I love this because it’s delicious and quick.  It’s ready to go for me in the morning. I open the fridge and it’s like “Hello Pamela” and I’m like “Hello beautiful.”.

I would like to sleep in as much as I can in the morning and sometimes those extra 15 minutes sure do matter. When I know I’m going to need a few more minutes sleep or it’s going to be a busy morning I prepare Overnight Oatmeal the night before. Then when the morning comes I can dream a bit longer, wake up, and grab my jar of oatmeal and go. Perfect for back to school or bringing to the office!

This recipe uses old fashioned oats, creamy peanut butter, flax seeds, maple syrup and blueberries to make it one delicious breakfast.  Give it a shot next time you are craving a breakfast waiting for you in the morning!

Overnight Blueberry Peanut Butter Oatmeal is a breakfast that's ready for you in the morning. All you have to do in the morning is splash a bit of milk on top and breakfast is ready.

  1. 1/2 cup old fashioned oats
  2. 1/2 cup milk plus splash in the morning
  3. 2 tablespoons Smooth Operator peanut butter
  4. 1/4 teaspoon cinnamon
  5. 1 teaspoon flax seeds
  6. 1 teaspoon maple syrup
  7. 1/2 cup fresh or frozen blueberries
Instructions
  1. Put all ingredients in a jar or bowl. Stir so everything is combined. Put lid on, and put in refrigerator overnight.
  2. In the morning, splash a bit of milk on top and stir around again. Enjoy!

In the Winter time it’s usually toast, figs and tea.  But on extra special days and weekends, it’s a full on breakfast.  Sometimes it’s pancakes.  Sometimes it’s waffles.  Sometimes it’s a egg burrito.  But my favorite breakfast? Soybean Harvest 2014

Soybean season was here… and now it’s gone.   But don’t worry there’s plenty of memories to stick around… like the pounds of soybeans in my freezer right now!

Soybeans are one of my favorite vegetables to grow but it’s also one of the most intense plants once it’s ready to harvest.   Growing, they are pretty easy to deal with.  Give them a little water and a hug every few days ago and the soybeans will grow so bushy and tall you won’t be able to see over them.  But once it’s time to pick these soybeans, then put a day (or more) aside!  Even though they are hard work to pick, they are totally worth it.  Soybeans are a favorite for pasta dishes, stews, stir-fries and currently we are obsessed with soybean pesto!  I’ll be posting that recipe later this week so keep a soybean loving eye out for it!

The soybeans were planted directly in their containers on June 14 and were harvested September 3.  We grow 12-16 plants per 27 gallon container.  You can plant quite a few  soybean plants in containers making them great for small spaces.  Each plant yields quite a number of soybeans too.   Once they’re big enough they tend to support each other and just grow into one another.  We put a few tall garden stakes into the container to try to help support them so they aren’t lying on the rooftop but for the most part they have a mind of their own and just want to grow big.

It’s a bit funny that I’m posting this recipe just as about we’re to tear up our green beans and plant our Fall sugar snap peas.    Soon our boxes will be cleaned out with long beans and the sugar snap pea seeds will be put into the ground.  Then we’ll start the watch of seeing the peas grow from sprouting from the ground to seeing who can make it to the top of the fence first.

Every year we grow sugar snap peas twice because we just can’t get enough.   They are a favorite crunchy snack but they also go hand in hand with some of our favorite meals.  Give me some sugar snap peas, pasta and a little olive oil and you got a big bowl of happiness.

Ingredients

  • 1/2 pound sugar snap peas
  • 1 tablespoon olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon dried thyme
  • sea salt to taste

Instructions

  1. Preheat oven to 450 degrees.
  2. Put sugar snap peas in a single layer on a baking sheet covered in aluminum foil. Coat peas with olive oil. Sprinkle garlic, thyme and salt on peas and mix around so coated.
  3. Bake 7-8 minutes.
  4. Serve and enjoy.

I love edamame. I went through this phase where every time I ordered sushi I also ordered a big bowl of edamame to go with it.   Then I got to thinking, why don’t we grow our own soybeans?  So we bought some seeds, planted them in our containers and BOOM! SOYBEANS!  Ok maybe it wasn’t that instant, but it was pretty much that easy. Since the beginning we’ve had lots of luck growing soybeans in containers.  This year they have grown to new heights and soon they will be all picked to be frozen and enjoyed for many happy edamame snacking sessions.

Edamame is easy to make at home and tastes just like the Japanese restaurant! All you need is soybeans and salt!

What’s edamame best with?  Just a little bit of salt.  That’s it.  Beans and salt.  Just a few ingredients makes one of the most delicious and healthy snacks you can eat.

 Pumpkin Pudding Cream Pie is a delicious no bake recipe!  Ingredients include instant Pudding, Cool Whip and pumpkin puree.  It's the perfect Fall pumpkin recipe!

Ingredients
  1. 1 1/2 cup milk
  2. 2 3.4 ounces packages of Jell-O Vanilla Instant Pudding Mix
  3. 1 cup pumpkin puree
  4. 1 teaspoon pumpkin pie spice
  5. 1 cup Cool Whip
  6. 1 9 inch graham cracker crust
Instructions
  1. Combine milk and pudding mix in deep bowl. Mix with hand mixer for a few seconds to combine them.
  2. Add pumpkin puree, pumpkin pie spice and Cool Whip to bowl and mix on low speed until all is combined.
  3. Pour filling into graham cracker crust.
  4. Put in refrigerator for at least 5 hours, preferably over night, to set.
  5. Serve and enjoy.
