These Chocolate Chow Mein Noodle Cookies are delicious and completely addicting!  Even better is that they’re made with only 4 simple ingredients, they don’t require baking and are kid friendly to make!    I made these for a friends party, but they were so good that Matthew and I gobbled them up at home causing me to make a second batch!

Even though these are called “cookies” they’re really not cookies at all, but I find them to be a delicious cookie substitute for holiday gifts, bake sales, and even leaving out for Santa (wink wink).  They’re not made with flour or butter, but instead only require 4 simple ingredients – chocolate chips, peanut butter chips, peanuts and chow mein noodles.  Yup, chow mein noodles!  You can use the skinny ones that come in the can or you can use the wide ones that are usually sold in a bag, I prefer the wide ones.

MINI Sweet Potato Casseroles With Brown Sugar Pecan Topping

The BEST BAKED MINI Sweet Potato Casseroles with BROWN SUGAR Pecan Topping! This easy Southern recipe uses BAKED sweet potatoes to really bring out the flavor! There is a delicious brown sugar pecan crumble on top! I love baking these as mini casseroles as it’s a beautiful presentation at Thanksgiving dinner and everyone gets to eat their own! You can even make these ahead of time and heat up!

Next year we are growing sweet potatoes in the garden because this year I finally fell in love with them in the kitchen! You might have seen my creamy Sweet Potato soup last week (if you missed it, it’s here), well now I’m back with a Sweet Potato Casserole in Mini individual size!

These MINI Sweet Potato Casseroles With Brown Sugar Pecan Topping are so cute and so delicious! Everyone gets to eat their own mini casserole so they’re going to be a hit at the next holiday dinner!

Let’s talk sweet potatoes first, ok?  The way to bring out the flavor of sweet potatoes isn’t by boiling them, but by baking them!  Trust me on this!  If you did a taste test with a boiled and baked sweet potato, and then mashed it, you would absolutely agree  that the baked sweet potato is SO much better!  So for this recipe, we’re going to bake the sweet potatoes first before mashing for the casserole.  Yes, I know, it’s one additional step, but it’s WORTH IT!  I would never make you do more work if the pay off wasn’t big!

To bake the sweet potatoes preheat the oven to 375 degrees. Grab your sweet potatoes and pierce them with a fork a few times (fun holiday stress activity!). Place the sweet potatoes on a cookie sheet and bake for 90 minutes. Remove the potatoes from the oven. Hold the sweet potatoes with a potholder (they’re hot!) and the potato will pop right out of it’s skin. Discard the skin. Use a potato masher or hand mixer to mash the sweet potatoes.   It’s that easy!  Once your sweet potatoes are baked then we’re ready to begin making these mini casseroles!  If you’re worried about the extra 90 minutes of baking time, you could bake these sweet potatoes a day in advance so they’re all ready for you!

I hope you had a great weekend!  This past Sunday we cheered the runners on outside our apartment during the NYC Marathon! The weather was chilly and the raindrops were falling so I knew we were going to have a comforting slow cooker Sunday night meal!  I made this Slow Cooker Salisbury Steak with Cream of Mushroom Soup and it was the perfect dish to say goodbye to the weekend with. This Slow Cooker meal is creamy, comforting, hearty and just warms the heart in the way that home cooked meals should.

Salisbury Steak has been one of my favorites since I was a child but I wasn’t in the mood to do a baked version, instead I wanted something to throw in the Slow Cooker and make dinner easy.   I love creamy slow cooker meals, like Meatball Potato Casserole, and Sweet Potato and Ham Soup, so I gave this a extra creamy gravy made with cream of mushroom soup! 

The actual Salisbury Steak patties are easy to make.  Throw ground beef, dry onion soup mix,  bread crumbs and milk in a bowl and mix around with your hands, and then form the patties.  A helpful hint: use lean, less fat ground beef.   If you don’t use a lean beef, it’s going to make your creamy gravy more on the greasy side.  This can totally be made with non lean beef, but I think it overall tastes better with a 90/10 blend.   After you shape your steak patties then roll around in a dusting of flour.

Cheesy Chicken Tomatillo Casserole

CHEESY Chicken Tomatillo Casserole recipe! We’ve had good success with growing celery in the garden for the first time this year.  With the end of garden season in sight I’m left with a few  beautiful heads of celery hanging out in my refrigerator.  This leads me to the question of the week “What should I make with lots of celery”?

Sure there’s the easy route of cutting celery up and dipping it in peanut butter for a delicious snack, but I wanted to throw my apron on and come up with something new for the celery.  It was the first day where it felt like Fall, the weather was crisp and chilly and so I was craving something warm.   Ta-da, Creamy Celery and Egg Noodles Soup was born!

This year our tomatillo plants did a great job in producing tomatillos!  We started growing tomatillos a few years ago on the roof and they were so successful, and easy to grow, we made them a permanent plant in the garden.   Of course, when we first started growing tomatillos I think we had 6 plants, but as is garden life, now we’re up to 20 something plants.  In all honesty, it might be too many tomatillo plants for the average person but if you love salsa verde and tomatillos as much as me it’s just the right amount! One reason why I love growing a overabundance of tomatillos is becase I get to make Oven Roasted Tomatillos!

If you haven’t noticed from my past few recipes, I’m kinda obsessed with my slow cooker right now.   With a new baby and a garden in full harvest our slow cooker has been saving us (and my sanity!).   August and September is always tomato season and we’re left with baskets filled with beautiful tomatoes, ranging from cherry, beef and roma varieties.   My favorite cherry tomato recipe is this creamy sauce, but I wanted to try something new with them so I threw them in the slow cooker and hoped for delicious results!

With garden season under way I’m constantly wanting to come up with new recipes to try.  With pounds of green beans, potatoes just dug up and the start of the tomato season I wanted to create a easy meal that could use all of them.   I googled “Slow Cooker Green Beans and Tomatoes” but surprisingly nothing existed that actually used the crock pot so I decided it was time to make my own recipe!

Even though it’s Summer time I’ve been making slow cooker meals a few times a week because it’s much easier with the baby.   While wearing her I can quickly cut up the veggies, prepare the rest of the ingredients and toss everything in the slow cooker.   Last week I made this Slow Cooker Green Beans and Tomatoes dish and it was such a hit that I had to share it with you!

Cucumber Peppermint Tea

CUCUMBER PEPPERMINT Tea is my favorite Summer drink! This homemade cup of green tea includes cucumbers, peppermint, honey and a splash of lemon juice to make a healthy and fresh drink.  You can drink it hot or iced.  The health benefits of this tea are great so I love drinking it every morning!

In August we start to see the Summer harvest really start to shine.  Tomatoes and peppers are picked by the basket,  corn is starting to be made, watermelons grow a few on each vine and the cucumber plants are snaking through the beds.  When we grew cucumbers on the roof in containers they would spread similar to pumpkin and watermelon plants, and now that we’re growing Upstate they continue to spread and become friends with the kale, cabbage and other nearby greens.

With our Summer cucumber harvest I usually rely on my Half Sour Pickles recipe and call it a wrap, but I decided to use some of our cucumbers to enjoy in this refreshing Summer friendly Cucumber Peppermint Tea!  This tea uses 2 garden favorites, cucumbers and peppermint.  Peppermint is a great herb that grows easily in gardens and in pots for smaller spaces.  If you don’t have a garden space, no worries,  you can grow it on a fire escape or windowsill just as good.   Peppermint produces quickly so make sure to keep picking the leaves so the plant keeps growing!  One easy way to use the plant is to drink 1 cup of this Cucumber Peppermint Tea every morning to start your day!

BANANA Oat BREAD Cookies tastes just like banana bread!   This healthy, easy to make recipe makes 3 dozen cookies filled with oatmeal, walnuts, chocolate chips!  These cookies are soft and packed with protein to make the best breakfast or dessert! 

What I love: cookies, bananas, banana bread.  What I don’t love: overripe, brown bananas.   With a bunch of bananas in the kitchen ripening quickly, there’s only one thing to do.. make Banana Oat Bread Cookies!

Do you have a fear of ripe, brown bananas too? Maybe it’s because it’s Summer time but lately my bananas have been ripening at much quicker speeds than usual.  I like to eat bananas when they hit that perfect spot of just turning yellow – but no brown spots on them yet. The timeline for a perfect banana is slim.  Once it starts to brown and turn soft I can’t eat them “raw” anymore.  But that’s totally ok, because soft bananas are like the Cinderella of this story, except they don’t turn into a pumpkin at midnight, instead they turn into delicious cookies!

When Summer gives you fresh raspberries you stuff them in your mouth.  Immediately.  When Summer gives you so many fresh raspberries you can’t fit anymore into your mouth then you make 1 Pint 10 Minute Raspberry Jam!

I love “1 Pint” recipes because often people aren’t picking or buying 8 cups of raspberries at one time.  If you see a deal on raspberries at the farmers market usually they are by the pint.  Same goes for garden harvest, often you pick 1 pint here, 1 pint there,  berries are so picky (no pun attended) so I’m not often picking them all at once.   This recipe only requires 1 pint of fresh raspberries which is approximately 2 cups worth.

Right now I don’t have the time to make homemade ravioli dough so I came up with a simple solution.  Instead of spending hours making dough from scratch, use wonton wrappers!  By using the wonton wrappers you’re going to get crisp ravioli once baked in the oven.  You’re also going to save yourself a lot of time instead of having to knead and let dough rise.    To save even more time, you can freeze these for quick weeknight meals. At the bottom of this post I’m including full instructions on how to freeze this Easy Baked Three Cheese Ravioli!

Sugar Snap Pea and Cauliflower Casserole

CHEESY Sugar Snap Pea and Cauliflower Casserole! This loaded recipe is simple to make with fresh vegetables and cream of mushroom soup. I love serving this easy to make casserole as a chicken side dish or a vegetarian main dish. During the Summer I always use fresh cauliflower and sugar snap peas straight from the garden!

When the garden gives you 7 pounds of cauliflower and 8 pounds of sugar snap peas in one week, you make Sugar Snap Pea and Cauliflower Casserole!   And you add shredded cheddar cheese, because you should always add cheese on top!

This is usually how it goes during garden season.   July brought us a big harvest of cauliflower and sugar snap peas, where we picked 8 pounds of peas last week and I’ll probably be picking 10 more pounds this week.  Sugar snap peas are best fresh so I’m always excited to create recipes that use multiple cups of them (this recipe uses 5 cups of peas!).
