Tri Color Pasta Salad

Easy recipe for the best tri color pasta salad!  This is the perfect Summer time salad that uses Italian dressing and fresh vegetables!

 The great thing about pasta salad is once you have the basics of pasta, salad dressing, herbs – the vegetables are really up to you.  There needs some type of tomatoes (I prefer halved grape tomatoes).   There needs to be celery chopped up.   What else?  Well that’s up to you.  You can add carrots.  You can add onions.  You can add broccoli.  You can add chopped up cauliflower.  You can can add black olives (yum!).  

Mushrooms are always a hit too, especially when they get marinated by the salad dressing.  Peas, corn, sundried tomatoes, chopped up kale – throw in whatever you  like.   To finish it all, you need some type of cheese to sprinkle all over, I like to add some shredded mozzarella.   How do you like your pasta salad?

You can make your pasta salad with a wide variety of noodles, so use what you like.  I’ve been making our pasta salad with tri color rotini pasta.  The extra color  kick of this pasta makes it special in my opinion.   Bow ties and penne pasta are great too!

Finally, pasta salad is a favorite because you can make it advance.  You want it chilled, so all the pasta and vegetables pick up that salad dressing taste.  Plus when it’s a hot summer day, a little chilled pasta salad will bring your spirits up.    You can make this a few hours in advance, or even the day before.  If I have leftovers, I will eat it for a few days after.   The celery stays crunchy, I love that.

No Soaking Required Slow Cooker Refried Beans

DELICOUS, NO SOAKING REQUIRED, Refried Beans! This easy homemade recipe cooks dry pinto beans in the slow cooker! We always make these healthy crockpot beans for authentic Mexican meals, I will never use canned beans again!  Make sure to add shredded cheddar cheese on top!

What you need is 2 frozen bananas, 1 tablespoon peanut butter and 1 teaspoon cocoa powder.  Then you throw it all in the food processor, give it a few pulses and you have soft serve.  I was shocked the first time I made it.  I’m talking real soft serve consistency here. I’m talking Ice Cream Truck texture. But without the cream and milk and sugar.

  1. Peel bananas and cut them into pieces. I cut each banana in 4 pieces.

Vegetarian Collard Greens

Easy Vegetarian Collard Greens recipe.  These greens are simmered in a brown sugar vegetable broth making them full of flavor!

I know this Cauliflower Pot Pie is not the most beautiful pot pie you’ve ever seen.  The crust is uneven, it has caved in spots, heck it even has a crack down the middle of the pie.  But goodness gracious, this pot pie is DELICIOUS!  AND EVERY DELICIOUS POT PIE DESERVES A DAY TO SHINE!

Haluski is a dish that my mother would make as a kid very often. It’s no surprise that her mother came from Poland so this was a hand me down recipe.  The dish is essentially a easy noodles and cabbage dish that is made in about 15 minutes.  If you calculate the ingredients, you’ll see that it’s about a $5 meal and can serve 6-8 people.  This makes a very bargain friendly dish that is delicious too. Don’t you love that? Haluski is a popular Eastern European dish, especially in Poland, that is quick and easy to make. I’ve been big on Slow Cooker recipes lately.  Last week I shared with you my Slow Cooker Bread, and this week I’m sharing the main course to go with it – a whole chicken!   This chicken is juicy, full of flavor and is so easy to make!  
4 HOUR JUICY Slow Cooker Meal for a 6 Pound Whole Chicken!  This easy recipe makes the entire meal in the crock pot, including potatoes and other vegetables!  You'll love how simple it is to cook a HEALTHY Rotisserie Chicken meal!  This is one of my favorite crockpot dinners!

This recipe makes a 5-7 pound whole chicken in the slow cooker in 4 hours on high.  Alternatively you could set it to 7 hours on low.   The key to making a juicy chicken in the slow cooker is that you want to give it some liquid to become moist, but you don’t want it to sit in the liquid.  The solution is that you cut up a bunch of vegetables so the chicken has a “bed” to be placed on, keeping it above the liquid for the majority of cooking time.

What that also does is provide you a full meal, so you have your whole chicken and vegetables! I cut up potatoes, celery, carrots and onions to place in the bottom of the slow cooker.

Ingredients

  • 2 pounds red potatoes – washed and cubed
  • 2 stalks celery
  • 1/2 cup green onion or yellow onion
  • ¾ cup Ranch Salad Dressing
  • 1/2 teaspoon chili powder
  • salt + pepper to taste

Instructions

  1. Bring pot of water to boil and add potatoes. Simmer the potatoes for 20 minutes.
  2. Drain potatoes.
  3. Put all ingredients in bowl and gently toss.
  4. Serve immediately or if preferred chilled, put in the refrigerator for 2 hours.

Let’s get the facts out of the way, this bread is made in your slow cooker crockpot on HIGH in 2 hours.   It’s a extremely simple recipe with basic ingredients that produces delicious, soft bread.   It takes about 40 minutes to prep, with 30 of those minutes dedicated to just letting your dough double in size. 

Here’s a 30 minute before and after. I like to leave my dough somewhere warm while rising.

What is the best thing to serve with soup? Oh, you got it right Sista.  It’s biscuits.  I like my biscuits flaky.  I like them warm. I like a little butter on top.  I love when they crumble apart.  I also love to give them a little dive into the soup bowl. When I was little my mom worked at KFC (that’s Kentucky Fried Chicken if you didn’t know).  I’m not going to lie, I love that place.  Their biscuits, their mashed potatoes – hello big bucket of goodness.

I’m pretty sure this is illegal to the KFC conduct codebook but my mom would sometimes sneak me a extra biscuit.  That’s when I knew I was a good girl that day.  Off I went with a smile and my 2 warm biscuits.  What I loved about theirs was how flaky yet soft their biscuits were. They didn’t taste “bready” or heavy. They were light but delicious.

KFC Biscuits Recipe

Whenever someone tries one of these biscuits, they’re like “This tastes like…” and I’m like, *hold a hand up*, “I know, enjoy”.   I love making these biscuits for soup or Sunday dinner (amazing with mashed potatoes and gravy).  There’s never a biscuit left on the dinner table.

Ingredients

  • 2 cups flour
  • 2 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup butter cold
  • 3/4 cup buttermilk

Instructions

  1. *It's very important that you use chilled butter for this, that will make sure the biscuits are flaky. You can refrigerate or freeze the butter, don't use room temperature or melted butter.*
  2. Preheat oven to 400 degrees.
  3. In a bowl mix flour, baking powder, baking soda, salt and sugar.
  4. Slowly start to cut butter in the flour mixture. You can either grate the butter or I use a knife to cut into small pieces. Keep cutting butter in until it's all gone. You want the mixture to look like crumbs.
  5. Mix in buttermilk.
  6. Knead dough in bowl for 30 seconds.
  7. Transfer to a greased baking sheet and roll out with your hands into a 7x7 piece. With a knife, cut 12 sections but don't don't cut all the way or separate them. This will make them easy to rip apart when done.
  8. Bake 15 minutes.
  9. When out of the oven, cut into sections and serve hot.
