2016 Vegetable Garden Totals in Pounds

How we grew over 1,100 pounds of vegetables in one Summer! Learn how to grow your own food to last you all year long! Start your own vegetable garden now!

Well 2016 is almost over and it’s been a good year for gardening and growing vegetables. This year we started a new adventure that included building a garden in Upstate New York and then growing our hearts out.
Garden Reveal_12

Every year we keep a weight chart to track how many pounds of vegetables we grow.    Every harvest weekend we visit the garden, lug pounds of vegetables home in the car and into the apartment and then weigh each vegetable.    It’s a fun way to keep track of what vegetable grew good, or not so great and is a easy way to compare year to year.

Last year’s totals were: 458 pounds
This year’s totals were (drum roll please): 1147 lb 6 oz

OMG.  That’s over half a ton of vegetables!

Christmas Cream Cheese Sugar Cookies

These Christmas Sugar Cookies are so soft because they are made with cream cheese!  Dip each cookie into vanilla glaze and then top with festive sprinkles!  Recipe makes 48 cookies.

I should have made more of these cookies because after taking some to work and keeping some at home, they were all gone pretty quick!  This is a classic sugar cookie recipe, but we’re updating it by adding cream cheese which is going to make the cookies even more soft and delicious.   Because I love taking cookies to the next step, I mixed some powdered sugar and milk together to make a light vanilla glaze frosting to dip each cookie in. Finally, add holiday colored sprinkles or chopped up candy canes on top of each cookie and they’re ready to go!   If you’re sharing these with others, make sure to keep a few for yourself because they won’t last!

This will be my final post for the week, so I want to wish you and your family a happy holiday.  I hope you get some time to relax, drink some hot chocolate, listen to the Original Chipmunks Christmas album and eat these cookies!  See you guys next week!

We all know the lady, that one who loves cats.  She’s the one who shows you cat photos on her phone.  She’s the one who tells you the cutest cat stories.  She’s the one who wears beautiful dresses with cat prints on them.  She’s the one who bakes cookies that cat faces on it.  She’s the one who can be found in a empty bedroom on the ground during a party trying to lure a cat out from under the bed.   Ok, that cat lady is me.  Is it you too?

2016 Christmas Tree & New Ornaments

Well, Christmas is almost here.  Are the cookies baked?  Is the tree decorated? Are the gifts wrapped?  I have at least 1 of those done… the tree is decorated!

2016 Christmas Tree & New Ornaments

Sticking with our tradition we started last year, we bought a live Norway Spruce tree that we will be planting on the land in January to live next to his Brother. The tree is about 3 feet tall, but one day it might grow up to 100 feet! Can you imagine?  Eventually I want the land to be a forest of trees with year plaques on them that we can walk through and tell stories of each holiday.

Easy Slow Cooker Cabbage Roll Casserole

Easy to make and extra delicious Cabbage Roll Casserole made in 3 hours in the Slow Cooker!  These are also called Halupkie!

Halupkie (aka Cabbage Rolls) were a big deal in my house.  My Mother is Polish, so the recipe was passed down from generation to generation and ended up being one of my favorite meals she would make. She would add ground beef, rice and tomato sauce into a big piece of cabbage, roll it up, throw it in the fridge overnight to sit and then we would have them for Sunday dinner.  Just the smell of cabbage takes me back to my childhood!

This Cabbage Roll Casserole is a direct spin off my Mother’s recipe, but we’re making this in casserole form in the slow cooker.   Honestly, cabbage rolls once cut open aren’t the most pretty food, so just think of this as a big bowl of comfort food and see past the non-perfect visuals.  A nice warm bowl of cabbage roll casserole is the perfect dinner for a cold Winter night.  Even better is that this recipe only takes 3 hours in the slow cooker – so it’ll be ready before you know it!

Cinnamon Sugar Pistachios

Tracking Pixel This is a sponsored recipe post written by me on behalf of McCormick®. Recipe and opinions are my own.

Easy to make Cinnamon Sugar Pistachios is a delicious snack recipe!  These are perfect for snacking on year round, especially for the holidays!

Pistachios are something of a necessity for the holidays in our house.  As a kid Santa would always leave me a bag of red pistachios in my stocking that I would eat right up with my pistachio red stained fingers.   As a adult I still get pistachios at Christmas time, but now I like adding some cinnamon sugar spice to them.  There is something about the smell of cinnamon that really gets me in the holiday spirit and has me humming Christmas songs.  These Cinnamon Sugar pistachios are perfect for family or solo snacking, but they’re also perfect for having a dish filled when friends and family stop by over for the holidays.   They’re great for a holiday present if you want to mix up the usual tins of cookies that you make.  Trust me, everyone will love these sweet pistachios!

The scent of cinnamon takes me back to baking cookies with my Mom as a kid.  Every December we’d set a weekend aside to roll out cookie dough on the kitchen table.   A fun fact is that the rolling pin that we used to bake cookies with as a little girl now resides in my own kitchen.  Whenever I take the rolling pin out of the cabinet I immediately think of cookies!  We won’t be rolling out any dough for this recipe, but we will be using cinnamon to spice the pistachios.

Slow Cooker Broccoli Potato Cheese Soup

Make this Broccoli and Potato Cheese Soup for a comfort food dinner on a cold Winter night.  The soup is cooked on high in a slow cooker for 4 hours.  This soup is both delicious and easy to make!

The end of November brought cold weather and rainy days.  Because of the added layers to stay warm and the drizzle of rain it also brought a laziness to the dinner table.  I’ve been stuck in a dinner rut the last few weeks making easy and quick meals.  It usually gets to dinner time and we’re both too tired to really think of anything new so it’s something simple.    I am craving comfort food right now.  Hearty, creamy and cheesy is what I want.   To make a comforting Winter meal that is still simple and quick, I brought out my slow cooker and this Broccoli and Potato Cheese Soup was born.

This soup pretty much is the definition of comfort food.  It’s potatoes and onions slow cooked in broth.  Then we’re going to add the broccoli.  Add in some cheddar cheese, stir it around and we have a extra creamy soup that is the perfect dish to serve on a cold night.    With most soups, I always suggest adding some crusty bread, or a leftover Thanksgiving dinner roll so you can dip it in the soup.
