Missing Cats While Away…

Hi friends,

I hope you had a wonderful Thanksgiving holiday with your friends and family.  Matthew and I surprised his Mother and family by showing up for dinner a few minutes beforehand.  Only his brother knew we were coming back so it was organized well.  Thankfully someone recorded a video of Matthew walking in the front door and it’s the sweetest reaction his mom could make – crying and yelling.  It was really special coming back to Cleveland for a few days to see his (my) family.

We had such a ordeal getting to Cleveland though.  This is how the schedule went:
Wednesday 12:00PM – Say goodbye to our kitties and make them all kiss me.  4 times.
Wednesday- got to airport with plenty of time to spare as everyone says the busiest day at the airport is the day before Thanksgiving. There were no lines. Spent 2 hours waiting watching Tudors.  
Wednesday 2:30PM – supposed to start boarding plane right now.
Wednesday 3:00PM – started to board the plane.
Wednesday 4:00PM – still sitting on the runway. Pilot comes on and tells us the plane is having mechanical issues.
Wednesday 4:30PM – we’re back sitting inside the airport now. They say they are bring in parts from another airport.  This doesn’t seem good. But they say don’t panic, we’ll be fine.
Wednesday 5:00PM – Don’t panic, you’ll be fine, American Airlines says.
Wednesday 6:00PM – Don’t panic, you’ll be fine, American Airlines says.
Wednesday 7:00PM – Don’t panic, you’ll be fine, American Airlines says.
Wednesday 8:30PM – Panic, the flight is cancelled.
Wednesday 8:31PM – Passengers are either angry or crying because they can’t find any other flights for Thursday morning.
Wednesday 9:00PM – America Airlines tells us that they found Matthew and I a flight with another carrier in the morning, we should be ok. They pay for a cab to go back home to sleep for the night.  Cats are confused why we’re back because their party was just beginning.
Wednesday 11:00PM – Call American Airlines because the flight they said we are now on is actually booked and it’s stating online that we are wait-listed.   Other airline confirms the flight is booked.  American Airlines is confused. They have no idea what to do with us.
Wednesday 11:30PM – After 4 calls back and forth, they get us a flight for the morning. We have to fly New York to Chicago to Cleveland with a 2 hour layover, but whatever, we’ll take it!
Thursday 3:00PM – Finally get to Cleveland!

Whew, that was a bit stressful.. but we made it!

Now back to the topic.. missing kitties!
Whenever we travel I miss my little baby dolls so much.  I even travel with a Polaroid of each of them so I can wake up in the morning and see them:

Holiday Gingerbread Pancakes With Frosting Tree

These bright red Gingerbread Pancakes are fun for the holidays!  Serve them with a powdered sugar frosting tree on top! Perfect for Christmas morning breakfast!

One of my favorite parts of the holidays is Christmas morning.  As a kid my parents had a rule that I had to stay upstairs until they went downstairs first and put on the tree lights.   When Santa came on Christmas Eve came he would decorate our tree, so the first time I would see it all lit up and decorated is Christmas Morning.   Mom and Dad had a good idea here, don’t let the kids involved in tree decorating. Instead, lie to them and tell them they better not decorate because it’s Santa’s job and Santa will be angry if he doesn’t have a tree to decorate.  It’s not like Santa doesn’t have millions of other plans that night, right?

Now we decorate our tree weeks in advance, but Christmas morning is still special.  Why? Because it’s one of the most delicious breakfast meals of the year!  There’s always bacon sizzling, bread toasting, eggs however you want and the big plate of pancakes. Oh yes, would it be a holiday morning without the sweet smell of maple syrup poured over moist and delicious pancakes?

I Can’t Believe It’s Not Butter! Creamy Mashed Potatoes


What do you think of when I say the words comfort food?  For me, I think 2 things.  Macaroni and Cheese.  And Mashed Potatoes.   Thankfully this post is about one of these foods.  The holy grail of love and comfort… mashed potatoes!

Thanksgiving is just a few days away and then we have the big month of December which is full of festive dinners and parties ahead of us.  One side dish that is always a staple is mashed potatoes.  This weekend we had our annual Friends Thanksgiving dinner and it was fun and delicious. And of course, there were potatoes there!  Is Thanksgiving even possible without mashed potatoes?

Do you dream of chocolate cake at night? Ok, me too.  This Double Chocolate Mocha Latte Cake is double the chocolate and extra moist.   So if you aren’t dreaming of chocolate cake, you will be now!

I don’t make cake very often but when I do I like to go the rich route.  The more chocolate, the better.  This cake here is made up of chocolate cake with chocolate frosting. It’s a double decker of chocolate love and I hope you’ll be asking for a 2nd slice.

But first.. we have to make it!
It’s so hard for me to sometimes get past the batter.   When I see a beater with chocolate batter on it I know they aren’t going in the sink or dishwasher.  They are going straight into my mouth.  Does your family ever fight over who gets to clean the beaters?  As a kid when my dad was on the road, I would sometimes have to cook dinner for myself.  Because I had a love of cake from the beginning, I would just make cake batter and eat it in my room.  In my teenage years,  this somehow seemed like a good idea.  I still think it’s a good idea.. but I’m not sure if I have the perseverance to eat as much batter as I could 15 years ago!

It’s like Thanksgiving for a week straight!  Each night is turkey in new ways, mashed potatoes on the side and plenty of vegetables.  One night it’s turkey sandwiches covered in homemade gravy. The next night is Thanksgiving dinner on Saturday again. And then comes the casseroles.  

This Cheesy Stuffing Broccoli Casserole is my favorite.  Not only does it make a perfect side dish for holiday meals, bu it’s the ultimate leftover meal using a bunch of stuffing. And what else do I love about leftovers? Saving money.  Thanksgiving dinner is great because it’s literally 1 meal that feeds you for the next week.

This casserole besides being cheesy and delicious and mouthwatering and made of dreams (I like it, ok) only has a few ingredients. There’s stuffing,  frozen corn and broccoli, cream of chicken soup, white rice and cheese.  That’s it.  Because the few ingredients it’s also really quick to make.   Like I said, it’s amazing. I give my heart to you Cheesy Stuffing Broccoli Casserole.

So let’s make it! Gather your ingredients.

Make your stuffing as instructed on the box.  Take a bite.  I won’t tell anyone.

Throw in your frozen vegetables.

Cheesy Stuffing Broccoli Casserole
Print
Ingredients
  1. 6 oz package of Stove Top Stuffing Mix (Chicken or Turkey)
  2. 10 oz bag of frozen corn
  3. 10 oz bag of frozen broccoli
  4. 1 can of condensed cream of chicken soup
  5. 1 cup cooked white rice
  6. 1 cup Velveeta cheese - cubed into bite size pieces
Instructions
  1. Heat oven to 350 degrees.
  2. Make your stuffing as instructed on box.
  3. Spray baking dish with nonstick spray.
  4. Add corn, broccoli, soup and rice in baking dish and mix so combined.
  5. Place cubes of cheese all over the top of the casserole.
  6. Put stuffing on the very top so it covers the entire casserole.
  7. Bake for 35-40 minutes.
  8. Enjoy!

Deluxe Cheesy Jalapeno Omelet

The truth is that I made these Cheesy Jalapeno Omelets for the first time in June.  It was was when the jalapeno plants in the garden started exploding with peppers all over each plant.  And then after I tasted it for the first time I knew I had to share the recipe with you guys.  Now it’s November and the recipe is finally here.  What has taken me so long? Well I’ve just been eating these Cheesy Jalapeno Omelets nonstop!

What do you have for breakfast, is it usually a quick meal or do you like to sit down with it?  I don’t really like meal rushing, so usually I sit down for every meal.   Breakfast ranges from toast and a banana to something more savory, like scrambled eggs or a omelet.   On weekends it tends to get sweet with homemade pancakes and waffles.  Right now I’m all about pumpkin pancakes, YUM.  But back to this omelet.

The basis of this recipe is my favorite scrambled eggs recipe.  Not to brag, but they kinda have been declared the best scrambled eggs by many eaters, so yeah.  It’s a good start.  This recipe for eggs has been with me for a long time and I pretty much stick with it as it’s my favorite.  Throw in some cheese and chopped up jalapenos, fold the eggs instead of scrambling and the Cheesy Jalapeno Omelet is born. 

First, you’ll need one jalapeno to make 2 omelets.  Then you want to chop it up.   Here’s some jalapenos that are still growing, even though it was October!  We have a big bag of them in the kitchen.  Jalapenos also freeze great if you want to throw them in the freezer to make them last longer.

Frozen Vegetable Recipes and Why Frozen Veggies Rule!

The coldness suddenly hit last weekend.  One week it was fine with a thin sweater, then suddenly it’s tights, long sweater, winter coat and hat.

One thing that comes with the Winter is lack of fresh fruits and vegetables.  For us, the garden will still be growing a few vegetables under greenhouses, but there will be no peas, no corn and no carrots.    Farmers markets will be closed, or only selling hearty greens.  Grocery stores will have vegetables, but they won’t taste fresh as they’ve been shipped and prices will raise.  You’ll suddenly see raspberries for $7 instead of the $1.50 you were paying in June.  Oh and corn on the cob?  If you’re in a cold location, good luck seeing it until next Summer.

So how do you get your vegetables during the Winter?  Here’s what I suggest, frozen vegetables!

Loft Living With Our New Reading Nook!

Do you remember a few weeks ago I posted about designing a reading nook?  Well it’s done and I couldn’t be more happy!  Thanks to everyone for suggestions on their favorite items to pick. It was  hard tossup on so many things, I think I changed my mind about the couch and the rug 88 times but finally decided!  So then I spent the next few weeks waiting for the delivery guys hoping they’d have my goodies!  The couch was last to arrive, but as soon as we unboxed it – I was set!  The reading nook was all ready to be snuggled into.

As a reminder here is what I wanted:
A cozy spot of our loft to curl up and disappear from work and life for a few minutes (or hours).
A place that I could read and drink many cups of tea.
With the winter coming up, somewhere extra cozy that was warm! Pillows and blankets!
Couch, Rug, Table, Light were the necessities. 
The rug needed to be super warm as we have concrete floors.  They are extremely cold in the winter. 

Are you ready? Here it is!   Not only am I love with my nook but you’ll see below all the cats love it too.   I’m constantly fighting with them to move over on the couch.  Isn’t it funny how a 8 pound cat can take up as much space (if not more) than a human?
