Frosted Cucumber Cookies

Chewy Frosted Cucumber Cookies are classic tasting cookies made with 1 cup grated cucumber to add some healthy nutrients!  It’s the perfect easy cookie recipe to make with kids to show them vegetables can be yummy! Cucumbers aren’t just for making pickles with (although they are sure are yummy).  You can also bake with cucumber, similar to how you’d use zucchini or pumpkin.  All you have to do is remove the seeds and grate the cucumber to get a similar texture.  I’ve been using cucumber in multiple baking recipes this Summer, like this Sugar Glazed Cucumber Bread, and we’ve been loving it!

For this recipe I was inspired by Oatmeal Sugar Cookies that I used to love as a kid.  This recipe uses no oatmeal, but it has the same chewy consistency, along with the sugar frosting.    The cucumber is hardly tasted in this recipe, but slightly visible with beautiful green specks decorating the cookie here or there.   After family and friends tell you they love the cookies then you can tell them they are made with cucumbers.  They will be shocked, trust me, I do it all the time!

Slow Cooker Wild Crab Applesauce

This is a easy applesauce recipe to make in your slow cooker with your wild crab apples!  You don’t need to peel the apples! Even better there’s no sugar in this as we use maple syrup instead!

I am taking a break from sugar right now and I have to tell you, it’s hard.   Everything has sugar in it!  Or if you go to the grocery store and read the labels, it seems like nearly everything does, even food that you wouldn’t have guessed.  English muffins? Sugar.  Those delicious “natural” raspberry preserves? So much sugar!  Multigrain bread? Sugar.  Spaghetti Sauce? Sugar (make your own!).   Granola and Crackers? Sugar.  It’s crazy and pretty depressing.

Sugar Glazed Cucumber Bread

If you are looking for a delicious recipe to use your garden cucumbers in – this is it!  The Sugar Glazed Cucumber Bread is made with 1 cup grated cucumber, similar to zucchini bread.  A powdered sugar glaze is poured on top once baked! 

This weekend there were many surprises in the garden. The monster pumpkin plant just won’t stop growing.  There was a 5 pound bag of potatoes waiting for us under the soil.   Carrots were pulled.   Jalapeno peppers were picked.   Cucumbers were spotted.   These are all vegetables I was hoping for, but maybe in a few weeks…. but in typical garden fashion, they make their own rules and showed up to the party early.  I couldn’t have been more happy to see them!

I saw a few baby cucumbers growing on the vine last weekend but somehow those babies transformed to multiple large cucumbers in just a few days, ready to be picked and enjoyed.    My Half Sour Pickle recipe is a favorite way to use cucumbers, but I was trying to figure out how to bake with them.  This Sugar Glazed Cucumber Bread was created because of that!  This bread is similar to Zucchini Bread, but instead is made with grated cucumbers.  After the bread cools, a delicious powdered sugar glaze is poured on top to make it really special.    This is our new breakfast recipe that I’ll be making weekly until the cucumbers finish in the garden.

Seltzer Water Chocolate Brownies

FUDGY Chocolate Brownies made with SELTZER water! Easy Homemade Double Chocolate Brownies recipe that uses seltzer water to make the brownies extra fluffy and moist! These gooey brownies are made from scratch and have a amazing chocolate frosting on top! My husband considers these the BEST brownies ever!

My house is a Seltzer water house.  Besides tea, it’s all we drink.  We stock up so we’re never out because a dinner without seltzer water sure is sad!  With that said, I wanted to do a baking experiment with seltzer water because I knew it had the properties to make things extra fluffy.  And long and behold, I baked some of the best fudgy chocolate brownies I ever made with the help of seltzer!

A few things about this recipe before we dive in.  These brownies are extra fluffy. They’re extra fudgy.  They are a chocoholics dream.  Besides cocoa powder, I added in chocolate chips to make them double chocolate.  There’s no butter or milk in this recipe.  For liquid we’re using seltzer water and vegetable oil.  The brownies are fudgy and crumbly when they come out of the oven.   They’re a dream. These Blueberry Cornbread Muffins are delicious! They’re moist, full of flavor and I’ve been dreaming about them ever since I finished the last one.
Yes, seriously, these muffins are made with no electricity! No gas or electric oven! These are made in a solar stove, meaning they are being cooked with the help of that bright beautiful sun in the sky.  Solar cooking is pretty amazing and life changing.

Since it’s Summer time and you’ll be spending lots of time outside at picnics, camping, gardening etc I thought it would be a perfect time to introduce you to solar cooking.  As I mentioned above it’s life changing and I’m obsessed with it.  The first time you cook with just the sun it’s a stunner of a moment.   You’ll feel so proud and happy for doing the world good. You’ll also tell all your friends and family that the food you are serving them is solar cooked because it’s that cool.  Everyone will be amazed.

My solar stove of choice is the GoSun because it works great, is super light (ol “weak arms Pamela” can easily carry it) and looks pretty slick.  With us spending weekends up on the land with no electricity we rely on campfires and this solar stove to keep us fed.  I started using the GoSun a few weeks ago where I easily threw all the ingredients for a cheesy pepper egg omelette into the stove, came back 20 minutes later and breakfast was served.  I love this because time is valuable in the garden so I can just walk away from the solar stove and let it cook while I’m playing in the dirt.

Instant Coffee Chocolate Donuts With Vanilla Chocolate Chip Frosting

How to make Instant Coffee Chocolate Donuts with Vanilla Frosting! These donuts are delicious! Bonus how to recipe video included!

I have to tell you something.   I made these donts to take to work to share with everyone, but instead I kept them at home because I wanted to eat them all. And I did, I ate them all, and I didn’t regret it one bit. 

These donuts are the best of all worlds, moist chocolate donuts, vanilla frosting that sticks perfectly to the donuts, mini chocolate chips on top, and the sublte taste of coffee.  What gives the donuts a special taste is that I used 1 tablespoon of Folgers instant coffee granules in the batter.   Use 1-2 tablespoons depending on how “coffee” you want it to taste.  I love how simple Instant coffee is to use in recipes!

Coconut Raisin Chocolate Chip Cookies

Single Serving Peanut Butter Chocolate Chip Cookie

Sometimes you don’t want to make a dozen of cookies.  This delicious Single Serving Peanut Butter Chocolate Chip Cookie will save the day (and your waistline!).

Do you remember my Blueberry Sponge Cake recipe?  The goal was to create a small single serving cake so I don’t eat an entire cake.  Well I’m back again with single serving happiness, but this time cookies!  Why? Because cookies are the best!  And if there’s a dozen cookies in my kitchen I’m going to eat them all.

Sometimes you don't want to make a dozen of cookies. This delicious Single Serving Peanut Butter Chocolate Chip Cookie will save the day (and your waistline!).

These cookies include two of my favorite ingredients: peanut butter and chocolate.  It will take you less than two minutes to gather all the ingredients and then you’ll throw it into your oven for 10 minutes. This recipe is perfect for a toaster oven, as there’s no reason to heat up your big oven for just one cookie.  Wait until the cookie turns golden brown, then take it out of the oven and let it cool for a few minutes.  

Now the fun part – time to relax and eat a cookie!  Grab your cookie, some tea or milk, the current book you’re reading (or a episode of Downton Abbey) and enjoy your Single Serving Cookie!

Single Serving Peanut Butter Chocolate Chip Cookie

Ingredients
  1. 2 tablespoons flour
  2. 1 tablespoon sugar (white or brown sugar)
  3. 1/4 teaspoon baking powder
  4. 1 teaspoon peanut butter
  5. 1 teaspoon butter
  6. 2 teaspoons milk
  7. 1/4 teaspoon vanilla
  8. tablespoon chocolate chips
Instructions
  1. Preheat oven or toaster oven to 350 degrees.
  2. Mix flour, sugar, and baking powder in small bowl.
  3. Add peanut butter, butter, milk and vanilla and continue to stir until combined.
  4. Add chocolate chips and gently fold over in the dough.
  5. Spray small pan with baking spray. Form dough into one cookie and place on pan.
  6. Bake for 10-12 minutes.
  7. Let cool for 10 minutes.
  8. Enjoy!

These Rainbow Crunch Chocolate Chip Granola Bars are delicious.  So delicious that after I made a batch earlier this week I’m already being asked to make another.   We eat these bars for quick breakfast on the go, but also afternoon snacks.  They’re a good snack that fills you up between lunch and dinner.   For my bars I used Berry Colossal Crunch cereal to add crunch, but also to add color.  The bright colored pieces of cereal give these granola bars a rainbow effect which is perfect for kids, but is also great for adults who have a inner kid in them and always picks the rainbow cereal at the kitchen table.

Do you love tea parties? Me too.  They just feel special.  You’re with your friends, you get to eat yummy pastries and vegetable dishes, you use floral China plates and cups and if you’re feeling bold you wear a fancy hat.   It just feels magical.

In this post I’m going to show you how to throw a tea brunch party!  We’ll cover food, decorations, tableware, music and more to make it the perfect party!

Tableware:   When your friends arrive you want to wow them!  Tableware is one of the keys to making a beautiful display.  You’ll need plates, cups, kettles, napkins, spoon and serving plates for larger dishes.  You’ll also need a dessert rack which when placed in the center of the table makes everyone smile! For my tea party, I went the traditional route of floral mix matched patterns.  And even though it might look like a expensive setup, it’s not!  Can you believe my plates that look like fancy China are actually paper plates? Amazing, I know!

I should warn you now, these blondies are dangerously good.  I can’t tell you how many blondies I ate because you would have this image of me being a blondie monster in your head and none of you think that.  Right?  Oh goodness, I’m glad I’m right (thanks for making me feel better).    I love a blondie that is ooey gooey, with some frosting on top.   And this frosting is gorgeous.  It’s my new go to frosting for… well, everything.  It sets perfect and has a shine to it.  I’ve always had a problem making a frosting that was thick enough to set without dripping off the sides of brownies, cakes and donuts.  But this one is a keeper.  Expect to see it often in the next few months in different forms because I have a bunch of donut recipes in my head that  need this frosting!

Say goodbye to the food groups, now it’s just going to be cake.    There’s a easy way to solve this craving though – single serving cake!  Not only does this taste delicious, but it takes less than 2 minutes to make! 2 minutes for a delicious sugary soft piece of Blueberry Mug Cake? Yes, please!

Next time you have a sweet tooth and you want a piece of cake, but know having a full cake in your house isn’t a good move, reach for your mug and  make this single serving Blueberry Sponge Cake!

Grab all your dry ingredients and put it in a mug.

Now add your wet ingredients.   This recipe uses ½ of a egg.  I would highly suggest you only half of the egg, not the entire thing, as it will be too “egg spongy”.

Now mix it up until it reaches a cake batter consistency.

Gently add your blueberries and mix around.  You can use fresh or frozen berries.  I always keep them in my freezer, they are great to add to your breakfast oatmeal too!

Now comes the easy baking party. Throw it in the microwave for 60-80 seconds. After 60 seconds, check in on it every 10 seconds until you see it has that bouncy cake quality.

Add some sugar on top – regular or powdered sugar.  You could also add some melted chocolate or frosting on top if you’d like.

Blueberry Sponge Cake in a Mug

Ingredients
  1. 1/4 cup all-purpose flour
  2. 1/8 teaspoon baking powder
  3. 1 pinch of salt
  4. 2 tablespoons sugar
  5. 1 tablespoon butter - softened
  6. 1/2 egg - beaten (or use 2 tablespoons apple sauce)
  7. 2 drops vanilla extract
  8. 2 tablespoons blueberries
Instructions
  1. Mix all ingredients together in a mug, being gentle not to crush the blueberries.
  2. Put in microwave for 60-80 seconds, checking to see when it becomes cake like.
  3. Pour a little sugar on top. Eat directly out of mug.
  4. Enjoy!
