How to Dehydrate Cherry Tomatoes

In my fun week of acting like a mad scientist in the kitchen (hello dried cantaloupe chips!), throwing vegetables and fruits in the food dehydrator asking the question “How will this taste dried” I had to try tomatoes.  With the amount of tomatoes we were harvesting and by the amount of sauces I already have made, I was dying to do something else with them.  How about dehydrated tomatoes to snack on?

I had a good feeling the tomatoes would taste great but I had no idea how extra delicious they would be.  For about 9 hours they dried turning the house smelling like a tomato garden.    Drying should take about 9-10 hours, you can stop them when they get to the texture you like your tomatoes to be.

Besides snacking on them, dried tomatoes make the perfect addition to pastas and adding to a tomato sauce.  I always think they give tomato sauce extra flavor and makes it taste heartier.  There’s no scientific evidence on this, it’s just what it tastes like to me.

What else are they good in? Slow cooker recipes!  From meats to chili recipes, they taste extra good that way.How to Dehydrate Tomatoes_9

You could also cut little bread slices, put ricotta on them.  Then add some dried tomatoes.  And then drizzle a little olive oil on top.  That sounds like the perfect afternoon snack to me.

If I have some roma tomatoes that are sitting with the cherry tomatoes, I’ll throw them in the food dehydrator too.  They taste just as good. How to Dehydrate Tomatoes

How to Dehydrate Cherry Tomatoes

  1. Cherry Tomatoes
Instructions
  1. Cut cherry tomatoes in half and spread on dehydrator tray.
  2. Set your dehydrator to 125 degrees.
  3. Dry for 9-10 hours.
  4. Store in mason jar or plastic bag.
