Slow Cooker Green Beans and Tomatoes

SLOW COOKER Green Beans and Tomatoes! This easy recipe cooks fresh green beans, tomatoes, potatoes and bacon in a crock pot for 4 hours.  This is a healthy dish that you can serve over rice or as a side dish to chicken or Thanksgiving holiday dinners.  This has been become one of families favorite meals! 

With garden season under way I’m constantly wanting to come up with new recipes to try.  With pounds of green beans, potatoes just dug up and the start of the tomato season I wanted to create a easy meal that could use all of them.   I googled “Slow Cooker Green Beans and Tomatoes” but surprisingly nothing existed that actually used the crock pot so I decided it was time to make my own recipe!

Even though it’s Summer time I’ve been making slow cooker meals a few times a week because it’s much easier with the baby.   While wearing her I can quickly cut up the veggies, prepare the rest of the ingredients and toss everything in the slow cooker.   Last week I made this Slow Cooker Green Beans and Tomatoes dish and it was such a hit that I had to share it with you!

Shipping Container Home Reveal Before and After

Check out the BEFORE and AFTER of our shipping container home!  With hard DIY work, we turned a used shipping container into a tiny house.   The shipping container sits on 7 acres of land in Upstate New York next to our vegetable garden and green house.  With fresh paint, new flooring and colorful furniture we were able to make our dream vacation home on a small budget!

A quick little note about the project if you’re a new reader.  We bought land in Upstate New York to build a eco friendly weekend home.  We’ve always been interested in recycling a shipping container to use for a Summer getaway, so that’s what we did.  The shipping container sits on 7 acres of land, next to our vegetable garden and greenhouse.   The goal of this project was to make a simple, economic getaway so we could run away from NYC on weekends and unplug.  The entire project took about a year and a half but it would have went quicker if we didn’t get pregnant and have a baby in the middle of it!  Also Winters are brutal in Upstate New York so we didn’t get up much during those months.   We have thoughts of expanding the shipping container into 2 or 3 stories and making one side of it all glass windows but we’re still unsure of our next step.  For now, it serves it’s purpose so enjoy the reveal!  Thanks to Hayneedle for working with me on this project!

Cucumber Peppermint Tea

CUCUMBER PEPPERMINT Tea is my favorite Summer drink! This homemade cup of green tea includes cucumbers, peppermint, honey and a splash of lemon juice to make a healthy and fresh drink.  You can drink it hot or iced.  The health benefits of this tea are great so I love drinking it every morning!

In August we start to see the Summer harvest really start to shine.  Tomatoes and peppers are picked by the basket,  corn is starting to be made, watermelons grow a few on each vine and the cucumber plants are snaking through the beds.  When we grew cucumbers on the roof in containers they would spread similar to pumpkin and watermelon plants, and now that we’re growing Upstate they continue to spread and become friends with the kale, cabbage and other nearby greens.

With our Summer cucumber harvest I usually rely on my Half Sour Pickles recipe and call it a wrap, but I decided to use some of our cucumbers to enjoy in this refreshing Summer friendly Cucumber Peppermint Tea!  This tea uses 2 garden favorites, cucumbers and peppermint.  Peppermint is a great herb that grows easily in gardens and in pots for smaller spaces.  If you don’t have a garden space, no worries,  you can grow it on a fire escape or windowsill just as good.   Peppermint produces quickly so make sure to keep picking the leaves so the plant keeps growing!  One easy way to use the plant is to drink 1 cup of this Cucumber Peppermint Tea every morning to start your day!

I wanted ONE stroller, from newborn to a few years old.  
I wanted ONE stroller to grow with incase one baby becomes two babies one day (calm down!).
I wanted it to look really cool.

This Week’s Harvest Includes Lots of Greens!

This week’s garden harvest includes lots of greens!  Join me as I show you what’s growing in our garden!

Yup, it’s true! Even though this Summer has been life changing and we’re both sleep deprived, we’ve kept the garden up and running!  Although the garden has received less care and time due to the arrival of our July baby, it’s still producing wonderfully and we’re picking baskets filled with vegetables! So let’s look at this week’s harvest!

Right now it’s all about the greens! We’re picking kale, cabbage, broccoli, tomatillos, green beans, sugar snap peas and jalapeno peppers.   Tomato season is about to start so we picked our first cherry tomatoes which I immediately threw up in the air into my mouth! Not pictured are the potatoes and onions which I totally forgot about – sorry!

Banana Oat Bread Cookies

BANANA Oat BREAD Cookies tastes just like banana bread!   This healthy, easy to make recipe makes 3 dozen cookies filled with oatmeal, walnuts, chocolate chips!  These cookies are soft and packed with protein to make the best breakfast or dessert! 

What I love: cookies, bananas, banana bread.  What I don’t love: overripe, brown bananas.   With a bunch of bananas in the kitchen ripening quickly, there’s only one thing to do.. make Banana Oat Bread Cookies!

Do you have a fear of ripe, brown bananas too? Maybe it’s because it’s Summer time but lately my bananas have been ripening at much quicker speeds than usual.  I like to eat bananas when they hit that perfect spot of just turning yellow – but no brown spots on them yet. The timeline for a perfect banana is slim.  Once it starts to brown and turn soft I can’t eat them “raw” anymore.  But that’s totally ok, because soft bananas are like the Cinderella of this story, except they don’t turn into a pumpkin at midnight, instead they turn into delicious cookies!

Napping With DockATot

Enceladus isn’t a great sleeper during the day (at night is another story – more about that in a future post!).   The only way I can get any work done during the day is by wearing her or putting her down.  But I can’t put her down anywhere, she’s extremely picky about her sleeping arrangements and will let you know it!  Her favorite? The DockATot!  Does your baby love napping with DockATot too?

Since we were expecting Enceladus I had my eyes on the DockATot! So many parents gave rave reviews that this solved all their sleep issues so I had to get one!   What I was most excited about was that this could be traveled with.  Unlike so many other loungers,  this was light, didn’t need to be plugged in and can be carried with one arm (really important!).   Enceladus took her first trip Upstate to the garden last weekend and I was so worried about what to bring for her to sleep in.  The DockATot lets me not go overboard with a bunch of different beds and chairs, all I need is one thing that I can throw in a bag and go!    We will be making a trip later this month to Maine and I’m thrilled to know that this is the only bed that I’ll have to bring for her!

1 Pint 10 Minute Raspberry Jam

EASY 1 PINT 10 MINUTE Raspberry Jam!  This simple recipe uses 1 pint of fresh raspberries, honey and lemon juice to make delicious jam!  This homemade jam is healthy and requires no pectin and no sugar! I always make 2 jars – one to store in the refrigerator and one to store in the freezer! 

When Summer gives you fresh raspberries you stuff them in your mouth.  Immediately.  When Summer gives you so many fresh raspberries you can’t fit anymore into your mouth then you make 1 Pint 10 Minute Raspberry Jam!

I love “1 Pint” recipes because often people aren’t picking or buying 8 cups of raspberries at one time.  If you see a deal on raspberries at the farmers market usually they are by the pint.  Same goes for garden harvest, often you pick 1 pint here, 1 pint there,  berries are so picky (no pun attended) so I’m not often picking them all at once.   This recipe only requires 1 pint of fresh raspberries which is approximately 2 cups worth.

Right now I don’t have the time to make homemade ravioli dough so I came up with a simple solution.  Instead of spending hours making dough from scratch, use wonton wrappers!  By using the wonton wrappers you’re going to get crisp ravioli once baked in the oven.  You’re also going to save yourself a lot of time instead of having to knead and let dough rise.    To save even more time, you can freeze these for quick weeknight meals. At the bottom of this post I’m including full instructions on how to freeze this Easy Baked Three Cheese Ravioli!
