Soft Dipping Bread Sticks

One of my fondest memories as a kid was Pizza Hut.  

Remember Pizza Hut’s BOOK IT program where they talked students into reading as a activity in return for free pizza?  If there’s one way to get kids into reading, it’s pizza. I’m totally serious.  When I found out the more reading I did meant more pizza, I turned into a library monster.  One of my life achievements is winning my city’s Winter Reading Contest.  I received a picture in the newspaper with my gold medal in one hand, a book in another.  Sounds pretty cool, right?  Well it was because it meant pizza!

My parents would sometimes surprise me while I was in middle school by picking me up when school was over and taking me to Pizza Hut for dinner on Fridays.  I was pretty pumped because this meant pizza and their bread sticks which I loved.  Also, total highlight but one time they picked me up and surprised me with a black velvet hat with a red plaid flower on it, just like my hero Blossom wore.

So back to bread sticks.  We are big pizza eaters in this house and always love a few bread sticks on the side to dip in additional marinara sauce.  Buying frozen bread sticks is quick, but one night I was craving home made bread sticks so I made these.   If you have any left over (good luck) they are equally delicious the following day.

Ingredients
  1. 1 cup lukewarm water
  2. 3/4 teaspoons salt
  3. 1 3/4 cup flour
  4. 1/2 tablespoon instant yeast
  5. 2 tablespoons Parmesan cheese
  6. 1 teaspoon garlic powder
  7. 1 teaspoon onion powder
  8. 1 teaspoon Italian seasoning
  9. 2 tablespoons olive oil, plus additional for drizzling
  10. garlic salt for sprinkling on top
Instructions
  1. Lightly grease parchment paper with non stick spray on a 11x7 baking sheet.
  2. Combine all ingredients together with a hand mixer at high speed for 60 seconds.
  3. Scoop the sticky batter onto your baking sheet, spreading it nearly to the edges.
  4. Use a pizza wheel or knife to score the dough into 6 1" wide strips.
  5. Cover the pan with plastic wrap and let rise at room temperature for 60 minutes.
  6. Preheat oven to 375 degrees.
  7. Drizzle bread sticks with olive oil and sprinkle with garlic salt.
  8. Bake for 25 minutes or until light golden brown.
  9. Remove from oven and let cool for a few minutes. As soon as you can touch them, cut the dough along the score lines with scissors.
  10. Place bread sticks on their side edges on the pan now and return back to the oven for 10 minutes.

Mini Biscuit Pizzas

Mini Pizza Biscuits recipe makes individual mini pizzas using Pillsbury biscuits in 15 minutes.

How many times do we have pizza a month? Don’t ask.  We are pizza monsters.   Favorite food? It’s hard to choose, it’s like telling me to pick a favorite cat (all of them!).  But pizza is definitely up there in the number ones.   How much do we love pizza? Well we made a video once about pizza, it even included a dancing pizza costume and playing baseball with some slices of pizza and a handle to hit them out of the park.  It was part of a installation piece where you could walk up to a screen and feed friends pizza with a press of a pizza button. 

Last year we had a solo art show in London, it was about dinosaurs (another love that we’ll talk about some other time) and at our opening we had a pizza truck.  Does life get any better than that – going to London, having your own show you made with your best friend about dinosaurs and then having a pizza truck whipping out pizzas all night long?   Life goal: Accomplished.

So yeah, we really love pizza and now you know a little more about my life outside of Brooklyn Farm Girl.  Dinosaurs and pizza. 

Sometimes we’re craving pizza but we don’t want to spend the money on takeout and we don’t feel like making homemade dough.  Problem solved, let me introduce you to Mini Biscuit Pizzas.

These Mini Pizzas are great because they take 12 minutes in the oven.   That means you can have yummy pizza to eat in about 15 minutes because there’s not much more to do then to dice up some green peppers and mushrooms.   In the recipe I suggest pepperoni, green peppers and mushrooms but feel free to make these pizzas your own, top them with whatever you like.  Speaking of – what’s your favorite pizza topping?

Ingredients
  1. 1 16 oz can Pillsbury Grands refrigerated biscuits
  2. 1 cup Pizza sauce
  3. 2 cups shredded mozzarella cheese
  4. 24 pepperoni slices
  5. 1/2 cup diced green peppers
  6. 1/2 cup chopped mushrooms
Instructions
  1. Preheat oven to 375 degrees
  2. Press each biscuit down with your hand or rolling pin until it becomes around 5 inches round.
  3. Place biscuits down on greased cookie sheets.
  4. Top each biscuit with pizza sauce, cheese, pepperoni, peppers and mushrooms.
  5. Bake for 12-15 minutes or until bottoms are golden brown.
  6. Enjoy!

Cauliflower pizza casserole is born!

When I first found a great cauliflower pizza casserole recipe it called for pureed cauliflower, but pureeing cauliflower that we grew seemed like a absolute sin to me.  I can’t give so much energy and love to our garden cauliflower and then just blend it up, that would be the saddest thing ever.  If we were ever to sell produce commercially I would put on every single package a (cute) warning sign that says “YOU MAY NOT PUREE ME, IT WILL MAKE PAMELA VERY SAD, PLEASE LOVE CAULIFLOWER WHOLE.  THANK YOU VERY MUCH”.  So in my recipe, we cut it into small bite size pieces.  I prefer it this way as well as the cheese will get in all the nooks and crannies of the cauliflower.    And who doesn’t’ like cheese?    Especially with cauliflower.  This is a absolute win situation.

Cauliflower Pepperoni Pizza Casserole

Ingredients
  1. 1 large cauliflower head - cut up into small bite size pieces
  2. 4 tablespoons heavy cream
  3. 1 tablespoon butter - melted
  4. 2 cloves garlic - minced
  5. 15 slices of pepperoni - quartered
  6. 1/4 cup shredded mozzarella cheese
For on top of the casserole
  1. 3/4 cup pizza sauce
  2. 12 slices pepperoni
  3. 1 cup shredded mozzarella cheese
  4. fresh basil to garnish
Instructions
  1. Chop your clean cauliflower into small bite size pieces. Steam for 2 minutes, drain. Put into casserole dish.
  2. In a bowl mix your butter, heavy cream and garlic.
  3. Pour butter mixture over cauliflower.
  4. Add quartered pepperoni slices, 1/4 cup shredded mozzarella on top of your cauliflower.
  5. Mix everything up so cauliflower is coated.
  6. Spread your pizza sauce evenly on top of your cauliflower.
  7. Pour your 1 cup shredded mozzarella evenly on top.
  8. Put your sliced pepperoni on top.
  9. Cook at 375 degrees for 15 minutes.
  10. Garnish with basil when it comes out of the oven.
  11. Enjoy!
