Slow Cooker Creamy Onion Dip: This onion dip is made in the slow cooker and comes out creamy and cheesy!
We grew many onions this year. Do you remember when we planted them all? Well it’s time to pick them now! We have 4 big creates that are full of onions. We let them dry in the sun for a few days and then ran up to the roof when we heard thunder and thankfully got them inside before it started to rain. Close one! Now they’re living inside and we’re storing them in pantyhose (great tip) and baskets.
Want to know a secret though? Don’t judge me.
I don’t like onions.
I drove my parents crazy as a kid because whenever we got takeout and I got a burger they would always put onions on the bun. I would not eat it. Even if they scraped the onions off I would not touch it. Eventually we had to check the burger before leaving the restaurant which led to almost always marching back in and asking for a new burger.
So you’re probably wondering what do we do with all those onions. Thankfully Matthew loves them. I cry and moan whenever he cuts one open. Even if we’re cutting vegetables I won’t let him use the same knife that he used on the onion on my beloved tomatoes. And when the cutting board smells like onions, well that just bums me out!
Is there any type of onion food I do like? Onion powder is fine, so is onions that have been pureed until they can’t be seen in tomato sauce. That’s about it. Good thing onion powder is so easy to dehydrate!
Because I’m a nice girl I decided to make some Slow Cooker Creamy Onion Dip a few days ago. The smell of onions slow cooking is actually enjoyable to me and will cause a sweet smelling recipe in your home. Because they’re slow cooked for a few hours, they really melt down to a nice consistensy which will be blended and made into a delicious dip.
After throwing everything in the food processor and adding some cheese to make it creamy you’re left with a dip that you’ll want to immediately dive into with a chip! Matthew dove right in and was in onion dip heaven!
- 4 onions, peeled and sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 8 oz sour cream
- salt + pepper to taste
- 1/2 cup mozzarella cheese
- Add onions, butter and olive oil in slow cooker and cook on high for 4 hours.
- Take onion mixture out of slow cooker and put in food processor along with sour cream, salt and pepper. Pulse a few times until creamy.
- Add onion dip back into slow cooker, add mozzarella cheese and mix.
- Cook for 30 minutes on low.
- Serve, dip and enjoy!
