - softened
  2. 2/3 cup sugar
  3. 1 egg
  4. 1/2 cup all purpose flour
  5. 1/2 cup whole wheat flour
  6. 1 cup applesauce
  7. 1 teaspoons pumpkin pie spice
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
For the crumble
  1. 2 tablespoon flour
  2. 1 tablespoon butter
  3. 1/2 teaspoon cinnamon
  4. 5 tablespoons brown sugar
For the bars
  1. Preheat oven to 350 degrees. Spray nonstick spray to 8x8 pan.
  2. In a bowl mix butter, sugar, egg and flours.
  3. Add in applesauce and continue stirring.
  4. Add pumpkine pie spice, baking soda and salt and stir until smooth.
  5. Spread mixture into your sprayed pan.
  6. After crumble is made, sprkinkle on top and bake 25-30 mnutes.
  7. Let cool for 10 minutes and then cut up into sized bars desired.
For the crumble
  1. Combine flour, cinnamon and brown sugar.
  2. Cut in your butter until it's crumbly.
  3. Add to the top of your pan of bars evenly.
