Who knew that once you had a baby you immediately forgot to feed yourself.  On the first day home I already found myself looking at the clock at 5PM and remembering I never ate lunch.  After this repeated for a few days, along with 3 hour sleep nights, I knew I was going to have to change some things and make sure I was getting the calories and nutrients needed for baby and me.  So I opened up the cabinet and pulled out a couple cups of Minute® Ready to Serve.  Then I opened up my refrigerator and pulled out Brussels Sprouts and tomatoes.  In 10 minutes I had a delicious lunch ready to serve, along with leftovers for the next day.  High 5 to Mom for making a wholesome,  yummy lunch – 10 Minute Brussels Sprouts Quinoa Rice!

The Minute® Ready to Serve Organic Red Quinoa and Brown Rice with Garlic only takes 1 minute to make which is amazing.  It’s a perfect solution for a fast lunch when trying to eat better.   While the rice is cooking, throw the Brussels Sprouts in a small pot of water to boil to soften them up so you can easily cut them up.  While they’re boiling, chop up your tomatoes too.  Once the Brussels Sprouts are done, drain them, and throw everything together in a bowl.  Just like that, your 10 Minute Brussels Sprouts Quinoa Rice is ready to be served!

Our First Family Walk

Time to go on our first family walk with Enceladus while wearing our lillebaby tokidoki Complete All Seasons carrier!

This past weekend we decided to head out for our first family walk.  I’ve taken Enceladus on multiple walks by myself (I hope you’re watching my adventures on Instagram Stories by the way!) to the studio, grocery store and other random places when I feel like we need to get out!   She loves strolling around in her UPPAbaby Vista, and surprisingly handles bumps in the sidewalk like a pro without even opening her eyes!

I want to make it a mission to do one weekly thing as a family, so we headed out to show her how lucky she was to live in Brooklyn!  It just happened that it was also National Ice Cream Day, so we had to stop for ice cream too…..!  

Now only if she could remember her first walk with us, but she was passed out and snoring the entire time!

These cookies are AMAZING!  They’re double chocolate, peanut butter and made with chocolate protein powder which gives a  nutritional boost!  Who doesn’t love a cookie that packs a punch with sources of iron, and high in protein and fiber?  I made these cookies a few days ago to rave reviews and they were gone the next day.  They’re that good.

With the arrival of baby, I find myself lagging during the afternoon and forgetting to eat lunch.  With a newborn baby, there’s something always needing to be done from snuggles, feeding, diapers, cleaning, laundry and saying out loud “I love you so much but why won’t you stop crying? Baby Birth Story of Enceladus!

Hi everybody!  My oh my, do I have someone who wants to meet you all.  She’s my new BFF.    Won’t you all say hello to Enceladus?
Full Name: Enceladus Seven Reed Rader,  Born: 11:53PM on July 2,  Weight: 7 pounds, 4 oz,  Personality: Feisty and Silly

Baby Birth Story of Enceladus, born on July 2 2017 at New York-Presbyterian Lower Manhattan Hospital.

Everyone asks about her name, Enceladus, so I’ll save you the trouble of googling! 🙂  She’s named after a moon on Saturn.  You pronounce it En-Sell-Ah-Dus
Her middle name is Seven because she’s our 7th baby (we’ve had 6 cats prior).  We really wanted to include our Meowza family in her name somehow since they’re so special to us.
She has 2 last names, Reed Rader, because it’s always made sense to us that Baby should have both names.

Birth Story of Enceladus, born on July 2 2017 at New York-Presbyterian Lower Manhattan Hospital.

At 5 days old she was already helping her Mom bake her first batch of cookies, one handed.  She lost a sock along the way, but don’t worry, it didn’t land in the cookie batter. She’s a natural.
