It’s the last day of 2014.  Doesn’t it feel like I was just saying that about 2013?  

Now a new year begins with new years resolutions, positive spirits and the never ending mistake of continuing to write the year 2014 until at least May.  I have some specific resolutions in 2014 (not really resolutions but goals – run a 5K, build permanent greenhouses, learn to budget), but more so they are vague but yet personal on other levels, “be positive”, “do you”. I feel like 2015 can be a important chapter in life, both professionally and personally so I’m here to welcome it in!  

Do you have any resolutions?  This year is the year to learn how to make social networking work.   I’m best on Instagram, ok on Facebook, not that great on Twitter and only on Pinterest in the PM.  I try to do them all, but how does anyone have time in the day to successfully post interesting and witty thoughts on them?  In January I’m going to really investigate how to value social networking more, attend a festival of like minded women and look to how to extend Brooklyn Farm Girl.  There are already a few things cooking in my brain pipes, so I’m excited to start the year off with a bang.

I recently got a new phone, Motorola Moto X which I’ve been trying to customize to fit my lifestyle.  How much time do I spend on the street looking at maps or texting on a corner or walking West on a street while meaning to walk East (hey, it happens – alot).  2 years ago I made a switch with my phone and again this December I made another big switch to the Android World.  Over the past 2 weeks I’ve been playing with all the customized features and finding the right apps to help me during the day.

*Sniffle, Sniffle, Cough, Cough, Oh My Throat Hurts, Sniffle Sniffle*. 

That’s what the last few days sound like in our house. A few days before Christmas Matthew began to get sick.  He said it wasn’t the flu because someone “didn’t have time” to get his flu shot and didn’t want to admit to it.   Quickly after his temperature was at 102, he was shivering, he couldn’t eat, he was congested, he admitted he had the flu.  So after I gave him the look of “I’m not going to say I told you so but I told you so” and tucked him into bed for a few days, he slowly started to get better.  Then I slowly started to feel something coming on myself.  I got the flu shot, that means I can’t get sick.  Ugh, wrong.   I didn’t have it as bad as Matthew but I had a wicked sore throat, congestion and aches (oh the aches!) for the last few days.  Matthew surprised me on Christmas with 2 tickets to see Aladdin over the weekend and because the tickets were expensive and the show is sold out, we both got out of our jammies and made our way to the theater.   By this time Matthew was feeling slightly better but he said  I looked like a super pale sick ghost sitting there as I tried to sing along to “Friends Like Me” without falling over.    Anyways, Aladdin was great, we made it home (nearly got sick – someone was eating yogurt on the train – the smell of it wanted to gag me) and then I got back in my flannel pajamas and dinner was made.  What have we been eating for lunch and dinner the last night few days?  Soup.  Oh soup, how I love you.  How are you so nice to me? How do you treat me so good?  How are you always there to warm me up when I think I’ve had it all?

What is the best thing to serve with soup? Oh, you got it right Sista.  It’s biscuits.  I like my biscuits flaky.  I like them warm. I like a little butter on top.  I love when they crumble apart.  I also love to give them a little dive into the soup bowl. When I was little my mom worked at KFC (that’s Kentucky Fried Chicken if you didn’t know).  I’m not going to lie, I love that place.  Their biscuits, their mashed potatoes – hello big bucket of goodness.   I’m pretty sure this is illegal to the KFC conduct codebook but my mom would sometimes sneak me a extra biscuit.  That’s when I knew I was a good girl that day.  Off I went with a smile and my 2 warm biscuits.  What I loved about theirs was how flaky yet soft their biscuits were. They didn’t taste “bready” or heavy. They were light but delicious.

Whenever someone tries one of these biscuits, they’re like “This tastes like…” and I’m like, *hold a hand up*, “I know, enjoy”.   I love making these biscuits for soup or Sunday dinner (amazing with mashed potatoes and gravy).  There’s never a biscuit left on the dinner table.

KFC Southern Style Flaky Biscuits

Ingredients
  1. 2 cups flour
  2. 2 1/2 teaspoon baking powder
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 1 tablespoon sugar
  6. 1/2 cup butter (cold)
  7. 3/4 cup buttermilk
Instructions
  1. *It's very important that you use chilled butter for this, that will make sure the biscuits are flaky. You can refrigerate or freeze the butter, don't use room temperature or melted butter.*
  2. Preheat oven to 400 degrees.
  3. In a bowl mix flour, baking powder, baking soda, salt and sugar.
  4. Slowly start to cut butter in the flour mixture. You can either grate the butter or I use a knife to cut into small pieces. Keep cutting butter in until it's all gone. You want the mixture to look like crumbs.
  5. Mix in buttermilk.
  6. Knead dough in bowl for 30 seconds.
  7. Transfer to a greased baking sheet and roll out with your hands into a 7x7 piece. With a knife, cut 12 sections but don't don't cut all the way or separate them. This will make them easy to rip apart when done.
  8. Bake 15 minutes.
  9. When out of the oven, cut into sections and serve hot.
Notes
  1. Makes 12 biscuits.

This year’s Christmas morning is going to be different than our past 10 others.   This will be our first Christmas without our cookie bear Essy.  On Christmas morning she was sassy (how we love her), ready for her catnip treats and mentally preparing herself for her favorite time of the day, dinner.  There she fell in love with every turkey we made and after eating a bowl (or more) she would purr on our laps with happiness.WP_20130120_00520130120125656.jpg

The last few days I spent in Pennsylvania visiting my dad.  We usually only get to see each other once a year, so it’s always special as he’s so important to me.   So Matthew and I rented a car and drove out to visit him, along with a Keurig 2.0 to gift him, and to have hot chocolate and tea parties with me – of course.  

We did lots of things in our short 2 and a half days visiting.  We saw lots of my family, ate too much food, drove up many hills and on the way back to NYC we stopped off at Christmas Village. If you’ve never visited, Christmas Village is exactly what it sounds like – it’s a tourist attraction due to their village they made with lights and decorations. It’s only open in November and December and it it attracts people from all over.  I used to go there all the time as a kid, so I wanted to share it with Matthew.  Not  much has changed but it’s still always fun (plus hot chocolate and soft pretzels because it’s always freezing!).

I am a donut (or doughnut if you must) lover.  As a kid my mom worked at the donut shop and she would always bring me home my favorite blueberry donut.  At Halloween she’d bring me home little festive munchkins that were decorated like Frankenstein and pumpkins.   Sometimes before school for breakfast on a busy day, I’d run into the gas station and buy a donut.  So what I’m saying is that the donut love has been strong for a long time.

I’ve been craving a good homemade donut but wanted to make them fun for the holidays, so I decided to do a #CandyCaneHacks donut recipe. Say hello to Chocolate Donuts with Peanut Butter Candy Cane Frosting.

The donuts are chocolate are oh so moist. I only made a batch of 6 because I wanted to play it safe.. and only eat 6. 🙂

The frosting is magical. I’m serious guys. It casts a delicious spell on you when you can’t do anything but eat it.  I went back at least 6 times and took a spoonful of this.  It’s so fluffy and has the perfect peanut butter taste to it.

You’ll want to crush up your candy cane until it’s almost powder like.  I like when it gets that consistency where is’t not too big you’re going to feel a crunch, instead it’s just like peppermint sugar on top.

And then donuts are ready to be eaten!

I know I’ve already told you I eat M&M cookies in bed, but I also want to tell you I ate a donut in bed a few nights ago.  Again, I started with a half, and then went back, grabbed the other half and crawled back into bed.  I just remember falling back asleep with sweet sugary dreams!

Chocolate Donuts with Peanut Butter Candy Cane Frosting

For the donuts
  1. 3/4 cups all purpose flour
  2. 1/2 cup white sugar
  3. 1/4 cup cocoa powder
  4. 1/2 teaspoon baking soda
  5. 1/4 teaspoon salt
  6. 5 tablespoons vegetable oil
  7. 1/2 teaspoon vanilla extract
  8. 1/2 cup water
For the frosting
  1. 1/4 cup butter
  2. 1/2 cup chocolate peanut butter
  3. 1 cup confectioners sugar
  4. 2 tablespoons milk
Extra
  1. 1 Candy Cane - crushed up
For the donuts
  1. Preheat oven to 350 degrees. Spray your donut pan with nonstick spray.
  2. Stir together flour, sugar, cocoa powder, baking soda and salt.
  3. Add oil, vanilla and water and continue to stir until smooth.
  4. Pour into donut pan and bake 10-12 minutes. Let donuts cool.
For the frosting
  1. Use softened butter and mix with peanut butter (I use a hand mixer).
  2. Slowly add in confectioners sugar and milk. Continue to mix until frosting is fluffy.
  3. Spread frosting on donuts. Sprinkle crushed up candy cane on each one.
Notes
  1. Makes 6 donuts.

Do you ever get obsessed with a food and can’t think of anything else?  Sometimes it’s naughty and you’ll want brownies 24 hours a day. Sometimes it’s not naughty at all and you’ll want vegetables all the time.  With the holidays, I’m feeling happy to have that stretch of just wanting a good vegetable Stir Fry, especially when it contains brussels sprouts, bok choy, kale, snow peas and carrots all wrapped up in a rice roll.   Garden fresh vegetables in the Winter.. I love it!

A few days ago Matthew and a friend were moving some furniture into our home (a new bed that I’ll be showing you soon because Matthew made it!).  After they finished, I treated them to a cookie.  And then suddenly they ate 8.  I was so happy.  They were so happy.   It’s a win win situation.

M&M Mini's Holiday Christmas Cookies

Ingredients
  1. 1/2 cup butter
  2. 1/2 cup brown sugar
  3. 1/4 cup sugar
  4. 1 teaspoon vanilla
  5. 1 egg
  6. 1 cup flour
  7. 1/2 teaspoon baking soda
  8. 1/2 teaspoon salt
  9. 1/2 teaspoon cornstarch
  10. 1 cup M&M’S® Holiday Baking Mini’s
Instructions
  1. Preheat oven to 375 degrees
  2. In a large bowl combine butter, brown sugar, sugar, vanilla and egg with hand mixer.
  3. Add flour, baking soda, salt and cornstarch and continue to mix.
  4. Add 3/4 cup M&M Mini's to bowl and stir with spoon to get them evenly combined.
  5. Drop dough by tablespoon onto cookie sheet and press remaining 1/4 cup M&M Mini's into the top of each cookie.
  6. Bake for 10-12 minutes.
  7. Enjoy!

Cheesy Meatball Texas Toast Casserole

Ingredients
  1. 6 pieces Texas Toast
  2. 22 oz package of precooked meatballs (I used Mama Mancini's)
  3. 1 tablespoon dried basil
  4. 6 pieces Provolone Cheese
Instructions
  1. Cook Texas Toast in oven as instructed on package.
  2. Microwave meatballs as instructed on package.
  3. Heat oven to 350 degrees.
  4. Cut up Texas Toast in pieces and layer in bottom of 9x13 casserole dish.
  5. Add meatballs and all sauce on top of toast.
  6. Sprinkle basil on top of meatballs.
  7. Layer 6 pieces cheese on top.
  8. Bake for 30 minutes and serve.

No, Goblin must play!”.  What else does Goblin love.. garland! I have lots of holiday wishes for my loved ones and ones I don’t even know. For Matthew, I want him to get a break.  Matthew works so hard with both our work with our work as well as teaching at 2 NYC Universities.  He’s such a hard worker and sometimes I know he just wants two hours to himself to paint some miniatures or play a game.   With the holiday season coming up, I’ll make sure he puts his feet up and relax!  For my Dad, I want good health.  He’s been sick a bit the last few years and I worry about him constantly. My dad is probably reading this right now and knows I nag him all the time about how he’s doing, but I just want to be sure he’s healthy because he means the wold to me.  And for every pet in the world?  I want to give it food, water and a comfortable home.  And plenty of kisses. Ok, lots of kisses. Especially those furry cats. Goodness gracious,  do I want to kiss those cats.  I think of how fortunate our cats are and then I see some kitties on the street and it breaks my heart.  I want to bring every single cat home with me but Matthew says I’m not allowed to.. can you imagine that?
