Banana Oat Bread Cookies

BANANA Oat BREAD Cookies tastes just like banana bread!   This healthy, easy to make recipe makes 3 dozen cookies filled with oatmeal, walnuts, chocolate chips!  These cookies are soft and packed with protein to make the best breakfast or dessert!

What I love: cookies, bananas, banana bread.  What I don’t love: overripe, brown bananas.   With a bunch of bananas in the kitchen ripening quickly, there’s only one thing to do.. make Banana Oat Bread Cookies!

Do you have a fear of ripe, brown bananas too? Maybe it’s because it’s Summer time but lately my bananas have been ripening at much quicker speeds than usual.  I like to eat bananas when they hit that perfect spot of just turning yellow – but no brown spots on them yet. The timeline for a perfect banana is slim.  Once it starts to brown and turn soft I can’t eat them “raw” anymore.  But that’s totally ok, because soft bananas are like the Cinderella of this story, except they don’t turn into a pumpkin at midnight, instead they turn into delicious cookies!

Napping With DockATot

Enceladus isn’t a great sleeper during the day (at night is another story – more about that in a future post!).   The only way I can get any work done during the day is by wearing her or putting her down.  But I can’t put her down anywhere, she’s extremely picky about her sleeping arrangements and will let you know it!  Her favorite? The DockATot!  Does your baby love napping with DockATot too?

Doesn’t she look comfortable?
First Time Mom Review of the DockaTot and how we use it as a lounger and travel sleeper. Our baby loves napping with DockaTot!

Since we were expecting Enceladus I had my eyes on the DockATot! So many parents gave rave reviews that this solved all their sleep issues so I had to get one!   What I was most excited about was that this could be traveled with.  Unlike so many other loungers,  this was light, didn’t need to be plugged in and can be carried with one arm (really important!).   Enceladus took her first trip Upstate to the garden last weekend and I was so worried about what to bring for her to sleep in.  The DockATot lets me not go overboard with a bunch of different beds and chairs, all I need is one thing that I can throw in a bag and go!    We will be making a trip later this month to Maine and I’m thrilled to know that this is the only bed that I’ll have to bring for her!

1 Pint 10 Minute Raspberry Jam

EASY 1 PINT 10 MINUTE Raspberry Jam!  This simple recipe uses 1 pint of fresh raspberries, honey and lemon juice to make delicious jam!  This homemade jam is healthy and requires no pectin and no sugar! I always make 2 jars – one to store in the refrigerator and one to store in the freezer!

When Summer gives you fresh raspberries you stuff them in your mouth.  Immediately.  When Summer gives you so many fresh raspberries you can’t fit anymore into your mouth then you make 1 Pint 10 Minute Raspberry Jam!

I love “1 Pint” recipes because often people aren’t picking or buying 8 cups of raspberries at one time.  If you see a deal on raspberries at the farmers market usually they are by the pint.  Same goes for garden harvest, often you pick 1 pint here, 1 pint there,  berries are so picky (no pun attended) so I’m not often picking them all at once.   This recipe only requires 1 pint of fresh raspberries which is approximately 2 cups worth.

Easy Baked Three Cheese Ravioli

EASY BAKED Three Cheese Ravioli is one of my family’s favorite meals!  This homemade recipe uses wonton wrappers for the ravioli to make it faster and is filled with ricotta, mozzarella and Parmesan cheese!  Instructions include how to make and bake immediately or freeze for frozen ravioli.  This recipe is sponsored by Peapod.

Do you know what I love? Ravioli! Do you know what I really love? Homemade ravioli!  Do you know what I really really love? Crispy ravioli that is easy to make and filled with three types of cheese!
EASY BAKED Three Cheese Ravioli is one of my family's favorite meals! This homemade recipe uses wonton wrappers for the ravioli to make it faster and is filled with ricotta, mozzarella and Parmesan cheese! Instructions include how to make and bake immediately or freeze for frozen ravioli.

Right now I don’t have the time to make homemade ravioli dough so I came up with a simple solution.  Instead of spending hours making dough from scratch, use wonton wrappers!  By using the wonton wrappers you’re going to get crisp ravioli once baked in the oven.  You’re also going to save yourself a lot of time instead of having to knead and let dough rise.    To save even more time, you can freeze these for quick weeknight meals. At the bottom of this post I’m including full instructions on how to freeze this Easy Baked Three Cheese Ravioli!

We Won The Cauliflower Battle!

After years of failing at growing cauliflower we switched to a new variety and grew over 20 pounds of cauliflower! Learn how we grow cauliflower from seeds that can withstand Summer heat and result in a big cauliflower harvest!

I’m not sure if you remember but a few months ago when planting our seeds I talked about how Matthew didn’t want to grow cauliflower this year because he thought it was a lost cause.  For so many years we used up space in the garden to get lackluster cauliflower results (if any).  Cauliflower has always been one of the harder vegetables for us to grow, and it’s been difficult for us to get anything but a few florets of harvest.   Because I couldn’t give up on the cauliflower, I talked Matthew into trying one more year.  Instead of trying our usual variety, I researched the different options and decided we were going to grow Snow Crown seeds to see if it made any difference.   With hearts in my eyes and rainbows in the sky, it worked!  You guys, it worked so great!   In the last 2 weeks we’ve picked close to 20 pounds of cauliflower!

I’m so happy we pushed for one more year with the cauliflower and decided to try a new variety.  We went with Snow Crown because it was labeled as being able to be harvested in Summer or Fall so I figured it could take the heat.  Although Upstate is much cooler than NYC, it still does have days in the high 80’s (and sometimes 90’s) so it was important to find a type that could handle hot days.  When we used to grow on the roof in NYC the cauliflower would never last past the beginning of June, so it’s exciting to see it grow through July now!

This is usually how it goes during garden season.   July brought us a big harvest of cauliflower and sugar snap peas, where we picked 8 pounds of peas last week and I’ll probably be picking 10 more pounds this week.  Sugar snap peas are best fresh so I’m always excited to create recipes that use multiple cups of them (this recipe uses 5 cups of peas!).

Celebrating Xanadu’s 11th Birthday!

Celebrating Xanadu’s 11th Birthday with lots of cat food! Show your cats you love them by throwing them a birthday party feast! This is a sponsored conversation written by me on behalf of The J.M. Smucker Company. The opinions and text are all mine.

A few weeks ago Xanadu Pluto turned 11 years old.  Oh my, 11 years old already…?!   Is this what it feels like when suddenly your daughter asks to buy lip gloss on her 11th birthday?   Heart break.  I consider Xanadu my baby.  We adopted Xanadu when she was 3 months old in 2006.  At that time we were a 1 cat household (Essy was the only one) and we only lived in NYC for a year.  We had no experience with Siamese cats, but decided after a visit we were going to bring her into our home.  Matthew went and got her while I straightened up the house to await her arrival.   I had everything ready for her – new toys, a new bed, cat food and plenty of treats.  Why wouldn’t she fall in love with her new family?   When she arrived at our apartment, we took her to the bathroom for a transition period.  Essy was outside the door listening as this new cat meowed her way out of the travel carrier.  Have you ever heard a Siamese cat meow?  It sounds just like a baby, and it’s slightly terrifying when you hear it at first.    I can only imagine what Essy was thinking!

Celebrating Xanadu's 11th Birthday with lots of cat food! Show your cats you love them by throwing them a birthday party feast!

As Xanadu meowed after leaving the carrier, she quickly let her Siamese cat traits be known.  Within 5 minutes she was standing on 2 legs, clawing at the bath towels, wrapped in them, tearing them down.   Matthew and I looked at each other, both love in our eyes, realizing she was going to be a handful.

Our First Family Walk

Time to go on our first family walk with Enceladus while wearing our lillebaby tokidoki Complete All Seasons carrier!  This post is in partnership with buybuy BABY.

This past weekend we decided to head out for our first family walk.  I’ve taken Enceladus on multiple walks by myself (I hope you’re watching my adventures on Instagram Stories by the way!) to the studio, grocery store and other random places when I feel like we need to get out!   She loves strolling around in her UPPAbaby Vista, and surprisingly handles bumps in the sidewalk like a pro without even opening her eyes!

I want to make it a mission to do one weekly thing as a family, so we headed out to show her how lucky she was to live in Brooklyn!  It just happened that it was also National Ice Cream Day, so we had to stop for ice cream too…..!

Now only if she could remember her first walk with us, but she was passed out and snoring the entire time!

Baby Birth Story of Enceladus!

Hi everybody!  My oh my, do I have someone who wants to meet you all.  She’s my new BFF.    Won’t you all say hello to Enceladus?
Full Name: Enceladus Seven Reed Rader,  Born: 11:53PM on July 2,  Weight: 7 pounds, 4 oz,  Personality: Feisty and Silly

Baby Birth Story of Enceladus, born on July 2 2017 at New York-Presbyterian Lower Manhattan Hospital.

Everyone asks about her name, Enceladus, so I’ll save you the trouble of googling! 🙂  She’s named after a moon on Saturn.  You pronounce it En-Sell-Ah-Dus
Her middle name is Seven because she’s our 7th baby (we’ve had 6 cats prior).  We really wanted to include our Meowza family in her name somehow since they’re so special to us.
She has 2 last names, Reed Rader, because it’s always made sense to us that Baby should have both names.

Birth Story of Enceladus, born on July 2 2017 at New York-Presbyterian Lower Manhattan Hospital.

At 5 days old she was already helping her Mom bake her first batch of cookies, one handed.  She lost a sock along the way, but don’t worry, it didn’t land in the cookie batter. She’s a natural.

HOMEMADE STRAWBERRY ICE CREAM with no eggs!  This homemade recipe is easy to make in your ice cream maker and is filled with fresh strawberries!  It’s made with heavy cream, half and half and is eggless! This is one of the best Summer dessert recipes to eat!

The ice cream cravings are out of control this week!  With the mixture of Summer temperatures, fresh strawberries growing in the garden and craving cold ice cream, I broke our ice cream maker out of the cabinet and made this Strawberry Ice Cream With No Eggs!

Eggs are often included in making delicious ice cream but I’m a believer that they aren’t necessary for creating some of the best, homemade ice cream.  This ice cream includes half and half, heavy cream, sugar, vanilla extract, a dash of salt and lots of fresh strawberries – and trust me, that’s all you need!

The taste of this ice cream has the perfect strawberry ratio to it, with the strawberry taste shining through.  I recommend taking your strawberries and pureeing them every so slightly so they’re a good mashed consistency,  but be careful not to puree them too much!

Slow Cooker Tomato Cheese Dip is a creamy easy to make dip that uses fresh tomatoes, peppers and Velveeta cheese!  This simple homemade recipe is ready in 2 hours in the slow cooker and perfect to serve with tortilla chips for your next party! We especially love this dip for Mexican meals!   This is a sponsored post written by me on behalf of Mission®. All opinions are entirely my own.

We just planted our tomato plants last weekend and already I’m dreaming up tomato recipes to make in a few months.  Remember I said we were going to plant less tomatoes to make the garden easier on us this year (hi baby! arriving soon!)? Well we didn’t. We’re going to have a whole lot of tomato plants, so I got to thinking about my Creamy Cherry Tomato Sauce and how I could use that method to create a slow cooker tomato recipe.  For this delicious dip recipe,  we’re throwing fresh tomatoes, sweet peppers, salt and pepper in the slow cooker and then adding in cheddar cheese to make it extra creamy.   This is the perfect summer dip recipe because it’s easy to make, uses fresh vegetables and tastes delicious dipping tortilla chips into!

Summer Tomato Planting

It’s tomato time you guys!  One of the most exciting parts of the garden year is Summer tomato planting for us.  The tomatoes always steal the show in the garden during the Summer, so seeing them in the ground gets us excited for the upcoming few months of care, growing, picking and endless tomato sauce cooking in the kitchen.
Summer Tomato Planting tips for transplanting indoor tomato seedlings outside to your garden. Follow these growing and planting tips for a big tomato harvest!

First up… the plant car!  Since we plant the seeds in our Brooklyn apartment to germinate and grow under our grow lights, once the weather allows and the plants are strong enough we transport them Upstate to the garden.  We carefully pack each tomato, tomatillo and pepper plant into the back of our little car away we go!  I always like to think that the plants enjoy their scenic ride Upstate New York to their new home.

Newton Crib Mattress Review: Best Mattress For First Time Moms

Newton Crib Mattress Review- the Wovenaire is the best mattress for your baby that is 100% breathable! Perfect for First Time Moms who are worried about everything (that’s me!).

For my next review in the baby series, I’m diving into mattresses.  Consider this another category that I put endless amounts of time into reading reviews and cross comparing products.  This, like so many other baby products, resulted in Matthew physically removing my computer from my lap late night one day saying “That’s enough reviews for you today”.   I’m obsessed.

Baby mattresses range widely in quality and price.  They’re firm, they’re soft, they’re made out of this, they’re made out of that, they are waterproof, they soak up water, they’re $29, they’re $400, etc.    I ended up getting the Newton Crib Mattress for our baby because it checked everything off that was a must have for me, most importantly: safety.
Newton Crib Mattress Review- the Wovenaire is the best mattress for your baby that is 100% breathable! Perfect for First Time Moms who are worried about everything (that's me!).

The Newton Wovenaire Crib Mattress is 100% breathable and uses the highest quality food-grade polymer extruded into a crystal clear pool of water.   From there it creates a resilient three-dimensional shape that is 90% air by volume.  What does this mean in regular words?  It means it’s safe, cleaner and healthier for your baby.  If you are worried about the baby rolling over in the middle of the night, this mattress is completely breathable.  Tests have shown that babies can breathe right through the mattress which reduces risk of suffocation.   Being a first time parent, this is something that worries me and I know will keep me up at night so having this reassurance definitely makes me feel better.

When you think of New York – what do you think of?  You probably think of Times Square, Statue of Liberty, Central Park, the great Borough of Brooklyn (hi!) and the subway.  You probably think of food too!  New York is the center of great food and one of the most popular foods here are bagels!  Oh bagels! You beautiful, delicious things.

Bagels are great. I could live on them.  They come in all flavors, you can toast them, you can eat them on the go, you could eat them for breakfast, lunch, or at 3AM in the morning in bed because you’re hungry.  I’m spoiled because I get to live in the city with the best bagels in the World.  There’s something about the water in NYC that creates the perfect bagel, and whatever it is, I thank it because, goodness,  NYC bagels are delicious.

Garden Giveaway – FoodSaver Preservation System!

Hi garden friends!  To help kick off the beginning of gardening season I’m giving away a FoodSaver FM5480 2-in-1 Food Preservation System (retail $200) to one (super!) lucky reader!  This FoodSaver is going to help you preserve your Summer veggies for months to come!  One of my favorite features of this FoodSaver is that it seals delicate foods without crushing them, something that I’ve had a hard time with others!

Why do you want to use a FoodSaver?  It keeps food fresh, eliminates waste and saves money.   The system includes vacuum seal bags, zipper bags and containers designed to work together for the best performance.   The Vacuum Sealer protects food from the deteriorating effects of oxygen.  In general, food lasts 5x longer when you use it.  Meat for example can last up to 3 years in the freezer, instead of the usual 6 months. Use this for fruits and vegetables, breads, pastries, meat, soups and stew, coffee beans,  flour, sugar, rice/pasta and more.  You can even use it for refrigerator items like cheese which will help keep it fresh for 4-8 months!
